This very tasty recipe in one of their original books. Help anyone please

1c flour
60g butter
90g cheddar cheese
Pinch cayenne
1/4t salt
1 egg yolk
1T lemon juice

Rub butter into sifted flour until mixture resembles fine breadcrumbs. Add grated cheese, cayenne and salt, mix lightly.
Combine egg yolk and lemon juice.
Make well in centre of dry ingredients, add egg mixture, mix to a firm dough.
Roll pastry out thinly, cut into strips 1cm x 8cm.
Bake on greased oven trays in moderate oven for 12 minutes.
Makes about 100.

PAm's finest cheese straws are similar from memory (it must be about 30 years since I made these as I don't really eat cheese, but recall these being tasty).

Oh the original cookbook has a slightly different recipe, which I have never made.

125g butter
1-1/2C plain flour
220g grated cheddar
1 egg
Salt

Rub butter into flour. Add 155g cheese, stir in egg, mix well. Roll out dough to 3mm thickness on floured board.
Cut out 5mm x 11mm strips.
Twist two strips together, place on greased oven tray, sprinkle with remaining cheese. Bake in hot oven 10-12 minutes or until golden brown.
Sprinkle with salt while still hot. Loosen and allow to cool on trays.
Makes approx 60
