Ginger Loaf - looking for a fabulous receipe

Hi - do you have a tried and true delicious ginger loaf recipe? I am looking for one you can slice and butter. many thanks :)

this is a goody.

Mix and Melt Gingerbread loaf
90 grms butter
1 cup plain flour
1/2 castor sugar
2 tsp ginger
1 beaten egg
2/3 cup g syrup
1/3 cup SR flour
3/4 tsp soda
1/2 tsp cinnamon
2/3 cup milk
Melt butter and syrup ( don't boil).Sift dry ingreds and add egg milk and syrup mixture. Pour into loaf tin. 160c. Don't overcook. Sprinkle with icing sugar. slice and butter when cool.

I love a bit of ginger loaf, but reluctant to make, as being a diabetic, I am reluctant to use 2/3 cup of golden syrup.
Is there any reason you cant cut the amount down, or use something else.

Bake for approx 25 - 35 mins( maybe even longer) but I just put the timer on and watch it. Very moist and yummy.

Cut the g syrup right down and substitute coconut sugar which is Low GI for the sugar and you can use less of that too. I always use coconut sugar now instead of white sugar and never use the amount of sugar stated anymore and have never had a fail yet. You could also try brown rice syrup instead of the GS. Just some ideas.

Traditional Gingerbread Loaf
50g butter, 1 Tbsp GOlden syrup, 1 egg, 1/2 cup soft brown sugar, 1 cup flour, 1 tsp baking powder, 2 tsp powdered ginger, 1 tsp mixed spice, 1 tsp baking soda, 3/4 cup milk

Preheat oven 190c. Line a loaf tin
Melt the butter and golden syrup together. Add egg and brown sugar, mix well, then add all other dry ingredients except the baking soda and milk.
Mix soda with the milk and stir in. Pour into loaf tin and bake 30-40 min.

korbo, do you use artificial sweetener? If you do, maybe you'd like to try the following recipe - it's personally untried but is from the "Bee Healthy Cookbook" which was produced by Diabetes Life Education (1995)

GINGER LOAF
1 cup each of white flour and wholemeal flour
2 tsp ginger, ground
1 tsp mixed spice
1¼ cups reduced fat milk
1 tbsp each of margarine and golden syrup
1 tsp baking soda
1 dssp (2 tsp) artificial sweetener
1 egg, lightly beaten

Combine flours and spices.
Heat milk, margarine and golden syrup. Stir in the baking soda. Pour over the dry ingredients. Add the artificial sweetener and egg. Do not over mix.
Place in a loaf tin lined with greaseproof paper.
Cook at 150°C for about 1-1¼ hours, or until a skewer comes out clean.
Cut into 15 slices.

Per slice:
Energy: 328kj/78 cal
Carbohydrate: 15 g
Fat: Low
Fibre: Moderate
