These are very yummy...

Kingston Biscuits

200 grams butter
3 tablespoons honey
1 cup oats
1 cup flour
¾ cup coconut
¾ cup raw sugar

Filling
¼ cup cream
40 grams butter
200 grams cooking choc

Melt 200g butter with the honey, stir in oats, flour, coconut & raw sugar.
Roll into cherry sized balls & flatten onto a baking tray.
Bake for 10-15 minutes at 180C.
Allow to cool.

FILLING-
Bring cream to the boil, remove from the heat, add butter & chocolate and stir & mix until all is smooth.
Cool & spread onto biscuits, sandwiching 2 together.

Gluten Free Peanut Butter Biscuits
1 Cup Crunchy Peanut Butter
1 Egg
1 Cup sugar
nutmeg or cinnamon (optional)
Mix all together. Shape into balls and place onto tray lined with baking powder. Press down with a fork. Bake 8-10 minutes. Need to watch carefully as they burn really easily.
You wouldn't know they're Gluten Free. Can use less sugar

Or if you have kids at home, try these..holidays (noted above poster with Choc Cookies)..

Get mum or the oldest child to soften 900grams of butter via a mixer,

get another child to weigh out the following and kept seperate,
2 cups sugar
1 tin highlander Milk
8 cups of flour
4 teaspoons Baking Powder
at least 2 cups preferably 3 cups of small choc chips or buttons.

Whilst one is softening butter to start creaming it then to add the sugar and condensed milk slowly and cream until light and fluffy.

The other child sift flour and baking powder into another huge bowl, adding the choc into the sifted flour.

Once butter etc is creamed then they mix it all together ensuring all is mixed.

Now oven to 190C, a lightly greased oven tray and the children can start rolling into small balls about 3cm diamter (about an inch or so) with 20 to 25 on a tray... and to be slightly flatten.
Now whilst this is put into the oven for about 15 to 20 minutes or until golden brown, they can roll up the rest, put into Ice cream containers or similar layering these balls and after each layer to put in and seperate each layer with a liece of baking paper, balls only just touching each other. Once one container is done to repeat with rest.

They then can go into the freezer ready for next lot to be done, thaw before baking.

When they have finished this, the first batch should be cooked and cooled ready to eat, LOL....
Editing to add, should make about 120 cookies all up depending on size.

I don't actually like many homemade biscuits because I like my biscuits hard and dunkable - exception would be chocolate chip cookies but they have to be the soft ones

I do hope you have the mandatory walnut halves for topping......not a real afghan, IMO, without one of those plonked in the middle.

My fav is the edmonds hokey pokey, with a about 6ish smashed up odd fellows and a good handful of choc chips. Nan made them with just the oddfellows, but I can't resist my choc chips :-)

Kylie's Melting Moments

250g butter
1/3 cup icing sugar
1 1/2 cup plain flour
1/2 cup cornflour

Cream icing sugar and butter
Stir through sifted flours
Mix well and make into balls and press down with fork

Bake 175C for 10 to 12 minutes until pale golden brown

Icing
50 g butter
1/2 cup icing sugar
1 tablespoon passionfruit pulp

l made a different icing using 1 tablespoon custard powder instead of passionfruit and a bit of milk

These are very yummy and make equal amounts of biscuits or else you will have to eat one covered with icing,lol

These are a bit lighter in texture than melting moments but are absolutely delicious:

Viennese Orange kisses:
220gms butter
1/2 cup icing sugar
2 TBSPS grated orange rind
1 TBSP cornflour
1 cup plain flour
1/2 cup self raising flour
#1 Have butter at room temperature
Cream butter, sifted icing sugar and orange rind until soft and creamy.
Add cornflour, mix well. Add sifted flours gradually, beat well until smooth.
#2 fill into piping bag fitted with star tube.
Pipe into 2.5cm (1 inch) shapes on lighly greased oven tray. Bake in moderate oven for 15 mins, or until pale golden brown. cool on wire rack.
#3 Sandwich biscuits together with orange cream:
Orange cream ingredients:
60gms butter
1 cup icing sugar
2 TBSPS orange juice
Beat soft butter and icing sugar until smooth, gradually beat in orange juice.
Makes about 15

shortbread...
1lb butter softened with 2x 3/4 cups of castor sugar - beat till white in colour, then add 4 cups of flour and 1 cup of wheaten cornflour.
mix well and then roll into a log shape and add an extra bit of flour if its a bit sticky. then cut into pieces as thick as you like and then bake at 150 deg till firm but not brown. yummy!!!!!!

These are my favourite at the mo,

Ginger Cookies.

