I found a recipe with 1 tin apricot nector and 1 pkt of french onion soup mix. Thought I might throw in some dried apricots. Would it be ok to use plain onion soup mix as I don't have french onion in the pantry?

Plain onion soup mix would be fine.
If you have some fresh thyme, add a couple of sprigs, and I'd be inclined to add a little worcestershire sauce, and some freshly ground pepper, too. Use a pair of scissors to cut the dried apricots into strips, and add in the last 15 minutes, so they're not turned to mush...

Taste, and adjust seasonings if needed, before serving.

ETA: I put a large oval crockpot on high about 1.5 hours ago, full of pea and ham soup with a ham hock, extra yellow peas, celery, onion and grated carrot, just turned it to low before I go to bed, to slowly simmer overnight.
