Has anyone got an old recipe for Rum Balls with skim milk powder that is a lot less fattening than the normal. TIA.

camper18,, how about this recipe from the former Trade Me Cooks?

"This one is out of the Kaimata School Country Cookbook. I knew I had one somewhere too but took me a while to find it. Hope this helps. 4T butter, 3 T cocoa, 12 T skim milk powder, 1/2 C sultanas, vanilla essence, 4 T milk, 8 T sugar. Place butter, sugar and milk in a saucepan and heat until butter and sugar are melted. Put that mixture into milk powder and cocoa then stir in sultanas and vanilla. Allow to cool a little then roll spoonfuls in coconut. Set in fridge. Makes about 20.

I have never used milk or any sort in my rum balls. Butter coco powder coconut mixed fruit cut small, and cake/biscuit crumbs (not small, small) depending on how many you want to make
125g butter 3/4 icing sugar,3/4 cup grated chocolate I use a couple of flake bars for ease 2tbsp rum/brandy or I use fruit that is pre-soaked in whatever from xmas cake mix or xmas fruit mince and add a cap full of the essence of choice.
1/4 cup cocoa powder, 1 1/4 cups coconut 1cup mixed fruit, and same of cake / biscuits crumbs can add chopped walnuts BUT I put half a maraschino cherry, or small piece of ginger, in the middle of each .Beat butter & icing sugar until smooth add flakes broken up and rum/brandy or what ever. Add cocoa and coconut, mixed fruit crumbs take small amount and flatten in palm of hand pop treat (maybe even a small lolly) in middle make into balls, I keep my hand semi wet with cold water, roll in coconut put on tray and chill. makes 24 semi larger than needed lol balls I wing and pray isn't brain surgery want more add it is a relatively dryish mix just make till you form nice easy balls

* Ginger truffles
* 250g gingernut biscuits
* 50g unsalted butter
* ¼ cup brown sugar
* ¼ cup condensed milk
* ¼ cup desiccated coconut
* ¼ cup finely chopped crystallised ginger
* extra desiccated coconut to roll truffles in

* Ginger truffles
* 1. Crush gingernut biscuits. A food processor is best, otherwise between two sheets of greaseproof paper with a rolling pin.
* 2. Put butter, brown sugar and condensed milk in a saucepan. Heat gently until melted and stir over heat a further two minutes.
* 3. Add gingernuts, coconut and crystallised ginger.
* 4. Take teaspoon-sized dollops of mixture and shape into balls. Roll in extra coconut.
* 5. These are fine stored in the fridge, but will last longer in the freezer (and are possibly even more delicious straight from the freezer).

Mixture of cakes and biscuits that have made and not been eaten
Mix them all up in mixer or food processor
Add extra variety of nuts and sultanas
And be generous with the rum
Roll into balls
Then roll into coconut put in fridge

If mixer is to soft or wet add some almond meal
