Have made bread and butter pickles with courgettes instead of cucumbers and that turned out ok.

this one is delicious ...
Courgette pickle

1 kg courgette 4 large onions 1 red pepper 1 green pepper 1/2 c salt
2 c sugar 2 1/2 c white vinegar 1 c water 2 tsp turmeric 2 tsp celery seed

Chop unpeeled courgette finely. Peel & chop the onions. Remove the seeds from pepper & chop. Combine the veges in a large bowl. Sprinkle salt over the surface & cover with water. Leave for 2 hrs. Drain. Rinse thoroughly with cold water & drain again.
In a perserving pan boil the sugar, vinegar & water, turmeric & celery seeds for 3 mins. Add veges & cook 15 mins. Spoon into hot jars & seal.

been helping in a community kitchen, and we have had so many marrows. today we chopped a lot up in cubes and put in freezer for the winter soups. I actually ate a few bits raw, and they were rather nice. We used them in vegy dishes and meat dishes. when cooked they are a little bland but mixed with lots of other things the taste is fine.

I dont mind going large as there is more to use and they still taste the same. Filling up freezers with grated/kitchen whizzed courgettes for winter use in quiches. soups,fritters and cakes. I use those round rubbery (egg) shapes in my Breville. No mess great size and fast cooking
