Looking for a recipe for

Lemon cakes, probably baked in muffin tins, iced with lemon icing, and split and filled with whipped cream, Can be made orange cakes as well.

Cream horns....I have the tins to make them, tried 3 times and absolute disasters.

This one was in a New World flyer a few years ago. Really nice
A fantastic simple 'whip up in a flash' cake with a delicious lemony drizzle topping. Sure to become a favourite recipe as it uses simple ingredients, is delicious served warm with vanilla ice cream and everyone will love the fresh lemony tangy flavour.
Meal Type:Dessert
Prep Time:15 minutes
Cooking Time:50 minutes
Serves:10
By:New World
Ingredients
• Add170g butter
• Add150g caster sugar
• Add200g self raising flour
• Add3 eggs
• Add3 tablespoons lemon curd
•
• Topping
• Add3 tablespoons caster sugar
• Add3 tablespoons lemon juice (approx. 1 large lemon)
• Add all ingredients
Preparation
1. Preheat the oven to 170oC.
2. Line a round baking tin (ideally 20cm or 8 inch diameter) with baking paper.
3. Soften the butter by microwaving for 20 seconds.
4. Mix together the softened butter and caster sugar until light and creamy.
5. Slowly add the eggs, flour and lemon curd.
6. Once all are added, beat well.
7. Pour the mixture into the prepared tin and bake for 50 minutes, or until the top is golden brown and when a skewer inserted into the centre comes out clean.
8. While the cake bakes, mix together the two topping ingredients.
9. When the cake is done, remove it from the oven and immediately pour over the topping.
10. Leave in the tin to cool.

Seeing the cream horns made me think. Wonder what they would be like filled with Christmas mince instead of my usual jam and cream?

I agree....
fruit mince tarts (with or without tops), and a tender short pastry, are a far better idea than big flakey pastry horns filled with fruit mince.

retired, I think that sounds lovely. I too love fruit mince. I agree with autumn winds about the pastry, although the flakey pastry would be better if you want to serve them as a cream horn. The short pastry may be a bit firm for that shape?

I only make with flakey pastry and they are tiny. Usually dip the end in chocolate and fill with jam and cream or savoury cream cheese and smoked salmon. Will try a few they may turn out ok, never know if you don't try.
