3 ingredient Christmas cake

Has anybody tried this? I don’t be usually make a Christmas cake but this sounds nice as well as easy

Annabel Langbein amazing cook, would trust her if she says it's good! Sure I saw her make this recipe on tele, and was impressed.

I have made several 3 ingredient cakes although not from that recipe. The one I make uses fruit juice instead of the almond milk. I usually use 50/50 juice/rum or brandy and leave it to marinate for longer, I also add spices. Never had a fail, keeps beautifully and is very moist.

I just use cold tea with lemon from my garden

Made it many times
Variation in spices,
Also suitable as a wedding cake.

Just soaking the fruit (without the bits of red and green jelly - yuck). I bought the So Good date and caramel flavoured almond milk and put cranberries in with the fruit as well.

I added a bunch of spices as well - it smells ok but looks quite dense - will save it for Christmas and see what it’s like - if we don’t like it then the birds will get a fruity treat for Christmas

Not the birds,
you turn it into truffels, freeze them, and give to neigbours next Christmas. Or me.

just made Annabels 3 ingred one used vanilla soy milk fruit with added ginger and cherries and with the flower 2 tsp mixed spice and 1/2 tsp cinamon sheery on top when hot very good

The reviews are good so thought I would try this recipe. I've put the fruit to soak in almond/coconut milk, doing half the recipe and baking in small tins. Will add chopped nuts and spices with the flour.

I am eating my way through one at the moment.
I did add about 1/4 cup of brandy as well

LOL - I was quite restrained then and only used a tablespoon (I’d rather drink the brandy with the cake)

I made half the recipe and added ¼ cup rum to the fruit mix before adding the flour. It's in the oven baking at present, looking good.

The cake baked beautifully, smells really good, will give it a taste test later. This one will be eaten before Christmas as have visitors arriving so will make another one for Christmas and add extras.

I cut the cake today and it's lovely, nice flavour and really moist. Will definitely make another one.

I've made it a few times also, nauru.
I love the orange flavour, so I use a mix of orange juice(maybe a bit of lemon juice) & brandy. I ]also add a few 'Christmasy' spices & a tspn of curry powder & one egg. I put prunes in the fruit mix & sometimes dried apricots.
I realise that it's no longer a 3 ingredient cake, but it is an adaption that's not too difficult & it always tastes good.

Used this basic recipe with the milk yesterday and the cake is good. Like you Samanya, I tend to wander from the original recipe a little but always with good results. Brewing another one, adding rum, chopped prunes, figs, ginger, and cranberries to the fruit mix. Adding spices (and yes, I add curry powder too) and chopped nuts to the flour for this one. Then will hide it until Christmas or there may be non left.

I changed the fruit this year.
I have worked out that each I think "i will get some fruit mince and make some Christmas mince pies"
And each year it is left undone.

This year, i had taken the MANY jars of fruit mince, and then added sultanas, chopped crystallized ginger and cherries.... this was the my fruit for the cake.

I made it last night - my first ever Christmas cake and I was stoked! Not too rich. I added some spices, but thats it.
So easy and so delicious!

Hi, I'm just curious to know what everyone who made the 3 ingredient Christmas cake thought of them. I made 3 of them using ½ recipe for each. Two of which were sampled and shared around several friends before Christmas. One I added whiskey to the milk to soak, spices, chopped nuts and topped with fruit and nuts before baking and kept for Christmas, it was lovely and moist. They were much appreciated by everyone who sampled them and I will definitely use that recipe again.

i have purchased some wee cake tins (about the size of a saucer). they make loved cakes for gifts - their size means that they aren't overwhelming for a person living on their own

I haven’t cut ours yet - will probably save it for New Years and get the kids over to eat it

I had some of the cake yesterday and it was delicious - the fruit was nice and soft, the flavour was spot on with the spices and brandy, and the texture was much lighter than I expected. I would definitely make it again.

I use a mix of ground spices, usually made up of ginger, cinnamon, mixed spice, cardamom, mace, nutmeg and a pinch of curry powder.

I didn’t use mace or curry powder but I did use all spice as well as mixed spice - I just looked at another Christmas cake recipe and used what they used

Thanks for that.
I tried buying mace a couple of years ago for a new year's recipe and my supermarket said it was not legal in NZ to buy as a spice. Where did you get yours? I would like to make that recipe again but with the mace in it. TIA:)

I don't think mace would be illegal. Why would it be? Nutmeg isn't and it is from the same plant. I bought some about six months ago (from Vetro as far as I can remember) and the brand is The Spice Trader. They probably sell on line.

Never heard that before, I think maybe they were possibly getting mixed up with the mace spray.
I bought it at Binn Inn and I've also seen it in some Asian food stores too. I also use it in homemade sausages and burgers too. A hint passed on a lot of years ago from my Mums local butcher who made all his own Cumberland sausages (speciality in the UK) and burgers.

My Mum always used mace (took me a while to track it down here) in her cakes and the curry powder was a tip I picked up from TMMB, not sure who recommended it though. Must say that we really like this cake recipe, so easy, cheap to make and very moreish. I've just made another small one, good to have in for unexpected visitors.

I've been using Alison Holst's Christmas cake recipe for years. Yes it has a few ingredients in it but hey I only make one Christmas cake a year so I make it a goody!

This fruit cake was in a cookery book - "Three Ingredients" or such - before Annabel. Did it with just 3; fruit, orange juice and flour, and it was fine.

Yes I agree, I've made the original "3 ingredient recipe" a few times but preferred using apple juice instead of orange and I like spices in fruit cake so added some. Liked the recipe as it didn't have eggs, butter or added sugar (in crystal form that is). Did ½ juice ½ rum/brandy too if for Christmas. Someone else posted the AL recipe last year. I tried it as I was curious to compare it with the other recipe and I always have almond and other plant based milk in the fridge and liked the result and the milk didn't have the sugar as juice does. After the first successful attempt, I played around with it (as I tend to do) by adding some nuts, booze and spices as it was Christmas, good result and everyone enjoyed it too.

Pretty sure we don't have one of those but I made (and ate) the cake in November last year so even if we did it might not be edible by now
