Vegetarian BBQ recipes

#Post

I am having a BBQ this coming weekend and have several important clients attending, I have just found out that 3 of their partners are vegetarian, does anyone have any tried and trusted vegetarian recipes for the BBQ? Any help would be much appreciated

Mushrooms stuffed with a mix of feta and herbs, and a dash of olive oil.

Think of your barbyQ as an extension of your stove top. I use a wok and griddle frying pan, plus baking paper/tinfoil on the hotplate grill.

How vegetarian are they? Is cheese, seafood eaten? 2-3 finger food dishes for everyone with a couple mains. Marinate tofu blocks overnight.

Keep it simple, keep it fresh, pile the platters high for effect. You have more choice with vege dishes than the usual steak, bangers and prawns on the barby.

Make extra as guaranteed the carnivores will dig in to the delish vege meals.

Linda McCartneys vegetarian sausages are very good. The plain ones are the best. Kebabs, veg burgers, seitan are all good.

Don't forget vegetarians will not like anything cooked on the same BBQ that has had meat cooked on it.

What style of bbq are you doing? Is it a burger style or kebabs.

burger is wonderful but a bit labour intensive
Haloumi cheese is great marinated on kebabs.
Stuffed peppers are good,
You could always do a summer vegetarian dish in the oven say a mousakka style dish with eggplants, courgettes and peppers.

Saitan is plain gluten - so be aware if your vegetarian guests are gluten free!

Most vegetarian sausages also rely on gluten to bind the soy and other fillers together. They also usually have lots of flavourings, colourings and preservatives. So check this before you buy any of those make-believe concoctions.

I would rather rely on salads and new potatoes, good dressings etc for the vegetarians rather than try and "grill something artificial" for them.

Kebabs with mushrooms, capsicum, tomato, haloumi cheese. Jamie Oliver has a good recipe. Always goes down well.

Thanks for all the ideas everyone, I will be cooking on 3 different bbqs, a gas one, an open fire BBQ and I also have an automatic kebab machine which also cooks over an open fire, I have several meat recipes which I always use but this whole vegetarian thing is new to me

Ruby19, have you made these burgers before?

I make some burgers that are vege but not vegan. You could make them vegan but try to find out if they eat eggs and cheese.
This recipe I have used successfully and altered it to suit what I had in stock.
250g black-eyed beans dry weight, soaked overnight (Substitute with 2 cans plain black beans or cannelloni beans).
125g of fresh breadcrumb's (I've used dried breadcrumb's successfully)
70g brazil nuts, ground.
125g grated cheese (vegan if necessary)
1 clove garlic crushed
1tsp marjoram dried
1tsp dried sage (I've used fresh marjoram and sage but be careful not to use too much)
salt and pepper to taste.

Drain soaked beans, cover with fresh water and bring to boil, boil until tender. Its easier to use the tinned beans so you can skip this stage.
Drain once cooked and mash. Mix with all the other ingredients. It is a moist mixture. Chill for at least an hour or until firm. Shape into patties or croquettes. Dip in egg if you can use it and into extra breadcrumbs or millet, rolled oats, buckwheat. Cook until outside is a nice golden brown and heated through.
I make these as mini balls, patties to go into burgers and as croquettes, all my non vegetarian friends and family love them.

the reason why I (who eats white meat) hate bbq's. Us non red meat eaters don't want to be served rabbit food! I usually take my own (cooked) chicken along.
OP try Alison and Simon Holst, they have vegetarian cookbooks. They may have a bbq section in them. Or if you make something like their carrot and mushroom loaf or a veg lasagne which is baked in the oven. These aren't very time consuming. There are vegetarian patties/sausages sold by different companies, just check them out.

Yes I did, they were lovely, they froze well, just eaten the last ones on the weekend.Taste the mixture and season to taste as I feel I would slightly increase the cumin, coriander, I also added paprika with the smoked paprika so 2 tsp smoked and 2 tsp paprika. As I said not a quick recipe but Yum...
Also these benefited being cooked either in a pan or on an oven try.

Good for you!
However chicken is not vegetarian :)

Trust me, your vegetarian guests wont say it to your face, but they wont be impressed with your salad and no meat alternatives.

Haven't seen you for years ferita - where were you?

Since I do not have any vegan or vegetarian friends or "guests" - there are no problems here :)

How about you give some recipes rather than telling me "they wont be impressed with your salad and no meat alternatives" Whoever "they" might be.

agree
Protein, rather than rabbit food
I have a great receipt for a carrot and bean salad
And for feta chickpea and pumpkin salads

Both full of protein

"Trust me, your vegetarian guests wont say it to your face, but they wont be impressed with your salad and no meat alternatives."

While I'm not a true vegetarian, my diet is almost entirely comprised of vegetables and fresh fish weekly. I don't eat chicken and eat red meat very rarely (literally, not gastronomically. Anyway, just wanted to say that I would be more than happy with lots of salads, I'd love it! Everyone is different.

I know many vegetarians and not one of them would have an issue with that. It would be an extremist view.

As an ex-vegetarian, I was always careful. There is a case for not cooking food using animal fats.

And is it OK for me to mention that bacon is actually not vegetarian? I wouldn't like to be accused of putting my point across in a way that turns people off.

I’m not vegetarian but my neighbour bought some chick pea patties from the supermarket to one of my barbecues and they were delicious

True vegetariens are not impressed by “ look alike” meat. Just leave out the protein for the one meal.

Pulses are a vegetarians protein. Rather than just serving up vegetables, it would be pleasant to at least offer a dish with pulses in it. There are thousands of dishes made with pulses.

I would recommend that you find out whether your guests are vegetarian or vegan Vegans most likely wont eat vegetarian food. Will bump up the veg thread for anyone having vegans or vegetarians for a barbecue meal over the next few months.

This is one of my "go to" recipes when I have vegetarians to dinner - and often for ourselves. Quick, easy, economical, too. Easy to grill on a BBQ....

Mixed Bean Falafels

300 gm can Craigs chickpeas (well drained)
425 gm can Craigs four bean mix (well drained)
½ cup chopped fresh parsley
3-4 cloves garlic, peeled and crushed
1 onion, peeled and chopped
1 teaspoon cumin
2 teaspoons gr coriander
3 Tablespoons flour (can use GF flour)
salt and pepper to season
oil to fry in

Put all ingredients except oil into a food processor, pulse to a smooth paste.
Take tablespoon lots of mixture, roll into balls, flatten.
Heat the oil, cook the bean patties for about 5 mins on each side over moderate heat, until golden. Serve with mint and yoghurt sauce.

I know many and most would be bothered. They do not consider themselves extremist.

These are amazing. They need to rest in the fridge before cooking so easy to make the day before. I've made these with any leftover cheese l had. A cream cheese, parmesan and supermarket tasty was a great mix. They're 'peasant' food so accidentally vegetarian. The recipe has been around since about 1200 apparently.

Cauliflower steaks are great on the BBQ. I just dip steaks in a seasoned batter then into panko crumbs, leave in fridge to set. I steam steaks in MW for couple minutes before battering, that way they cook through quickly without the crumb coating getting overly browned on the BBQ, just my preference. I also cook these in my aifryer, great with a nice mushroom sauce on the side.
