surplus of feijoa

#Post
1

as I do not make jam ,so I have just invented a new version of chelsea buns.
make dough roll out- spread with peanut butter and lots of peeled thinly sliced feijoas, a few sultanas and walnuts scattered over it. Roll up, slice inch thick , sprinkle with extra sugar -cook in very hot oven like scones.

very jummy- I thought

We have 60 feijoa trees and I have done the ginger/feijoa recipe. It's a winner with my husband. Has got him off marmalade for now lol. I have yet to make a chutney with them.

peanut butter and feijoa...sounds interesting and the more I think about, the more it is starting to appeal. Thanks for the idea. I bet that combination would be good in a muffin too.

Has anyone tried making Feijoa Sorbet

1 cup water
1 cup sugar
2 cups of feijoa puree (around 16 large fresh feijoas, peeled)
1 tablespoon lemon juice

Place the water & sugar in a pot and boil for 5 minutes until the sugar is all disolved.
Remove from the heat, allow to cool, add the feijoa puree and lemon juice.

Pour into an ice cream machine and churn according to the regular instructions or freeze the sorbet in a large metal bowl or tray that fits into your freezer, until the sorbet has half frozen ( the top will look crystalised ) - this should take around 1 to 3 hours. Using a whisk, or food processor beat the sorbet till light, fluffy and smooth then put back in the freezer. Repeat two more times.
Transfer the sorbet into a smaller container and cover until you're ready to serve.

Digby Law (NZ chef/author) has a lovely chutney recipe which I'm sure you can google. We make it every year. We also make jam and bottle them and stew them for a few minutes to eat cold and of course fresh with a spoon.

Feijoa paste
This is a must when you have a glut of feijoas. Serve with a tangy cheese and freshly baked oatcakes Makes 800g

Ingredients
10 ripe medium sized feijoas (about 1kg)
3 cooking apples
600mls water
600g sugar
Use a potato peeler to remove skin from feijoas. Roughly chop fruit and weigh: you need 300g of sugar per 500g of fruit
Put feijoa peel and cores and roughly chopped apples into a pan; barely cover with water. Cook until soft and mushy, about 10 minutes
Strain through a fine sieve, pressing firmly to get all the liquid from the apple
In a large heavy bottomed pot cook chopped feijoas in this liquid until soft
Push through a sieve or mash
Add sugar to the feijoa pulp; stir until dissolved
Cook slowly on the lowest heat, stirring every 2-3 minutes until thick
This will take about 3hrs - when its ready the spoon should start to meet resistance and the mixture will start to come away from the sides
Pour while hot into straight sided sterilised jars and seal with lids
As an alternative, line a straight sided flat dish with baking paper
Pour in mixture and smooth over with a knife
Give the dish a couple of taps on the bench to settle the paste
Leave to set for 2-3 days in a warm dry place, then cut into cubes when cold and firm
Dust cubes with icing sugar and pack in a tin or jar, or place box lined with waxed paper, with the added sifted icing sugar

Apple and Feijoa Cobbler
Ingredients
As many feijoas as you like
1 tin Apple Pie Filling (or stewed Apples)
100g butter, softened
1/2 cup sugar
2 eggs
2/3 cup flour
1 tsp baking powder
2 tsp Brown sugar
1 Tsp Cinnamon
Extra Brown Sugar

Directions
Prepare the fruit
1. Grease a casserole or baking dish
2. Halve and scoop out flesh of Feijoas, just put straight into dish.
3. Add Apples
4. Sprinkle over extra brown sugar

Prepare the cobbler
1. Heat an oven to 180ºC
2. In a mixing bowl cream the butter and first measure of sugar together until light and fluffy
3. Beat in the eggs, one at a time, mixing well after each addition
4. Sift the flour and baking powder into the mixture and stir well to combine
5. Spoon the cobbler mixture over the fruit
6. Combine the second measure of sugar with Cinnamon
7. Sprinkle Cinnamon mix over the top
8. Bake for 50 mins or until cooked and golden brown in the middle.
Serve immediately with lots of ice cream or Custard.

Personally I double the cobbler sponge mix - my kids prefer a deeper sponge than the recipe makes. Goes a long way.

I hope you like this as much as we do.

Quotedjpablonz (149 ) 4:31 pm, Sat 7 May #4
You could probably cover the fruit of the cobbler with pastry, or blind bake the pastry and add the hot fruit , topped with custard.

