I would like a recipe for kumura fritters, not using potatoes or carrots please

I would use a potato fritter recipe, but use kumara instead...
1 egg, beaten
2½ Tbsp Edmonds standard flour
2 Tbsp milk
3 Tbsp grated cheese
salt and pepper
1 potato, peeled and grated
1 tsp Edmonds baking powder
3 Tbsp oil
1. Add the flour, milk, cheese and seasonings to the beaten egg and set aside for 10 minutes.
2. Add the grated potato to the batter with the baking powder just before you cook the patties.
3. Heat the oil in a heavy-based frying pan and drop in tablespoonfuls of the mixture.
4. Cook for 5 minutes on each side until golden, drain on paper towels and serve hot, or keep warm in the oven at 160ºC for up to 20 minutes.

I just spiralise, put handfuls in clumps and cook in a reasonably hot pan with ghee. As the 'fritters' cook just compress with the fish slice before turning over to brown the other side.

This is the best ever way to make fritters. Then you could put grated cheese, tomato and other savoury toppings on and grill.

For a sweet variation, once cooked to how you like, put 4 or 5 dark chocolate buttons on top while still in the pan and after 30secs choccy will be soft enough to spread with a knife. Serve with fresh fruit and whipped cream. Makes a reasonably low carbish type dessert without the flour and added sugar. For more sweet fritters use maple syrup. I make mine crispy.

In the end I grated the kumara, added creamed corn, egg, chopped bacon and selfraising flour and met a fussy daughter's approval.