125 g butter
1 cup sugar
2 teaspoons golden syrup
1 egg beaten
2 cups self-raising flour
1/2 teaspoon baking soda
3 teaspoons ground ginger
Preheat oven 180 deg C

Melt butter, sugar and golden syrup over a low heat. Cool slightly and add the beaten egg and sifted dry ingredients. Refrigerate for about 30 minutes. Roll into small balls, roll in extra sugar. Flatten with a fork and bake until golden. The longer you can leave them in the oven the crisper they will be. Bake at 170 C for 20-25 minutes......this length of cooking time comes highly recommended, they should be dark in colour with a crackled top.. Great for dunking.

I love the anzac biscuit recipe from the heatlhy food guide website and I dont normally like biscuits.

Otherwise I make afghans for other people with hazlenuts and slivered almonds in them or a childs version where I take out the cornflakes and replace them with coco pops and pop in a tube of mini m&m's and they always go down a treat :)

Hey wildflower I went to the Nestle website and the only Caramel Chip Biscuits I could see had no condensed milk version, can you advise where to find it, thanks

My mum in law has always made some yummy Honey Biscuits, (my kids tell me I don't make them like her!) But they are yummy, - especially made with butter...
Honey Biscuits:
melt: 250gr butter
1 cup sugar
2 tabs honey
add: 2 tsp baking soda
2 cups crushed cornflakes
2 cups flour
Mix altogether, & place small spponfuls onto a lined tray. Roll into balls & press flat with a fork. Fan bake @ 150C for about 10-15 mins.

Sante Biscuits

And because it's our favourite, ingredients have been doubled!

250g butter
100g sugar
2 tbsp condensed milk
vanilla essence
350g flour
2 tsp baking powder
200g chocolate roughly broken

Cream butter, sugar and condensed milk, add dry ingredients and chocolate. Roll into small balls and place on a greased trays then press with a fork. Bake at 180 for 18-20 minutes.

Honey and spice biscuits

Makes: 30 - 35

60g (2oz) butter
3 level tbsp honey
250g (8oz) plain flour
½ level tsp bicarbonate of soda
1 level tsp mixed spice
60g (2oz) caster sugar
1 medium egg, beaten

You'll also need:
4cm (1½in) flower-shaped biscuit cutter
Baking sheets, buttered

1. Set the oven to 180°C or gas mark 4.
2. Melt the butter and syrup in a pan. Sift together flour, bicarbonate of soda and mixed spice, and add to warmed mixture. Stir in the sugar and egg and mix well.
3. Knead mixture lightly until it's no longer sticky. Roll out thinly on a floured surface and cut out flower shapes, using the cutter, and pattern the surface with the prongs of a fork.
4. Place on to buttered baking sheets and bake just above the centre of the oven for 12-15 mins. Cool slightly before transferring them to wire racks. (The biscuits firm up as they cool.)
5. To make the filling: Beat together the royal icing mix, lemon rind and juice, and glycerine, for about 5-6 mins.
6. Spoon one teaspoon of filling on to a biscuit and spread out to the edges. Place another biscuit on top. Repeat for the remaining biscuits. Leave to set.

White Chocolate and Cherry Oat Biscuits

250 butter
3/4 c sugar
3 T condensed milk
1/2 t vanilla
1 1/2 c rolled oats or wholegrain oats
1 1/2 c flour
1 t baking powder
250 g white chocolate chopped
150 g glace cherries chopped

Preheat oven to 170C and spray 2 oven trays then line with baking paper. Beat butter and sugar until creamy, add condensed milk and beat until pale and smooth. Stir in vanilla then dry ingredients and the chocolate and cherries. Put spoonfuls of mixture on trays and press with a wet fork. Bake 25-30 mins until golden brown. Cool for 2-3 mins on trays then finish cooling on a rack. Will keep up to 2 weeks in an airtight tin.

I forgot to add the recipe makes about 30 biscuits. This is one of those good basic recipes which can be varied to suit whatever you have on hand and can also be doubled or trebled if needed.

Margaret Fulton's Refrigerator biscuits. The name sounds deadly dull, but as a young mum, the recipe was easy and delicious and versatile. It's a rich and soft butter and brown sugar dough, which is shaped into rolls, and refrigerated until firm. It can then be cut into even slices, and baked, or stored in the fridge until needed. I liked it, because like many other basic recipes, there were many variations of flavours you could choose to make, from a basic dough.

MF's Lemon Butter biscuits were another favourite.

As requested :
Passionfruit Butter Biscuits
250g softened butter. 220g icing sugar. 300g plain flour. 75g corn flour. 50g rice flour. 2 Tbsp passionfruit pulp.
Combine butter sugar and flours in f/processor, process 2 mins or till well combined. Add passionfruit, process till mixture clings together. Transfer to floured surface, knead till smooth. Cut mix in half and roll each half into a log 25 cm long, wrap in glad wrap and chill 1 hr. cut logs into 1cm slices. Place slices about 3 cm apart on greased trays. Bake 20 min @ 170'c until pale golden. Cool on a rack.
Don't let the rice flour put you off... It makes for a nice light and very crispy biscuit.
I have varied the flavour, omitting the passionfruit and using orange or lemon rind.
