Slow roasted turkey

Hi, I've lately acquired a new oven. It seems much hotter than previous ovens, so I'm hesitant to roast a whole turkey for Christmas as I normally would.
Has anyone ever slow roasted a turkey either in a crockpot or not? And can I stuff the turkey with a bread, onion and sage stuffing?

I always slow roast mine with stuffing in a turkey size roasting bag- it comes out really tender and moist. I do it in the oven, not in a crockpot as you wont get brown and crispy skin.

Most store bought turkeys come with cooking times and instructions. There are hundreds of turkey stuffing ideas on the internet. I cook a 4-5kg turkey at 180 for around 4 hrs(on fanbake) As soon as the breast juice runs clear, take it out and rest it. When it has cooled enough, slice and present on a platter with bowls of cranberry sauce.Pretty hard to muck up really. Never had a dried out one.

OP. Have you thought of getting an oven thermometer to double check your oven's temperatures?

Never slow roasted, but always I always use a floured oven bag and put plenty of butter as well as sausagemeat based stuffing and a breadcrumb based stuffing inside the carcass. I think it may have been Hudson & Halls who recommended about 2hours 40 mins for an average sized turkey and butter inside it - never had a dry one or a failure yet.

Most people overcook turkey which is why it is often dry. Yes, use a meat thermometer for the food or an oven thermometer if you aren't sure.

Agree... over cooking and not resting it for long enough = tough turkey

I would be very wary of doing one in a crock pot.

We have cooked ours on the BBQ on a rotisserie for decades, always moist and brushed with rosemary sticks and the cooking juices saved as it turns - there are adult children booking legs and wings here already! :-)

I have just put my turkey in the oven - 3.75kg. I have dried it and removed giblets etc. Buttered the inside and put in two whole lemons and three cloves of garlic.
What do I do with the giblets? I have put the neck in the open end, inside the turkey. What do you do with the outside? Just keep basting it, or oil or butter it; salt and pepper???

a crockpot? No, that's for stews.
Cook it in an oven bag, ignore the bag label, cook it slower and longer than it says.
They normally have that thing sticking out anyway, that pops out when the inside is at the right temp.

For Christmas last year, used the Gordon Ramsey method with garlic butter under the skin, layer of bacon over the top, stuffed with a lemon and an onion. Cooked 2 hours 40 and rested for an hour or two.

All the remains in the roasting pan including the bacon and the onion and lemon, whizzed and through a sieve for a gravy. Loved it!

Buttered the inside and put two lemons and two garlic cloves in. Put half a clove between each breast and leg under the skin and baked uncovered for 2-1/2 hours. Basted regularly. Rested until we were ready to eat (about 3 hours in the end!) Made gravy and it was really lovely.
Hint: put some baking paper between the turkey (or whatever meat you have cooked) and the foil when resting or cooking. It stops the foil sticking and leaving foil marks on the skin. You only need a piece big enough to cover the part where the foil touches the meat.

I slow roast mine wrapped in foil at 150. It's always lovely and juicy and tender and not dry at all. Crockpot will just steam it, and it'll be mushy and very bland.

I always cook my turkey (not a big one) in the crock pot. Comes out lovely and moist. Same with chicken. Place in crockpot, pour over about 1/3 to 1/2 bottle of sauce flavour (Masterfoods Honey Soy or Teriyaki.)
Try it out on a chicken first if you are not sure.
I don't stuff the cavity though.

so if your new oven is hotter,180 is 180 or what ever you set the dial to??
