I'm all set to make Apricot/Biscuit/condensed milk slice. Been thinking about it all weekend - got the ingredients I needed today.

After having it in a cafe I made lemon Louise cake which is I think, much nicer than the original. Just added lemon zest to the base and used a good thick layer of lemon curd instead of jam.

Yum, you just reminded me of Kapiti Lemon Meringue Pie Ice Cream which you can NOT buy in the supermarket. They sell other Kapiti flavours in Countdown but not the LMP one which I like. Oh well, if they don't want sales, their loss!

I made this and although I like it (very sweet though) I was a bit disapppointed with the lack of apricot flavour caused by using tasteless Homebrand dried apricots and the overpowering brown sugar flavour.

paora-tm, thanks for the feedback, particularly re the brown sugar flavour. I was considering using the icing for a change, but wondered about the additional flavour as well as the extra sweetness. The following is the recipe I use. It doesn't have a major apricot flavour but we enjoy it and always ensure that the measuring cup of apricots is very firmly packed so it's a very generous ½ cupful measure. Note that there is no icing, just a very very light sprinkling of caster sugar.

APRICOT FUDGE CAKE
115g butter
85g brown sugar
½ x 395g can sweetened condensed milk
1 x 250g packet wine biscuits, crushed
½ cup firmly packed, chopped dried apricots
caster sugar

Heat the butter, brown sugar and sweetened condensed milk just until the butter melts. Remove from the heat and add the biscuits and the apricots. Mix well, then press the mixture into a greased and base-lined 19cm square tin. Allow to set for a few minutes, then sprinkle the top with caster sugar. Set in the refrigerator, then cut into fingers.
Tip: After sprinkling the top with the caster sugar, I give the tin a gentle shake to ensure the entire top of the slice is covered with the caster sugar, then tip off any of the sugar that is loose and not sticking in place on the top of the slice - doing that ensures that there is only a very light coating of the caster sugar.

That APRICOT FUDGE CAKE sounds easy as 245sam! Gotta pop to supermarket later, gonna grab some dried apricots and build one for tomorrows lunches!

It is easy as, just_lookin1, and yummy too. I cut it into small fingers though because it's quite sweet and very moreish. It will be a lovely treat for the lunches - it keeps well in the refrigerator and freezes just as well so, if you want to, freeze some of it for future use. :-))

Ahhhh just brilliant thanx 245sam. So easy. I like the 'all in one pot/bowl' types. Hubby likes it too sooooooo, a slice will accompany his bacon & egg pie in his lunchbox tomorrow. And it will be copied into my notebook so I don't lose it. Will certainly make it again!

Date Chew Delicious

Ingredients

Takes 15 mins + baking. Makes 16 slices

125g butter
1 tbsp golden syrup
1 large egg
1 cup sugar
1 cup desiccated coconut
1 heaped cup sliced dates
1 cup sultanas
½ cup chopped walnuts
1 cup self raising flour

directions
1. Spray with cooking oil a 20cm x 23cm x 5 cm baking dish. Preheat the oven to 160degC fan bake or 180 deg classic bake.
2. Melt the butter and golden syrup in a large saucepan. When cooled, break in an egg and mix well.
3. Stir in sugar, coconut, dates, sultanas, walnuts and flour in that order.
4. Place baking paper in prepared pan and place (mix is very dry) into the pan and pat down.
5. Cook for approx. 20 mins. Cut into slices while hot.

* If your pan is 20 x 20cm it will work as well – just adjust the cooking times as it will be a thicker slice but just as delicious.

Fantastic idea! I cannot make lemon meringue that measures up to what my MIL used to make for hubby (his fav) so gave up trying years ago but this sounds like a good compromise. Shall make for fathers day.

I have found with baking generic brands are ok for the really basic ingredients. e.g flour, white sugar. I prefer brand name for all the other ingredients, I personally think you get a better texture & flavour.

I do this Magic Slice that 245sam posted some time ago but do variations. 245sam mentioned using dried apricots so I tried that and do apricots and white Choc drops. Have also put in cashews or macadamias. Often change it up to suit the fruit, nuts or Choc that I have in the cupboard. Have also added mini marshmallows.

MAGIC SLICE
Base:
1½ cups plain sweet biscuit crumbs
75g butter, melted

Mix the biscuit crumbs and butter then press the mixture into a 28cm x 18cm tin.

Topping:
1 cup each of milk choc bits, raisins, desiccated coconut and flaked almonds
1 x 395g sweetened condensed milk

Evenly sprinkle the ingredients over the biscuit base in the order given, then evenly pour the sweetened condensed milk over the top.
Bake at 180ºC for 25-30 minutes, until the top is golden brown and the centre is firm. Cool in the tin.

