There was a lovely sweet Chili sauce recipe which had tomato sauce as one of the ingredients which I found on the former TM Cooks (but have since lost it). Would anyone have a copy of this they could share please as I'd love to be able to make it again?

I think she use my recipe for Chili jam and subbed the fresh tomatoes for a can of tomato sauce.

Chili jam .
Crafted by pickles7...
1 kg of ripe tomato's
200 grams of hot chillies
300 grams of capsicums
800 grams of plums
1/3 cup of water
Put onto the stove to simmer and cook
Then add
4 tsp. sea salt
2 tsp. cayenne
1 tsp. mace
2 tsp. gr all spice
1 tsp. gr. ginger
once cooked mouli, to remove the seeds etc.,
put the pulp back into the pot, bring back to the boil
Then add
800 grams of white sugar, boil 10 minutes.
Pour into bottles, cork, when cold.
This is very sweet, it is extremely hot ...

Thank you Pickles7 that sounds divine. It's not the recipe I was after (which only had very few ingredients) but yours is definitely one I will write in my recipe book to try as we grow a lot of chilies.

Thanks for posting this. It didn't require refrigeration but will give method 1 a try as the recipe was vinegar based and I may be able to adapt.

This isn't amongst the Trade Me Cooks recipes that I have saved, Bev, but I have found a recipe from jag5 for Hot Chilli Sauce which probably matches your description more closely than the one I posted yesterday. This is the sauce I make, it is very similar to the Sweet Chili Sauce you buy.

HOT CHILLI SAUCE

40 Chillies, 2 large cooking apples (or can of precooked), 3 cloves of garlic

Process all of the above in whiz

Add 1 tbspn plain salt, 2 1/2lbs sugar, 750mls of malt vinegar

Simmer all these for 25 minutes to ½ hour. Add 1 ltr can of tomato sauce.

Simmer another ½ hour, Bottle and cap when cold.

Homemade Thai Sweet Chilli Sauce
Ingredients: 12 red chillies (sliced finely, seeds left in) 6 cloves garlic (crushed) 1/4 cup Asian fish sauce 2 cups sugar 11/2 cups white vinegar 1 tsp salt 11/2 cups water. Method: Bring all ingredients to the boil and reduce heat to a simmer for 1 hour stirring often. The mixture should reduce to a syrup consistency. Seal in sterilised bottles when cold. Refrigerate after opening. The longer you cook it the hotter the chilli taste is.

Ingredients: 100gm long red chillies 2 cups white vinegar 2 cups sugar 2 teaspoons salt 2 cloves garlic, chopped Method: Remove the stalk from the chillies. Remove the seeds from half of the chillies for a milder sauce, or keep them whole ... Place the chillies, vinegar, sugar and salt on a blender . Process until blended. Transfer to a saucepan and simmer for 15 minutes. Add garlic and simmer for a further 5 minutes. Pour into sterilized jars or bottles...

Sweet chilli sauce
You need: 10 cloves of garlic, peeled 4 large red chilies, stems removed 3 thumbs of fresh ginger, peeled and roughly chopped 1 thumb of galangal, peeled and roughly chopped 8 lime leaves 3 lemon-grass stems; remove the two outside leaves, discard the top third of the stem and finely slice the remainder 1 cup fresh coriander leaves Put in a food processor and purée to a coarse paste. Then put 1½ cups caster sugar together with 4 tablespoons water in a saucepn, place on a moderate heat, stirring well intil the sugar dissolves. When it has, remove the spoon and turn up to medium. cook on medium for 5-8 minutes. Stir in the paste, bring the sauce back to the medium heat and add: 100 ml cider vinegar 50 ml Asian fish sauce 50 ml tamari Return to the boil and simmer for 1 minute. Pour in jars, and leave to cool before eating. keep them in the fridge. posted by connie56

i made this great sauce/chutney
it used heaps. 500g chilli, 1 head of garlic, 2 onions, 1 tsp salt, 2 cups sugar 2 cups vinegar, 1 capsicum. Put all vege ingredients in food processor then put in saucepan and cooked until good consistency. I made it all green with green capsicum will try a red one with red chillis too. posted by coffee3

150gr med - large fresh chillies,210 grams sultanas, 3 cloves garlic chopped, 3cm finely chopped ginger, 250ml white vinegar, 410 grams white sugar, 155 grams firmly packed brown sugar, 1 tablespoon fish sauce. 1/4 teaspoon salt, 100ml water. Wearing gloves to protect your hands cut chillies in half and remove seeds. Combine chilli, sultanas, garlic,ginger,and 60ml of vinegar in food processor or blender and process till smooth. Place chillie mixture in large pan stir in remaining vinegar, white and brown sugar, fish sauce salt, and water. Bring to boil simmer about 15 minutes stirring frequently till mixture is thick and syrupy. Bottle into clean sterlized jars leave for 1 month to let flavours develop. Store in cool dark place for up to 12 months. Sauce is quite sweet but has a bite, for a milder sauce adjust chillies to your taste. Makes 3 cups..

Walto’s chilli sauce, this is so good
Ingredients 250 g fresh chilli pepper 750 ml white vinegar 3 cups white sugar 1 tablespoon grated ginger 375 g sultana 3 teaspoons salt 8 cloves garlic Directions 1Roughly chop chillies. 2Take out the seeds before chopping if you like a mild chilli sauce. 3Place the chopped chillies in a blender with a little bit of vinegar, blend on high speed for a minute. 4Then place all the ingredients, including the chillies, into a sauce pan and bring to the boil, reduce to a simmer. 5Simmer for approximately 30 minutes or until the chillies and sultanas are very soft. 6Let cool. 7Then in a clean blender blend the chilli sauce until smooth and creamy. 8You should end up with approximately 1.5 litres of chilli sauce. 9Bottle into sterilised jars.

Oh thank you so very much Winnie! Great that you saved all these wonderful recipes. I really miss the TM Cooks site and most of my favourite recipes are from there.
