Edmonds Lemon Meringue Pie recipe

from an older Edmonds cookbook. Looking for the recipe where the filling is done in a double boiler.

Have made their one in the newer recipe book, but its WAY too sweet and not as good as the original..

If you have the older Edmonds cookbook, please could you write the recipe here for me to write out and put in my recipe book..

170g sweet short pastry
3 eggs
1C water
Juice and rind of two lemons (medium)
1C sugar
1Tbsp butter
4Tbsp cornflour
4Tbsp caster sugar
1/2 tsp vanilla essence

Roll pastry and line a 230mm pie dish and bake at 200C for 20 minutes - cool.

Filling: into the top of a double boiler, place yolks of three eggs, water, lemon juice and rind, sugar, butter and cornflour. Stir all over boiling water until very thick and cook for2-3 minutes extra. When quite cold, turn into the cooked bake tart shell and top with meringue.

Meringue: beat egg whites until stiff then add the caster sugar a little at a time, beating well after each addition, finally beat in the vanilla. Spread meringue well over the edges to seal. Cook at 200C for 10-15 minutes or until golden brown,

Changing the subject a bit - notice how choccy fish have long gone - sad!

Havent noticed as I dont eat them, but the spratts, or the mini ones are still around.

straight out of the freezer

microwaved

The Queen Anne range has them out - saw some in Pak'nSave yesterday and have seen them in New World. They are sold as a single and a little larger than the originals.

Umm I usually just make the Edmonds microwave lemon curd and use that for the filling.
