Chinese Dumplings

Hi. I'm wanting to make some dumplings, using frozen prawns. Can I thaw the prawns, combine with the rest of the ingredients, put into dumpling wrappers and then freeze with out cooking. Am I likely to get food poisoning by thawing and then refreezing uncooked prawns. Many thanks

I would not re-freeze anything that has been defrosted. My answer would be no unless you cook and freeze.

My thoughts would be the same as marcs…..defrost, cook, then eat or alternatively re-freeze, but No to re-freezing the raw product unless it is cooked first.

IMO the risk of food poisoning with refreezing any raw food is so high that it far outweighs any saving you would make by using the frozen product rather than the fresh alternative, and if you did refreeze the prawns in the dumplings (without cooking them) and then got food poisoning I doubt that you would ever look at (or want to eat) another Chinese Dumpling. :-))

I have frequently refrozen raw food and lived to tell the tale. Defrost them just enough that you can make the filling then freeze immediately but make absolutely sure they are properly cooked and hot all the way through when you cook them. Alternatively cook then freeze and reheat properly wh3n you defrost them although dumplings are better cooked and eaten straightaway IMHO

The U. S. Dept. of Agriculture (USDA) advises:

Once food is thawed in the refrigerator, it is safe to refreeze it without cooking, although there may be a loss of quality due to the moisture lost through thawing. After cooking raw foods which were previously frozen, it is safe to freeze the cooked foods. If previously cooked foods are thawed in the refrigerator, you may refreeze the unused portion. Freeze leftovers within 3-4 days. Do not refreeze any foods left outside the refrigerator longer than 2 hours; 1 hour in temperatures above 90 °F.

For those who can't be faffed making their own dumplings (and I do enjoy doing that), I can recommend the Kungfood (yeah, I looked twice, too...!) brand of frozen dumplings! Thoroughly recommend them, in fact, on several levels...
* the range of flavours (have tried 4 thus far, at least 2 more to go...)
* the delicious flillings
* the authenticity of flavours. textures
* the reliability of all 3 cooking methods given (boil, steam, steam/fry)
* the reasonable price, even better on special as they were at C/D last week for $4.99 for 12 - way cheaper than takeaways, for those nights when you want a quick meal, but are low on energy...

i like the new world ones. pork and prawn. get about 16 dumplings for around $4 i think. nicer than the leanne ones. has the water chestnuts in it for texture which is nice.

have other flavours too

I bought some of these at the Auckland food show, still have them sitting in the freezer. Thought it was a good deal 2 packs for $10 included a chilli bag and a discount voucher for next purchase.

Do you know what brand the New World one’s are? I like the Leanne’s ones but found the Kungfood ones a bit stodgy

Thanks for the tip - I don’t usually go to New World but will look for them next time I do - do you fry or steam?

Both lol. I fry in pan but also put some water in and lid on fry pan till it evaporates to get them cooked and finish off in dry pan.

Hope you like them, everyone's taste is diff but I've tried a few :-)

That sounds what I do too - I really should have a go at making my own, apparently they’re pretty easy once you get the knack of hand crimping them

They are pretty easy, just make lots at once and freeze them, make it worth the time and effort. I reckon my home made ones taste far nicer then anything i've ever bought from the supermarket.... Even when I went completely mad and used lamb mince instead of chicken or pork they still tasted beautiful

I made some pork and prawn ones and didn't like them! Got the hand of crimping them, and thr left thrm in a bowl and they all stuck together and I chucked the extras!

I prefer bought ones :-(
