Fat and carbs with loads of salt, such a yummy combination, I do the same as peanut, but havnt tried it with chicken stock or bacon yet...I must give it a whirl

Chop Spud into bite size chunks. Sprinkle over a packet of bacon and onion soup add chopped onion garlic and bacon and a bottle of cream some mixed herbs. Cover and bake until the Spud is tender. Uncover and finish with some grated cheese if you think you need it. Yummo with kumera and pumpkin or mixed

Almost like this but instead of milk and cheese later, I make a very watery cheese sauce and pour over at start.
It works, potatoes absorb the liquid and you end up with tender potatoes and a thick cheese sauce.

Heat a 50/50 mix of cream and milk with a garlic clove cut in half and 2 sprigs of thyme in it to boiling point. Stand while you peel spuds.
Thinly slice peeled potatoes and layer in a buttered shallow dish with S & P between each layer.
Pour enough strained cream mix over to just hit the top layer, cover with freshly grated Parmesan and bake for 1-1.25 hours at 160deg.
