Keto buns

Ingredients

1¼ cups almond flour
5 tbsp ground psyllium husk powder,
2 tsp baking powder
1 tsp sea salt
2 tsp cider vinegar
1 cup boiling water
3 egg whites
2 tbsp sesame seeds (optional)

1 Mix the dry ingredients in a large bowl.
2 Preheat the oven to 350°F (175°C).
Bring the water to a boil and add it, the vinegar and , while beating with a hand mixer for about a minute add egg whites and keep mixing until the dough takes up the ''wet'' Don't over mix the dough, the consistency should resemble Play-Doh.
3 I weighed the dough then made 4 hamburger buns of equal size. Place on a greased baking sheet. Most recipes say it will make 6 buns, it will but eat 1 or 2 ?
4 Bake on middle rack in the oven for 50–60 minutes, depending on the size of your bread. They're done when you hear a hollow sound when tapping the bottom of the bun.

I have some very old 10 cm. diameter crumpet moulds and pushed the dough into those, baked 50 minutes then removed the moulds for the last 10 minutes. They will replace burger buns in our house, rolls to put salad in, garlic bread. anything else, toast ? no tried.

I have tried these a few times but they always look good but end up hollow on the inside

Have you ever had that happen? TIA

It was my first batch....timturtle....I was stoked. Let the mixture cool a little before adding the whites, mix with your hand if the whites are hard to incorporate. Keep beating until you end up with a ball of raggedy dough. weigh the mixture and divide evenly for cooking. If I had stopped beating when the original recipe said I would have needed to cook them in muffin tins, that is how wet the mix was until it came right with extra beating. The recipe is perfect, the flavour bland. I will be adding little extras to combat that problem, as we all do. A 100 gram bun 2.62 net carbs.

Is this off the Diet Doctor web site ? Thanks for your reply can you update when you make more batches please ?

Also thanks for your range dressing recipe am going to try that as I see it mentioned in keto recipes

I want to get into keto but haven’t got there yet

I cannot remember but I doubt it was from that exact site, I don't have him on my fav's. There are a lot of similar recipes some have cheese, that recipe is on my hit list, I think that one is a ''pastry'' recipe. As far as ''Keto'' goes, I use Fatsecret to keep me on track 5% net carbs, 70% fat, 25% protein from 1200 calories. well under 20 net carbs. I get near to those figures without too much difficulty.

Keto muffins

100 grams each almond flour and
grated mozzarella cheese.
Add
1&1/2 teaspoon of baking powder....[* my new box of B.P.is crap]
2 eggs
1/2 teaspoon each of cayenne pepper, onion powder, garlic powder
1/4 teaspoon of salt
1 Tablespoon of oil
3 tablespoons of Almond milk
Divide mixture between 3 muffins in a muffin cooker.

Bake muffins for 16 minutes.
I use this recipe now for every day use. They are a great to have on hand if you need more than just a small snack.

* a new box of Edm. baking powder is so poor, I will in future make my own.
I am going to jump up turn around and go see about making Date muffins, using this same recipe.

I just added small diced salami to this recipe, turned out real good. I must pick up some blueberries, they will be next. enjoy
