Hi Has anyone got the recipe for Roast Nectarine and capsicum chutney. Old Foodtown Mag recipe I think. ?

Roast Nectarine Chutney ( Foodtown February/march 2008)

1.25kg nectarines, roughly chopped with stones removed
1 red capsicum, seeded and chopped
2 cups brown sugar
1 cup red wine vinegar
1 teaspoon each: salt, finely grated fresh ginger
1/2 teaspoon cayenne pepper
2 cloves garlic
1 tablespoon rosemary, chopped
3/4 cup sultanas

preheat oven to 180c.
Place the nectarines and capsicum in a lightly oiled baking dish and roast for 30 minutes.
Place all the ingerdients in alarge saucepan and bring to the boio, stirring to dissolve the sugar. Cook for 1 hou, untio the chutney is thick and glossy, and pour into sterilised jars and seal.

Makes 5 cups
