Easy as dish for cauli:

Slice an onion and rub with olive oil and salt.
Layer on a baking tray.
Steak a cauli and lay on top.
Drizzle with more olive oil, sprinkle with thyme and grind over salt.
Roast for 25 mins
Sprinkle with grated parmesan and pop back in oven until parmy is melted and a bit crispy. Yum

Cauli are big, clean, and beautiful this year, and another row starting to head up. I notice a lot of white butterfly about now, so I've been out with the tennis racquet, but keep missing the little blighters, they are too darn quick, I tried hosing them, but that hasn't worked either.

Me too. It's an odd usage, much the same as "cream the pav", which had me flummoxed for a while.

It is certainly novel and something I have never thought to do, wedded to flowerets as I am along with every other cookery writer I've ever read. But now that I have wrapped my head around it I have to concur that it is an excellent method for that particular dish. It just opens up a whole new world of possibilities.

but made my own cheese sauce
It pays to soak the cauli in heavily salted water for an hour or so if using it whole to get rid of the creepy crawlies.

Tonight I 'steaked' and fried a small cauliflower, and fried with an egg, it was so yummy, and I want more.
