Funny that you should ask ...today I put about 20 leeks in the freezer. I have no idea if it will work or not, but I sauteed them gently (they stunk the house out & thankfully it's been a glorious day so I could open all the doors & get the smell out).
I have so enjoyed making variations on leek dishes this winter ... chicken, blue cheese, leek & spinach pie is the winner so far ...that I thought it would be good to be able to make them occasionally over summer.
I can't see why it won't work, as I've caramelized shallots & frozen them before & they were fine & very handy to have in the freezer.

I do this as as well. In fact used up the last of them in some soup last weekend.

I roll up the leaves and freeze them whole, then toss them in the pot when making stock.

Apart from leek and potato soup, I've only had leeks in a cheese type sauce many years ago (very yummy!) Does anyone have an easy recipe please. Also, can I use the whole leek, or is it just the main part (without the offshoot leaves if you know?). Thanks.

Simply Leeks
I use mainly the white part. Wash and slice finely. Give them another rise under the tap and put them into a pot, still a bit wet, add a good knob of butter and a pinch of salt. Cover and cook on a low heat until they are soft and sweet - probably as long as it takes to boil the potatoes. I serve this with steamed, grilled or fried fillets of fish. Just lovely.

Thanks arden22 - I'll give that a go! I'm just wondering though if it's OK to use the "greener" stalk parts also - for a bit of colour and to make things go further?

I use the green parts as well , just not the tough outer leaves ...love leeks

Thanks jbsouthland. I just wondered ie when cooking asparagus, it's recommended to use only the "spears" - not the whole thing, a bit like silverbeet (only use the leaves) - I use the whole blardy lot LOL (well I chop the stalks finer of course and it goes further - no wastage).

I made a few small chicken and leek pies in enamel dishes and froze them over the weekend.
Throw leeks into everything and go great in soups and stews. I don't use the green part at all.

Yes, Maree, use some of the greener parts too, but not the obviously tough and stringy looking bits, just make sure the result it meltingly tender! Those darker, thicker leaves are OK for including when you want to make a vegetable stock that you will strain before use.
Hope you enjoy the leeks with your fish.

I cook mine when I notice they go to seed (used to be end of October, now it can be early August/September) - just clean and cit into rings and when cold freeze in packets that you would use for whatever.

Leek and potato soup or leek pies etc. I often bake huge leek pies and freeze the result - once baking and many nights just defrosting a few pieces for a lazy dinner.
