I'm wanting a nice moist bran muffin recipe please

H ubby is starting a new job next week and I ;d like a good easy recipe for bran muffins that are moist, I would like to use grated apple or raisins or both thanks, have never had a good deal of luck with bran muffins. tia

adding these to the collection -

Foolproof Bran Muffins

. Mix together:- 1 ½ cups Bran
½ cup wheatgerm
1 ½ cups milk
2 heaped Tbsp golden syrup
Mix in 2 eggs and beat well.

Stir the following dry ingredients together in a bowl
1 cup plain flour
½ cup wholemeal
1 cup brown sugar
2 rounded tsp (not heaped) Baking soda
½ tsp salt

Fold these into the wet mix DON’T over mix or beat as this results in tough muffins
The addition of about 1-1 ½ cups of dried fruit makes yummy muffins
Bake at 180 C for about 20 mins in well greased muffin pans .

Bran Muffins
Ingredients:
Dry Ingredients
1 cup bran (wheat or oat)
1 cup wholemeal flour
1 teaspoon baking powder
2 tablespoons milk powder
1/4 cup brown sugar
1/4 teaspoon mixed spice (cinnamon, nutmeg)

Wet Ingredients
1 tablespoon golden syrup
1 teaspoon baking soda
1 cup hot water
Directions:
1. Preheat oven to 200°C
2. Combine dry ingredients and mix
3. Combine wet ingredients, stir and add to dry ingredients. Gently mix until just combined. don't over mix or the muffins
4. Spoon into muffin tray.
5. Bake for approximately 10 minutes. You can test if muffins are ready by placing a clean, dry knife into muffin, if it comes out clean, without muffin mix, then muffins are cooked.

Adding a mashed banana or some chopped or pulped cooked peaches, pears, etc.. adds extra moistness to a recipe too..

Any recipe with fruit in can be altered to use some other ingredient in place of the fruit.. chocolate chips, nuts, sunflower or pumpkin seeds, etc..

Bran muffins

25g butter
1/4 cup brown sugar
1 egg
1 or 2 Tbsp golden syrup
1 cup bran
1 cup flour
2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt,
1 tsp cinnamon,
1 tsp spice,
1/2 cup milk.

Mix all dry ingredients except baking soda in a bowl.

Melt butter, add golden syrup when cool.
Dissolve baking soda in 1/2 cup milk. Break and stir in egg with fork.

Make hole in dry ingredients. Stir other ingredients in to mix.

Bake in a hot oven 230C for 12 minutes.

These ones are very nice. Mollases makes a nice change to flavour but you can also use treacle, honey or golden syrup. I found that golden syrup did not add much flavour but still worked. I also add an aditional 3/4 cup walnuts. Use cooked apples as the muffins are moist and keeps well

3 eggs
¾ cup soft brown sugar
1/3 cup oil
1/3 cup mollases
1 ½ cup milk

¾ cup flour
¾ cup whole meal flour
2 ¼ cup bakers bran
¾ tsp salt
2 ¼ tsp baking powder
¾ tsp Bi carb soda
¾ cup raisins or blueberries or anything you prefer.

Banana bran muffins

Ingredients and Procedure
3 bananas, mashed
1 egg
Mix together

In a pot add
1 tbsp golden syrup
1 tbsp butter
1 tsp baking soda
3/4 cup milk
Place this on heat till butter is melted and baking soda is frothy.

In a large bowl sift
1 c flour
1 tsp baking powder

Add
1/2 tsp salt,
1/4 – 1/2 c sugar
1 1/2 c baking bran

Mix the dry ingredients.
Add banana mixture then melted mixture. Mix by hand.
Bake in muffin tins 12-15 mins, 220°C.

I make the breakfast muffins that are on this message board (google the recipe) for my lunch at work and they are very filling and yummy. While I like the original recipe, I have changed it lately to using 50 grams butter instead of oil (don't like oil so much) and add enough milk to make a soft mix. I also use raw sugar, and 1 cup wholemeal flour instead of one cup of white flour. I can't see why you couldn't add bran as well. I use raisins instead of sultanas because I like them better.

Bran Muffins ( from an Aunt, nice and moist )

1 3/4 cup Bran Flakes, 1 1/4 cup plain flour, 1 tspn baking soda, 4 Tblspns golden syrup, 2 Tblspns melted butter, 1 cup milk, 1 egg, 1 cup sultanas or raisenns.

Put all dry ingredients into bowl, melt butter with golden syrup, add to dry ingredients, add egg and milk, mix all together.
makes 12 in muffin tins. Bake @ 190 oC for 12-15 mins.

Oat-bran collection -
OAT-BRAN APPLE MUFFINS
Great for the cholesterol-conscious. The soluble fibre from the rolled oats and the oat bran is said to be helpful in keeping down cholesterol. If you are being cholesterol-conscious be sure to use margarine instead of butter and use only the egg white, not the yolk.

1 cup apple sauce
50g margarine, melted
1 egg
½ cup sugar
½ tsp five-spice powder
1 tsp baking powder
1 cup each of flour and oat bran
¾ cup rolled oats

Lightly oil a muffin tin and preheat the oven to 200ºC.
This recipe makes 12 muffins.
Put the first 5 ingredients into a bowl and mix well. Add the remaining ingredients and blend until just mixed. Two-thirds fill the muffin tins and bake for 10-15 minutes.

WHOLEMEAL APPLE MUFFINS
This recipe gives you what's good for you - fruit and bran baked in a tasty muffin.

