Ive just done the weeks baking, what did you bake

I have had my nephew(7) to stay and we kind of have a packed that when he stays we bake and he takes home his cakes for his luchbox, so today we have madea Banana Loave you will need......75 grams of butter, 2/3 cup of sugar,2 eggs,1 & 3/4 cup flour,2 teaspoons of bkg powder, 1/4 teaspoon of baking soda,1/2 teaspoon of salt, 2 mashed bananas, 1 teaspoon of vanilla ess make in the usual way and cook for 50 mins at 180........CHOCOLATECHIP BISCUITS 100grams of butter, 1/2 cup of brown sugar, 1/2 cup of white sugar, 1/2 cup of chocolate chips, 1 egg, 1 1/2 cups of flour, 1 teasppon of bkg powder, 1/2 teaspoon of baking soda, make in the usual way and cook at 180 for 15 mins i doubled this recipe and got 50 biscuits.......DOUBLE CHOCCHIP MUFFINS, 1 & 1/2 cups of flour,3 taspoons of baking powder, 1 cup of milk, 1 egg, 1/2 cup of sugar 2 tablespoons of cocoa 1/3 cup melted butter, 1 cup of chocchips make in the usual way and put into muffin tins this makes 12 muffins baked at 200 for 20 mins....what a lucky neph

I do my weeks baking- On a sunday ready for the week , this week i made , choc chip bikkies,bran muffins,nancy slice , and raspberry slice ( both new recipes and very nice too) also had to make a bloody good choc cake for hubby to take to work for morning tea , they take turns . Will post the recipes next.

Bloody good choc cake Mix in order -2c sugar,2 eggs,1c yoghurt( any flavour),3/4c cocoa,200g melted butter,2t baking soda,1 1/2 t vanilla ess, 1/4 t salt, 3 c self raising flour ( or 3c flour and 3 t BP) 1c black coffee. Mix all together , makes 2 round cakes or a roasting tray full , bake at 180*c till knife comes out clean when tested ( about 30 mins).

Nancy slice 150g butter,1t golden syrup, 1/2 c brown sugar, 1/4 c coconut,1/2c chopped dates,1/4c chopped walnut, 3/4c crushed weetbix,1 c flour,1t BP,2T cocoa. Method-Melt butter , golden /s, and brown sugar , add to dry ingre mix weel and press into greased swiss roll tray, bake at 180* 15-20 mins While hot spread caramel icing over and cut while warm, Caramel icing - in a pot -1 c brown sugar ,2T milk ,2T butter , melt then bring to boil , beat with wooden spoon till thickens,pour over cake immediatley. YUMM

Choc Raspberry slice 2c flour ,4T cocoa,1/4c icing sugar, 250g butter, 1 c raspberry jam. Melt butter and add to dry ingre, keep 1/3 of mix aside , press the rest into a greased tray , top with jam then crumble the rest over the top , press lightly, and bake 180* 20-30 mins till golden, cut into fingers while warm , this is really yummy.

I can tell you That when you have got 7 children it is much cheaper to bake than buy stuff from the super market that is full of preservatives and other crap , at least i take the time out to do it and provide my kids with something nice to have in their lunch box, they also get heaps of fresh fruit and veges not just sweet stuff.

i thought i was alone for a while no one else that i knew did baking for their families and they kept saying ''oh your so good'' but its not been good i fing it relaxing and the kids and their bloody friends put in requests i guess for swapping purposes, i also make the nancys slice have you tried the old fashioned chhescakes in the edmunds book im sure they would be a hit...and lemsip get a life what is more nayural thatn a mother wanting to bake for her kiddies its not proceesed its not $2 a slice so your intitled to your opinion but dont try and make us fell s**t for the good things that we do......if im too busy or have to go away for sports i still buy the packages bikkies but they dont last as long and for my 3 lunches costs me $15 a week

Thought i was only one too! Great to know people out there do still bake -thought it was a dying art!(like preserving)I have heaps of recipes so if any one is interested will post more. And thanks kob for giving lemsip a talking to, from looking at the general thread site he is just a stirrer, and i don't care what he says anyway cos i know my kids are better eating my lunches than buying bikies , or having pies/takeaways etc , if he wants to feed his kids healthier stuff thats cool with me just don't put me down because of it.

Heres one for you lemsip BIRDSEED BAR- 1c sesame seeds. 1c sunflower seeds,1c coconut, 1 c chopped nuts- roast all these till nicly browned in the oven, then add 1c sutanas , in a pot put 100g butter 1/4c honey , 1/2c sugar, melt together and mix into dry ingre , press into a tray and cut when cooled. This is addictive, and my kids love it .

Bronnies crunch 1c flour,1t BP,150g butter,1/2c sugar,1c raisins,3/4c cocnut,2T cocoa, 1c weetbix.Melt butter add to dry ingre, press into greased tray and bake 180* till it feels cooked , ice with choc icing. I never time anything i cook its more like a poke with the finger and yeah looks about done to me type of person so you'll just have to sort it out yourself!!!

peanut brownies 1 egg, 125g butter, 1 c sugar , 1.5 c flour,1t BP, 2T cocoa, 1 c peanuts ( roasted are best).Melt butter add to dry ingre then add peanuts, roll and press with fork on a baking tray , cook 180*.I usually double this recipe.

