Advice needed - day after wedding food.

I am catering a wedding soon and also doing the Sunday lunch food. The brief is ham and keep it simple. I will do hot ham, tomatoes, cucumber, green salad and breads and spreads. Is there something I am missing? Simple is good and what is requested but I need to make it special. Thanks in advance for any advice.

petmacorpltd, I don't know if I'm a bit old-fashioned here but along with the vegetable and salad accompaniments, etc. I'm wondering if you had any condiments in mind for with the ham e.g. something pineapple such as pickled pineapple (Alison Holst's recipe below) - maybe made with crushed pineapple and thickened if you think appropriate.

Alison Holst's PICKLED PINEAPPLE
1 x 440g can pineapple slices or pieces
¼ cup vinegar
½ cup sugar
4-6 whole cloves
¼ tsp each of cinnamon and ground ginger
pinch salt

Drain the juice/syrup from the pineapple into a saucepan containing the remaining ingredients. Simmer, uncovered, for 15 minutes (until liquid is reduced to 1 cup). Add the pineapple, return to the boil, then remove from the heat. Arrange the fruit attractively in a straight sided jar. Fill with syrup. Refrigerate 24 hours before use. Store in the refrigerator.

A large bowl each of some other filling salads - eg potato salad, eggs in mayonnaise, rice salad, etc - would go down well too. Easy to make, simple, and gives those with diet issues more options....

Asparagus rolls are usually popular, and even simple sausage rolls, and garlic bread go down well.

Even bean salad can be simple - get a large catering can (A10 size) from Gilmores or similar wholesale outlets....

For the bean salad I jazz it up a bit and add whole kernal corn, chopped celery and diced tomatoes, garlic salt and lemon pepper. Loosen with olive oil if required. Always a big hit - I call it 'Confetti Salad' so appropriate too :)
Fresh rolls are a must in my book, as it makes it more finger-foodie.

If you have non meat eaters the Dannys falafels are lovely, they are frozen, and easy to heat up. I would do green leaves, a coleslaw. platters of sliced toms, cucumber, red onion, cheese slices. Beetroot. Bowls of potato chip's, chutneys, hummus, mustards, mayo and a chilli sauce. You could do a large pot of soup, easy for people to serve themselves. Serve wraps sliced breads and rolls for variety.

you have got lots of suggestions of additional dishes to add to this lunch.

I have been to a party where this style of food was what as served...
Great bread rolls, amazing ham - and little else. It was an evening supper (rather than dinner) and worked well.

1. One thing to add - gourmet condiments - a great relish, a good strong mustard and something else.
2. One thing to note - I would keep your salad ingredients separate from each other (so people could choose what they wanted, and leave what they didn't - rather than "a salad").
3. This doesn't really work for vegetarians. If I was solving this problem, then I would choose a chickpea/feta/pumpkin salad.
4. This doesn't completely work for GF. But the addition of some GF bread would solve this problem.

this is a better idea then my chickpea salad... Also, bean salad taste best on the second or third day - so great to make ahead

Good bread, ham on the bone, mustard and coleslaw - perfect “after party” food but not hot ham with salad.