Oh and I tend to sometimes cover with tinfoil during the end of the cooking until it firms up to stop nuts or marshmallows burning.

Peanut & Rice bubble Slice
This maybe what you are looking for.

155gm butter
1/2 cup sugar
1 cup coconut
3/4 cup peanuts
1 cup rice bubbles or cornflakes
1 tbsp golden syrup
1 tsp BP
1 cup flour

Melt butter, g syrup and sugar.
Add dry ingreds and bake at 180 deg C

GINGER FUDGE CAKE

75gr (3oz) brown sugar
1Tblsp golden syrup
125gr (4oz) butter
1/2 tin cond milk
1 pkt crushed malt biscuits
1 tsp ground ginger
1 tsp vanilla ess
Boil brown sugar, golden syrup, butter and condensed milk for 10 minutes (watch and stir) then add all other ingredients.
Press into sponge roll tin, and when cold ice with lemon icing and cut into squares.

Coffee and Walnut slice

2 packets of Round wine biscuits blitzed in a food processor
2/3 cup of walnuts coarsley chopped
200g melted butter
1 tin sweetend condensed milk

Toppping:
2 cups icing sugar sifted
50g softened butter
3 Tbsp instant coffee
a little milk

Method:
mix base indredients together and press into a lined 20x30 slice tin. Put in fridge to set
mix icing sugar and butter together, then mix the coffee with a little milk and add to icing sugar mixture. Add more milk if necessary to get to a thick but spreadable consistancy
spread the icing over the base and put back in the fridge to set.

cut into squares and try and make it last longer than 2 days!

We loved this recipe bev, thanks for sharing. And yes, I cut it into small squares and put half in the freezer and it's great eating it straight from the freezer too.

Uncooked chocolate Fudge slices

1 pkt crushed wine biscuits,
1/2 - 3/4 tin condensed milk,
3/4 cup sultanas,
100gms butter,
1 1/2 tbsp cocoa.
Melt butter and condensed milk, add cocoa and sultanas and then add biscuits.
Press into sandwich tin ice with choc icing and sprinkle with coconut..
Occasionally replace the sultanas with mini marshmellows.

Biscuit Fudge
10 tbsps margarine/butter,
1/2 cup sugar,
1 tbsp cocoa,
1 egg(beaten),
1/2 tsp vanilla essence,
2 pkt malt or wine biscuits
Heat together marg, sugar and cocoa until well blended. Remove from heat and add egg and vanilla, mix well. Pour over the top of coarsely crushed bickies and mix well.
Press into tin and refrigerate. Sprinkle coconut over top before pressing into tin to give it a bit of bite. This fudge is soft and creamy and as long as you keep the bickies coarse, you’ll have a soft crunchy fudge!!!!

Citrus Slice
1 Pkt superwine biscuits crushed,
1/2 tin condensed milk,
3/4 C coconut,
1 lemon or orange (juice & zest),
125g melted butter.
Mix together, press into tin.
Refrigerate.
Ice with citrus lemon icing and refrigerate again before slicing.

Thanks for the compliments. Sadly chemo and radiotherapy have impacted my health. I am slowly upgrading the site, as all allows, to be mobile friendly so more of value for many.

wouldn't know how to adapt the recipe to make enough for 60 people but this is economical and very nice.

Lemon Brownies

1 1/2 cups flour
1 1/2 cups sugar
1/2 teaspoon salt
1 cup butter, softened
4 eggs
juice of 1 lemon
zest of 1 lemon

Directions
Preheat oven to 350 degrees. Prepare a 9×13 baking dish with butter or non-stick spray. In a large mixing bowl, stir the flour, sugar and salt together. Add the softened butter and mix until you have a thick, combined dough (almost like a sugar cookie dough). In a separate bowl, whisk the eggs, lemon juice, and zest together, then add to the flour mixture. Mix for several minutes on medium speed until batter becomes light and fluffy. Transfer batter to the baking dish and spread evenly. Bake for 30 minutes. Remove and allow to cool for 10 minutes before adding glaze. (Recipe below.)

Lemon Glaze

1 cup powdered sugar
2 tablespoons fresh lemon juice
1 teaspoon lemon zest

Directions
Whisk all ingredients together until smooth and creamy. Pour evenly over still-warm brownies, using a spatula to reach all four corners of the pan. Allow brownies to cool to room temperature before cutting and serving.

Oh dear - can you remember what went wrong?

These Beetroot chilli chocolate brownies are definitely different - I haven't made them myself but have had chocolate chilli brownies or chocolate cake with Beetroot and both were delicious
