Your favourite stuffed chicken breasts

I love stuffed chicken breasts, especially as they are so easy to cook in my halogen oven.
My favourite at the moment is pesto with pine nuts and Parmesan cheese then wrapped in bacon

Ingredients
4 chicken breasts
1 tablespoon olive oil or avocado oil
1 teaspoon paprika
1 teaspoon salt, divided
¼ teaspoon garlic powder
¼ teaspoon onion powder
4 ounces cream cheese, softened
¼ cup grated Parmesan
1 tablespoon mayonnaise
1 ½ cups chopped fresh spinach
2 teaspoon garlic, minced
1 teaspoon red pepper flakes
Instructions
Preheat oven to 180 degrees.
Place the chicken breasts on a cutting board and drizzle with oil.
Add the paprika, salt, garlic powder, and onion powder to a small bowl and stir to combine. Sprinkle evenly over both sides of the chicken.
Use a sharp knife to cut a pocket into the side of each chicken breast.
Add cream cheese, Parmesan, mayonnaise, spinach, garlic, red pepper and ½ teaspoon of salt to a small mixing bowl and stir well to combine.
Spoon the spinach mixture into each chicken breast evenly.
Bake, uncovered, for 25 minutes or until chicken is cooked through.

I prefer boning the thighs and using them, moist and more flavour.

make slits across the top, fill with cream cheese, garlic, and chopped spinach. then wrap bacon around. put into tinfoil parcels and bake in oven.

I do my chicken breasts with the recipe below, but often stuff them (horizontal cut) with slivers of sundried tomatoes, or roast capsicum, or pesto as well.

Magic Mayo Moist chicken breasts
(prepare ahead, leave in the fridge until you put the oven on to preheat).
Ingredients:
* 1 cup mayonnaise (you can use plain Greek yogurt in place of the mayo, for a healthier option, or half and half - I often use a good aioli egg mayo)
* 4 boneless, skinless chicken breasts (halve recipe for 2 people)
* 1/2 cup Parmesan cheese
* ½ -1 teaspoon seasoning salt (or Italian, or your choice)
* ½ teaspoon black pepper
* 1 teaspoon garlic powder
* Optional: ½ cup mozzarella, sprinkle panko or other crumbs)

Directions:
1. In a small bowl, combine the mayonnaise (or yogurt if substituting), cheese, and the seasonings of your choice (other options below)..
2. Preheat oven to 160 deg C (375 deg F)..
3. Put the chicken breasts into a baking dish, tucking thin ends underneath.
4. Spread the mayo mixture evenly on top of each chicken breast, sprinkle with crumbs, if using.
5. Bake in the preheated oven or airfryer, for about 35-45 minutes, or until cooked through. (test with skewer for clear juices from thickest part).
6. Serve warm, with noodles, potatoes or similar, plus a salad.
7. The chicken stays moist with the topping, so no need to cover.

My boyfriend insists on using cream cheese, pesto and whatever vegetables are in the fridge - I’m going to have to tell him soon that it’s too rich for me but at least he’s cooking so I should be grateful

I used to do this with a whole boned chicken but now use chicken breasts. 6 dried apricots soaked for at least 2 hours in orange juice. Mix wholegrain mustard with cream cheese, add the drained apricots and stuff breats.. Wrap in bacon and roast/. I make gravy and add the orange juice into the gravy. Sorry it is a hit and miss recipe cannot find the one written down.
