Alison Holst's BANANA CHOCOLATE CHIP MUFFINS
2 cups self-raising flour
½ cup each of caster sugar and chocolate bits
½ tsp salt
100g butter, melted
1 cup milk
1 egg
1 tsp vanilla essence
1 cup mashed bananas (2-3)

With a fork, stir together in a large bowl the flour, caster sugar, salt and chocolate bits.
In another container melt butter. Remove from the heat, then add the milk, egg and vanilla, and beat well.
Mash and measure the bananas and stir them into liquid ingredients. Tip all the liquid mixture into the bowl with the dry ingredients. Fold carefully until all the flour is dampened, stopping before the mixture is smooth.
Spray 12 medium muffin pan with non-stick spray. Put about ¼ cup of mixture into each muffin cup.
Bake at 220°C for 12-15 minutes, until muffins spring back when pressed in the centre. :-))

I use this simple one:
1/4 cup oil
3/4 cup sugar
2 eggs
3 mashed bananas
3 tbs plain yoghurt (can use milk, but not quite as good)
2 cups flour
1tbs (yes tablespoon) of baking soda (not heaped)
1/2 cup chocolate chips.
Beat together oil, sugar, eggs
Add yoghurt and bananas and mix well
Fold in sifted flour and baking soda with the chocolate chips.
If using milk you can add an extra tablespoon but it should not be a runny mixture.
Bake for 15-20 minutes at 190.c
Makes 12
