NZWW winning carrot cake recipe

I read about someone having a winning carrot cake recipe, I think in this weeks NZWW, but l forgot to buy it when l was in town and was wondering if anyone has seen the recipe?
Just wondering if it is a different recipe to the ones already on here?

Bake This Cake!
Recipe by Nici Wickes
- Eggs
- White Sugar
- Brown Sugar
- Oil
- Lemon Juice
- High Grade Flour
- Wholemeal Flour
- Cinnamon
- Nutmeg
- Ginger
- Baking Soda
- Baking Powder
- Carrots
- Pumpkin & Sunflower Seeds
- Walnuts

Found this. Seems to have a few different ingredients than my recipes.

The Motueka grape and grain carrot cake is hard to beat though!

MOTUEKA GRAIN & GRAPE CARROT CAKE (CAFE now called The Mooring)
2 Cups of wholemeal Flour
2 Cups of sugar
2 tspn of Mixed spice
2 tspn Cinnamon
2 tspn of Baking Soda
1 Cup of Walnuts
1/2 Cup of Pumpkin seeds
1 Cup of Sultanas
1 Cup of chopped up dried Apricots

Mix all of the above ingredients together then:

.... 750gm Grated Carrots
1½ Cups oil
4 eggs
2 tspn Vanilla

add grated carrots, mix well
whisk up 1½ Cups oils with the 4 eggs add the vanilla, then Fold Carefully into the dry ingredients
DO NOT OVER MIX Bake at 170oc for up to 2 hours keep an eye on it, Dont forget to line the tin, makes 1 large cake

Thank you glasshalfull l have made the motueka cake many times and love it
l couldn't buy that weeks magazine as it was gone from shelves when l went in Monday but l got it from this weeks email and the link is below for the recipe
I may just have to try this one out soon but still love the Moon over Martinborough Dave's Carrot cake

Best-ever carrot cake with cream cheese icing

Scrumptious carrot cake

With its wholemeal flour and vegetables (even seeds), Nici Wickes' carrot cake is as robust as it is delicious. This recipe creates a light, airy and huge cake, so tuck in!

Ingredients
4 large eggs
1 cupwhite sugar
1/2 cuploosely packed brown sugar
1 1/4 cupsneutral tasting oil (Nici used sunflower)
2 cupshigh-grade flour
1 cupwholemeal flour
2 tspcinnamon
1/2 tspnutmeg
1/2 tspginger
1 tspbaking soda
3 tspbaking powder
3 cupsgrated carrot
1/2 cuppumpkin and sunflower seeds
2 tsplemon juice
1/2 cuptoasted and chopped walnuts, to garnish
Cream cheese icing

200 gcream cheese, at room temperature
30 gbutter, softened
2 cupsicing sugar
1 tspvanilla

Steps
Preheat oven to 180°C. Grease and line a 24cm square tin with baking paper.
Beat the eggs and sugar until thick and creamy. Add the oil and beat again until well blended. Add the sifted dry ingredients – flours, spices, baking soda and baking powder – and mix thoroughly but with a light hand. Fold in the carrots, seeds and lemon juice.
Pour into the prepared tin.
Bake for 1 hour or until a skewer inserted comes out clean.
Allow to cool in the tin until warm before turning out on to a wire rack.
Ice with cream cheese icing once completely cooled and shower with toasted walnuts.
Cream cheese icing

Place all the ingredients in a food processor and blend until smooth.
Tips

- Makes one 24cm cake.

- Using some wholemeal flour and adding pumpkin and sunflower seeds adds texture to this beautiful cake.

I have made and like the Motueka recipe, but the one flower-child01 & the Nici Wickes one sound delish, as well.
Which one will you try, buzzy?

Motueka Grain and grape carrot cake wins every time. I leave out the pumpkin seeds and apricot but I do add them on top of the icing.

Daves cake looks really easy. Must try it one day. Loved reading the book.

it is the one l know make and get rave reviews about and it is quick and easy
love his book and some other good recipes l must try one of these days

l love your cream cheese icing recipe and it is the only one l use as it tastes much better