Something really simple. Peel & slice feijoas and place in saucepan. Add water to just cover, sugar to taste and 1 teasp vanilla essence. Simmer until soft and fragrant. Lovely with ice cream and or whipped cream or could use as a filling for pie.

A sad feijoa season in the bay of plenty this year. They're all very small due to lack of rain. Delicious to eat - but was hoping to harvest about 28 kilos to get 14 kg of pulp and do a full brew of feijoa wine. Last years batch was so delicious it didn't even make it into bottles.

Hi Tonks, the recipe is from my breadmaker book and just makes 1½ jars which is good for our use and I used the smaller amount of sugar, just my preference. You could double/treble the recipe and make jam in normal way on stove by cooking the fruit, ginger & lemon juice until fruit has softened then add the rest of the ingredients, dissolving the sugar before you boil rapidly until setting point reached.

150g chopped apple
150g chopped pear
2oog chopped feijoa pulp
1-1½ cups sugar
1 tablesp grated ginger
2 teasp. jam setta
2 tablesp lemon juice
Put all ingredients into breadmaker and cook on jam setting.

I make a lovely feijoa orange cake, I've added the link for the recipe below for you. There are lots of other feijoa recipes on there too

Feijoas make excellent chutney. If you search this forum I'm sure you will find many recipes for feijoa chutney, but here's my favourite, from Alexa Johnston.

Roasted Feijoa Chutney
This is a very large recipe, which fills about a dozen jars, so you may want to make a smaller batch.
3 kg feijoas
1 kg red onions
5 large sweet lemons
8 large green chillies
2 kg white sugar
5 tsp sea salt
300 ml cider vinegar
1 cinnamon quill
6 green cardamom pods
6 black cardamom pods*
2 tsp dried chilli flakes

Getting ready
The night before you will cook the chutney:
1. Put the unpeeled feijoas through the mincer, or whiz them in batches in the food processor. You don’t want a complete puree, just a lumpy sludge.
2. Do the same with the red onions and the whole lemons. (It’s a good idea to cut the lemons into quarters and flick out any pips first.) If you like a lumpier texture, you could just chop everything fairly finely with a knife, and I sometimes do that with a few of the feijoas and one lemon.
3. Remove the stems from the green chillies, cut them in half and flick out the seeds. (If you do this under a running cold tap you will avoid chilli burns on your fingers.)
4. Put the prepared fruit, onions and chillies into a large bowl with the salt and vinegar and pour over the sugar. Cover the bowl and leave on the bench overnight.

Cooking the chutney
1. Preheat the oven to 356º F / 180º C.
2. Give the mixture in the bowl a good stir, add the cinnamon, cardamoms and the chillies and pour it carefully into a roasting dish. The dish can be quite full since the mixture will reduce in volume as it cooks.
3. Put it in the oven and cook for 2 -3 hours. Give it a stir with a wooden spoon every half hour or so. It is cooked when the mixture is a reddish brown and most of the moisture has evaporated.
4. Put it into clean jars, seal and leave for at least a week before eating. This allows the flavours to mellow a little. lIt will keep for at least a year in a cool, dark place. Makes about 6 pints / 4 litres of chutney.

Does anyone have a recipe for a

FEIJOA YOGHURT CAKE

Please?? I wouldn't mind trying one out. Not too much can be found on the net.

I too have an excess of feijoas, after turning up to mow the lawn at a property I'm keeping an eye on and finding that it had been raining feijoas (I had thought it was a guava tree - there's some of them in the driveway). Last month it was passionfruit, much to my delight. I'm not a massive fan of feijoas but could probably manage them in a cake.

Me too, holly-rocks.
I have 6 young trees (2-3 year old) & probably about 20 fruit, but they seem to be a way off dropping yet.
I bought some supermarket ones today & they were quite hard & I've used them the Feijoa spice cake that's in bev's post ^^^^ there.

Mine have just started dropping so not too many yet. I made a Feijoa and Rhubarb pie yesterday which was nice. Today I made a Feijoa & Cranberry slice. It was very nice, not too sweet as I cut back on the amount of sugar. I've put half in the freezer for later. Thought I might make a Mango type Chutney using Feijoas instead of Mangoes. I will also freeze some pulp for later use too.
