2 | after you have added the sugar, you may need more than one lemon though. If you have access to rhubarb, next time you make, add a stalk or two to the gauva's when you first boil them, it helps with the setting of any fruit jams or jellies. cgvl - 2019-05-01 14:21:00 |
3 | I mushed up my very ripe guavas by hand, added sugar and left it in the fridge overnight. The next day I added a little water and cooked it. That had plenty of pectin. 4 | Maybe you are not cooking it hot enough. It has to come to a full 'rolling' boil, same as jam, or it won't set. Once it starts to get very hot it is necessary to stir or it will burn. Maybe use a jam thermometer to tell you when it has come to temperature. Use the jam temperature on the thermometer. I'm big on thermometers. 6 | I made it last year and I got told to use a mix of fully ripe to half ripe guavas, the unripe ones have more pectin. I did this, still didnt quite set so I added a sachet of the jam setting mix you can get from supermarkets. It worked perfectly.
