Is it this one
Magical Orange Cake Whizz
1 whole orange, washed and processed to a pulp
125gr melted butter, (125 ml vegetable oil for dairy free)
¾ cup sugar
2 med-large eggs,
1 ½ cups flour. (Gluten free flour for GF cake)
3 teaspoons baking powder (Gluten Free – Edmonds)
If you have a food processor, just throw everything in together and mix till all combined.
Pour into lined loaf tin and bake at 180C for approx 35-40 minutes or ready when tested with skewer.
If making cup cakes about 15 minutes (makes around 20)

My granddaughter and I made this Magic cake today only we made it into cupcakes and they are just delicious. Often these recipes that are so simple are not always nice flavoured but this is wonderful. I put 1 1/2 oranges in the processor as they weren't too big and kept the rind and juice of the other half. We then made the icing with some butter, icing sugar and the juice and rind. My granddaughter iced the wee cakes and they are sooo good.

I made this cake last week, and will definitely be making it again. It was very tasty.

I made this today - made it as a slab cake in an 8 x 8 tin. I swapped 1/2 cup of GF flour for ground almonds and used I cup Edmonds GF flour - it was perfect. I sprinkled flaked almonds on top. One of the best textured GF cakes I have made.

In the recipe I have, it adds 1/2 cup chopped walnuts and 1 cup sultanas.

In case some one would like to try these.....

Orange Muffins
1 orange
3/4 cup orange juice
125 grms butter
1 egg
1 cup flour
1 cup wholemeal flour
1 tsp BP
1/2 tsp B Soda
6 Tblsp sugar
!/2 cup sultanas

Cut orange into quarters, put into processor with the juice until finely chopped, then add melted butter and egg, process for 5 to 10 seconds.
Mix with dry ingredients. Bake in greased muffin tins 180dC for 15-20mins.
Or, even better......Soften 3 ozs cream cheese and 2 Tblsp sugar. Put 2/3 muffin mixture into tins, one tsp cream cheese mixture, and top with more mixture. They freeze well and can be microwaved in one minute when needed

This orange cake is lovely. I added sultanas and almonds to mine and made it as a tall loaf, like a panetone (sp?) and it was lovely.
