Persimmon excess

My lovely persimmon tree has an abundance this year, and I don't think I'll be able to use them all "fresh". It looks like they will ALL be ready at once. What are some easy ways to keep/use up the excess? I was thinking of peeling, slicing and then throw in the freezer. Or would it be better to stew them and then throw in the freezer? I only have experience eating them stright off the tree, don't usually cook or preserve with them so a bit unsure.
