Anyone got an easy recipe for this please

Cob loaf spinach dip
1 cob loaf. 2 tablespoon olive oil. 1 onion, chopped finely
1 clove garlic 2 bunch fresh spinach or 1 packet frozen spinach, thawed
1 lemon, juiced and zested. 250g cream cheese, softened
125g creme fraiche. 200g cheddar cheese, grated. 50g parmesan, grated. 1 bunch chives, chopped. black pepper. sea salt
Cut top off bread loaf and tear dough from inside, set aside.
Preheat oven to 180°C/350°F.
Saute onion in olive oil. Add spinach ( ensure juices are squeezed out) and garlic to pan, cook until spinach is wilted and cooked through.
add cream cheese and creme fraiche, cook, stirring, until well mixed through. Turn heat down, add grated cheddar and parmesan a handful at a time, stirring until melted and mixed through. Add chives and season to taste.
Place spinach mixture in hollowed out cob loaf, place lid back on top, wrap tightly in foil and bake for 10 minutes.
Serve loaf with reserved bread pieces and crackers or oven toasted slices of French stick on the side.

chookpan, the following is a recipe that, over the years, has been very popular here on the Recipes MB.....

DIVINE GREEN DIP - with thanks to "toadfish"
1 Cobb Loaf
1 onion
¾ cup mayonnaise
1 tsp curry powder
1 cup grated cheese
250g cream cheese
¼ tsp basil
4 silverbeet leaves, cooked and well-drained

Cut the top off and hollow out the Cobb loaf, keeping the bread to cut into small serving-sized pieces for dipping.
Mix all the remaining ingredients in a food processor and then pour the mixture into the Cobb shell and place the lid on i.e. the piece cut from the top of the loaf.
Bake at 150°C for ½ hour. Serve warm.
Note from toadfish – “This is absolutely divine but the bread is not enough on its own for dipping, so I always serve other things e.g. Snax crackers, finely sliced French bread…..I have also done in it in small rolls for individual dips and my Aunt has served it up as a Vegetarian meal, 1 dinner roll with filling and lots of chopped up vegetables for each person.” :-))
