I had the book and cant find it, it would be nice if you have it

Leek & Bacon Muffins

1.1/2 cups SR Flour
1 cup (100g) grated tasty cheese
1/2 tsp salt
1 TBS sugar
pinch of Cayenne pepper
1/2 small leek chopped (1 cup)
2 rshers of bacon cooked
1 egg
1 cup milk

Measure the first 5 dry ingredients into a large bowl. Mix with a fork until well combined
Cook the chopped leek in 2 tablespoons water either in a saucepan or a microwave oven for about 2-3 minutes until just tender, but still bright green.
Chop bacon finely

In anothe rcontainer beat the egg and milk together, add the cooked leek and chopped abcon, then add to the dry mixture. Without over mixing fold everything together.
Flout should be dampened, the mixture should not be smooth

Coast 12 medium sized mifffins pans with non stick sparay and put 1/4 cup of mixture in each muffin cup
Bake at 210C for 12-14 minutes until muffins spring back when pressed
