Corn fritters

A recipe with minimal flour, had these at a cafe recently, so light and only just held together with minimal flour, could really taste the corn and coriander.

Basically I use about 2 tablespoons of flour per can a pinch or two of salt and about a 1/4 tsp of baking powder then any herbs fry in butter oil mix. Biggest difference is the quality of the corn you use some are quite watery, Oak is the best.

Stir the flour in as you add it if the batter looks a bit stiff stop adding flour. I too can't stand those Nanna recipes which start with a cup of flour they are corn flavoured pancakes.

I should add heat the pan up while mixing and do a little test to check you have enough flour to bind but only just.

Yay - thanks for that tip - I have always used the Edmond's recipe (3/4 cup flour per can), and they are disappointingly solid, doughy creatures with that much flour.

egg whites and a bit of mashed kumara to mix, then serve with bacon and a drop of maple syrup!

I will try that, I guess I started with the mostly flour type ones and have slowly reduced and reduced to the point where next step is flour free.

I am a poppa well they call me papa or gaga or grandpa anyway, looking after two granddaughters today :)

I usually serve my corn fritters with a nice salsa of diced tomato onion and cucumber and fresh corriander basil and a bit of chilli, olive oil and salt.

If in doubt add a few spoonfuls of buckwheat flour.
At least then it is gluten free :)

Just so you 'know' Uli a fritter IS made with flour. Something with just corn and eggs is NOT a fritter. I don't care what it is called actually, but you seem to be quite literal in the name of a recipe from other threads so I am just letting you learn not to call THAT a fritter. (see Wikipedia entry for Corn Fritter) I wouldn't like to see you uneducated in these things.

I am glad you told me about my misconception of what a real "fritter" is. Sadly I cannot cook you one, I am sure you wouldn't have a clue there was no flour in it :)

But yeah - what shall we call it then? Flour-less fritter maybe? Or mock corn fritter (but that would imply that the corn is replaced by yellow courgettes...). Maybe corn cakes?

By definition a fritter is something that is dipped or mixed with batter and fried. The batter can be made of anything that holds together.

going to add my fave one, has flour but others may appriciate it :)

Corn and Courgette Fritters with Avocado Salsa

410g can whole kernel corn
1 small courgette, grated
1/3 finely diced red capsicum
1 egg
¾ cup self-raising flour
Salt and freshly ground pepper
Oil for frying
Salsa:
1 avocado, diced
1/2 red onion fried with
chopped streaky bacon and
some of the diced red capsicum.
2 tablespoons sweet chilli sauce

Tip contents of the corn can (including the liquid) into a bowl. Add the courgette, egg, flour and salt and pepper and mix with a fork until just combined. Fry spoonfuls in oil over moderate-high heat until puffed and golden on both sides. Serve topped with salsa, made by gently combining avocado, fired bacon, onion and capsicum and chilli sauce. Then onto that sour cream
soooo good and looks amazing :) can add corriander..

try adding finely grated pumkin, finely diced chilli and a pinch of curry power to yr fritters and serve with mango chutney.....nom nom nom

If using a flour recipe and creamed corn, just add an extra can of corn kernels. Stops them form being doughy then :)

And of course not what I cook at all - because it has "4 heaping TBSP of unseasoned bread crumbs" in it - which I don't use.

to make chicken nugget size pillow" perhaps nuggetini. Seriously, what a peculiar instruction. How many people would know what a chicken nugget looks like? I don't.

USually not but I do sometimes normally if its corn scrapped off the cob and chunky and not moist enough then I'll add an egg.

Corn Fritters .... You can also use whole kernel corn
450g tin of creamed corn.. 1 egg beaten.. 3/4 cup flour.. 1 tsp baking powder .. 1/4 tsp salt .. pepper to taste...
Place all in a bowl and mix well together... Pour spoonfuls onto greased frypan, fry and turn when golden brown. Add herbs if wanted.

Corn and Vege Fritters
Ingredients:
410g can cream style corn.. precooked broccoli Florette's.. 1 grated carrot.. 1 grated potato.. 1 finely chopped onion.. 1 tsp crushed garlic..
Precooked bacon bits .. salt and pepper ... 1 egg.. 1/2 cup self raising flour .. 1 tsp baking powder..
Method:
Thoroughly mix all the veges together and add salt and pepper to taste Mix in the bacon bits, baking powder egg and then gradually the flour.
If the mix is too wet add some more S/R Flour... Smaller thin fritters cooked in oil both sides till golden brown or place on clean BBQ hotplate.
Variations:
The above is the plain version and you can add in the mixing process, all sorts of herbs spices and salts to add flavour.
Try some variations Onion / Garlic / Celery Salts
Cumin seeds / Parsley /Chives / Mixed Herbs
Whatever takes your fancy

Method:
Mix together the corn, kumara, herbs, self-raising flour, milk and egg yolk. Beat the egg white until stiff and fold into the corn mixture.
Pan fry large spoonfuls in a lightly greased pan over moderate heat for about three minutes each side or until golden.

I always seperate the egg and find this gives a much nicer finish less stodgy. thanks fisher for those receipes, will try them for sure.

Parsley and Onion fritters are lovely. I always make them when the parsley is just about to bolt. Serve with tomato sauce (I know that sounds weird) but every one who tries them love them and the tomato sauce just works. I think it may have been a depression recipe. I got it off an old lady.

You all seem such experts at this I am almost too scared to put my little bit in. When I make my corn fritters i used a recipe that I got off a packet of frozen corn.... but what I did was also add a tinned of creamed corn. I found the frozen corn made them really tasty and they certainly had more corn flavour. I remember it said about putting oil in the fritter batter and that seemed to help as well. I love them no matter what!

I agree Oak creamed corn is best. 1 can, 1 egg, 1 cup flour, 1 teaspoon baking powder, salt and freshly milled pepper, mix very lightly & quickly and fry in butter - best served with a spicy chutney and salad. Never doughy or heavy.

I make these, very tasty, serve with avocado salsa, sour cream and extra chilli sauce if needed.

2 cups self raising flour,1 tsp baking powder, 1 tsp ground cumin and coriander, 2 eggs, 1/2 cup sweet Chilli Sauce, 1/2 cup water, 2 cups frozen Sweet Corn, 1/4 cup chopped fresh coriander butter for panfrying

I just use my pikelet recipe and add corn not creamed, tin or frozen. And add anything else I want like onion herbs, normally fresh other wise I wouldn't bother. If I have some bacon can add that. Grated vegies if your trying to get more of them into your kids. Or just the corn.
