I don't usually use package mixes but a friend recommended the Edmonds Cheesecake mix. Have now made it twice, so easy and makes a really high dessert. I have swirled passion fruit through the mix so you could add flavour by mixing anything you like through, maybe raspberries or strawberries for Christmas? You won't be disappointed and nobody needs to know it was from a packet.

This chocolate cheesecake is so yummy and so easy to make, it's a vegan recipe. I have made it twice and everyone has liked it, including my cheesecake hating hubby. It will definitely be on our Christmas dessert list this year.

Base: 1 pkt Superwine Biscuits 6oz Butter 1/2 tsp Cinnamon 1/2 tsp Ginger.
Crush biscuits. Melt butter. Mix altogether. Press into dish for base. Chill
Filling: *Pineapple Jelly 1 Cup Castor sugar 8oz (250g) Cream Cheese
1/2 tsp vanilla essence 1 Bottle of cream
Dissolve jelly in 3/4 cup of boiling water. Cool
Beat cream cheese with castor sugar & vanilla essence.
Beat cream until thick
Add to cream cheese mixture & stir in jelly.
Add to base & chill.
Can be made day before.
* Any flavoured jelly can be used - have made boysenberry with real boysenberries mixed into filling mixture. You can also add chocolate chips etc.
I made this for a function we were attending & a chef from Wellington asked me for my cheesecake recipe - he looked a bit stunned when I told him what was in it.

LOL, sure they do....it's distinctive.....

.....and I have to say, way better than a bought from supermarket cheesecake, with it's wobbly goo and jelly on top.
Nothing wrong with the Edmonds mix actually, and couldn't get any easier.

well after much debating, I decided to make the one with a jelly in it.
Lo and behold, there was a recipe on the back of the jelly packet.
I have made it, and it has now set firmly in the fridge.
If I wanted to put a topping on, could you make another jelly, cool it and then pour over. I guess it would set....
cant wait for the lamb roast and dessert tonight....

That should work OK korbo. I made the Chocoholics cheesecake in post #6 again today. As I made it for tonights dessert I added 2 teasp gelatine to the filling to help it set quickly. I usually make it a day before and leave it overnight in the fridge to set. It was a great hit and although a vegan recipe we like it, very chocolatey, no dairy.

The cheesecake was devine. I made a lime jelly and put that on top.
Just wished I had some fresh strawberries or chocolate curls to go on top.
It must be years since I made one, and using the recipe on the jelly packet was just so easy. Didnt fancy sour cream and whipped cream, as what was in one recipe. Too much for me...
Next time will use a rasberry jelly and maybe some fresh berries.

There is one floating around on Facebook at the moment that I have made a couple of times.
Not a true cheesecake at all, but a nice dessert and very cheap and easy.
Line a large round dish with baking paper.
Crush a packet of biscuits and place into dish (no butter or anything required)
In a jug mix one can of condensed milk with 1 kg of yoghurt.
Carefully pour over biscuit crumbs and microwave on 80% for around 7-8 minutes. Will still be slightly wobbly in centre. Cool and chill before cutting.
This freezes well also.

I did a gingernut base with tangy lemon yoghurt and a tropical yoghurt on a plain biscuit base. Both were great.

Edmonds mix variation.
Add rose water and chopped turkish delight choccies chopped up. I made a mild chocolate layer of filling, then pink layer with the turkish delight. Top with smashed pecans and chocolate shaved.

Try the Tarahua cheesecake mix if you want a good starting point - you can use it baked or unbaked. It's delicious with raspberries and white chocolate folded through before baking

I made the lemon one last night. I didn't put the crumb up the side, and put more rind on the top before I chucked it in the freezer.
We love lemon stuff, everyone loved it.

The raspberry one sounds great - very easy, few ingredients and it's baked which I prefer

We have used the Edmonds mix, no one liked it, we ended up feeding it to the birds.

I made one a few nights ago and I took out of fridge and was interupted by my son and I dropped it.I explained that it was the non cut version.The dog was called to take care of the mess and it was doubled recipe so yeah I was annoyed to say the least.That Philly cheese at countdown is around 4 bob so a couple of those as well as condensed milk it soon adds up

I thought it tasted powdery and too sweet - Chelsea Winters white chocolate and raspberry cheesecake is so easy, has no jelly in it (thankfully) and actually tastes like cheesecake ????