2 eggs
1 cup apple sauce
¼ cup margarine
1½ cup wholemeal flour
½ cup each of brown sugar, oat bran and rolled oats
1 tsp ground cinnamon
½ tsp ground nutmeg
2 tsp baking powder
1 cup chopped walnuts

Lightly oil a muffin tin and preheat the oven to 190ºC.
This recipe makes 12 muffins.
Put the first 3 ingredients into a bowl and mix well. Add the remaining ingredients and blend until just mixed. Two-thirds fill the muffin tins tops with a little brown sugar and bake for 15-20 minutes.

BANANA AND OAT-BRAN MUFFINS
1 egg
5 tbsp melted butter or margarine
¾ cup yoghurt
2 bananas, mashed
1 tsp vanilla essence
¾ cup brown sugar
1 cup each of flour and oat bran
1¼ tsp baking powder

Lightly oil a muffin tin and preheat the oven to 200ºC.
This recipe makes 12 muffins.
Put the first 6 ingredients into a bowl and mix well, then add the remaining ingredients and blend until just mixed. Two-thirds fill the muffin tins and bake for 15-20 minutes.

ROLLED OATS AND BANANA MUFFINS
3 tbsp margarine, softened
2 large bananas, mashed
1 egg
½ cup sugar
1 tsp baking powder
1 cup each of flour and oat bran
¾ cup rolled oats
1 tsp cinnamon

EVEN LOWER CHOLESTEROL OAT-BRAN MUFFINS
1½ cups low-fat milk
2 tbsp oil
2 egg whites
2 bananas, mashed
2½ cups oat bran
1 tbsp baking powder
½ cup each of chopped walnuts and brown sugar

Lightly oil a muffin tin and preheat the oven to 180ºC.
This recipe makes 12 muffins.
Put the first 4 ingredients in a bowl and mix well. Add the remaining ingredients and blend until just mixed. Two-thirds fill the muffin tins and bake for 15-20 minutes.

MAPLE SYRUP OAT-BRAN MUFFINS
If you can get hold of real maple syrup for this muffin, it is worth it.

2½ cups sour milk or yoghurt
2 eggs
3 tbsp oil

½ cup oat bran
2 cups flour
2½ tbsp baking powder
1 cup chopped pecans
3 cups rolled oats

Lightly oil a muffin tin and preheat the oven to 190ºC.
This recipe makes 20 muffins.

This one here is nice and moist. Halve the recipe I think.
6 eggs
1 ½ cups soft brown sugar
2/3 cup oil
2/3 cup molasses
3 cups milk

1 ½ cup flour
1 ½ cup whole meal flour
4 ½ cup bran
1 ½ tsp salt
4 ½ tsp baking Powder
1 ½ tsp bi carb soda
1 ½ cup raisins or blueberries
- Mix all the wet ingredients in a jug.
- In a bowl mix all the dry ingredients
- Add the wet ingredients to the dry and mix till just combined.
- SPRAY muffin cups and scoop to about 3/4 full
- Bake at 180c for 20 to 30 minutes.

Here is a recipe I use often. Its for Bran Muffins and from a 1984 'The New Zealand Microwave Cookbook' by Jan Bilton. I like the recipe for the reason you can cook just one muffin each day if you wish. I often do this for breakfast - one warm bran muffin with a cup of Easiyo skimmers yoghurt. I prefer plain yoghurt and enjoy the sweetness of the muffin with it as to me they seem to go well together. I realise this doesn't appeal to everyone! Having this for breakfast really 'sticks to your ribs' and I'm not hungry again at all until lunchtime (or even well after) which has got to be good!
The beauty of the recipe is that the dough keeps in the fridge (covered) for about 4 weeks - I have never kept it this long.
Bran Muffins - Jan Bilton.
½ cup water
1¼ cups bran
50grms butter
1 egg
½ cup brown sugar
¾ cup plain yoghurt
1¼ cups flour
1¼ teaspoons baking soda
¼ teaspoon salt
½ teaspoon salt
½ cup raisins

Boil and measure water into mixing bowl, add butter and stir until butter is melted. Add bran and mix well. Beat egg and add with sugar to mixture then add the remaining ingredients. Spoon into paper patty cases or paper lined muffin cups.
To cook allow 30 seconds per muffin at room temperature or 45 seconds per muffin refrigerated. Note: this recipe was made for microwaves of 600-700 watts.
My microwave is 1000 watts and I cook one texas sized muffin for one minute and it turns out well.

Funny ... I was scanning on the main message board page and I saw the heading in recipes ..... I want a nice, moist bra .... I thought - thats odd- but when I clicked on it, obviously it was 'I want a nice, moist bran muffin recipe.' lol Great recipes though- glad i clicked on it.

This came from my friend use it all the time
Bran Muffins
2 eggs
2 1/2 cups flour
21/2tsp baking soda
1/2 oil
1 bottle of milk I use 2 cups
11/2 sugar
1 tsp salt
31/2 cups bran

beat eggs
blend milk
add flour, sugar, soda and salt
mix in oil
then bran
refrigerate 24 hours
then put into tins and bake really nice

This recipe was an all time big favorite of ours. I ate so many...yes you know what used to happen? LOL

1 cup of flour either plain/wholemeal or mixed. I always used wholemeal.
I cup sultanas or raisins.
1 cup grated Apple
1 cup wheatgerm....see they are healthy too!!
1 cup bran
1 tsp each baking powder and Baking soda.
Then..

Warm together in microwave or stove top.
1/2 cup milk
1/2 cup water
1/2 cup goldern syrup

Mix all together and bake 200c for 20 minutes.