Choc Chippies 2 c sugar,2 eggs , 250g butter melted,3 c flour ,2tBP, 1 pkt of choc chips ( about 250g i think), mix sugar and egg add in melted butter, tehn pu flour, bp , and choc chips, mix well , roll press with fork and bake 180* , this makes heaps .Can add cocoa to make double choc chips.

Ginger crunch 250g butter, 250g sugar, 400g flour,2t ground ginger,2t BP,melt butter add to sugar and dry ingre , press into a greased roasting tray and bake 180* till golden . While base is cooking in a pot put 8T butter,16T icing sugar,2 (big)T golden syrup,4t ginger , heat until melted and pour over cake while hot , cut while warm.

shhhhh bams you are making me hungry. i don't bake i burn. for some reason i have lost my touch. but i use to bake and if i didn't burn so much i still would be baking.

Good on you Bams1 My kids favourites are tan slice and the choc chip biscuits at the top but they will try something and want you to make it until the cows come home.....keep coming with the recipes these are great

butterscotch fingers Base

125g butter 1/2 cup sugar
1 large egg 1 tsp vanilla
1 1/2 C self-raising flour 1 1/2 C plain flour


Filling
100g butter
2 rounded household Tbsp golden syrup
1 can sweetened condensed milk


Turn the oven to 180 c. Line a 23 cm baking tim or a small sponge roll tin with 2 strips of baking paper, so the paper goes well up all the sides.
Cut the butter and warm on the stove or in the microwave until it starts to melt. Take off the heat and beat in the sugar, egg and vanilla with a fork.
Stir in the flours until the mixture is crumbly, then squeeze it into a ball in your hands. Break 3/4 of the dough-ball in to bits, place these evenly in the prepared baking tin and pat them fairly flat.Put the rest of the dough in the fridge or freezer.
To make the filling melt the butter,add golden syrup and stir in. Add condensed milk, mixwell, then pour over the unbaked mixture in the tin.

Coarsly grate the remaining cold dough on top of the filling. Bake for 30-45 mins until the crust is golden and the filling has browned.
Leave for 2 hours, then remove from the baking tin. Store in a covered container in the fridge for up to a week or in the freezer for longer.

fantastic bams.I also thought baking was a dying art,great to see that it is't.I'v run your posts off for our daughter who is a stay at home Mum with 4 littlies.The 3 eldest are pretty good at cooking already.This is one proud Nana speaking here.Laughed about hubby preferring slightly burnt cookies.I remember my Granma who was a fantastic cook,always had to make a batch of burnt plum jam for my Papa.

Crispy cracknels These are easy for the kids to make , 1c flour,1t BP,pinch of salt,60g butter,1c sugar,1c coconut, 1 egg.Melt butter and add to dry ingre, mix well form into a log the slice and put on a baking tray , cook at 180* till golden.

Peanut butter woopie pies These are fun and oh so yumm,- 1 3/4c flour,1/2 c cocoa,1 1/2 t baking soda, pinch salt, 8 T butter,1/2 c sugar,1/2 c brown sugar,1 egg,1 c milk, 1t vanilla ess.-Soften butter and add to dry ingre with milk and egg beat well - in a mixer or by hand till light and fluffy. Drop in spoon fulls on a greased or lined tray and bake 180* till risen but still soft -these are like a ginger kiss. Peanut butter cream filling-2/3c peanut butter smooth is best, 8T butter , 3/4 c icing sugar , cream butter and peanut butter with mixer adding icing sugar until fluffy and smooth , fill the woopie pies with this and smoosh 2 together - like a ginger kiss.

peanut butter swirl brownies 8T butter,5 oz chocolate chopped,2/3c flour,1/2t BP, pinch salt,3/4 c sugar,3 eggs, 1t vanilla ess, for the peanut butter mix, 4T butter, 1/2 c icing sugar,3/4 c smooth peanut butter, pinch salt , 1/2t vanilla. Make choc batter first melting choc and butter together then add to dry ingre and eggs , beat well , and pour into a greased or lined tray , then make peanut mix by adding all ingre and mixing till smooth , drop in spoonfulls on top of choc mixture then with the spoon swirl it thru the top , so it looks sort of marbled. Bake at 180* till cooked about 30-40 mins.Cool completely before cutting ( if you can wait that long)

Brownies 250g dark choc,150g butter,1 c brown sugar,3 eggs , 1t vanilla, 1 c flour,melt choc and butter add dry ingre and mix weel, add 125g choc chips and some chopped nuts pour onto slice tray (greased) and bake 180* 30mins.

Blondies You can use the same recipe as above and make blondies too just use white choc and white choc drops in place of drak choc.Can also make the peanut butter mix and makee peanut butter blondies!

marshmallow slice 125 grams butter, 125 grams sugar,1 teaspoon of baking powder, 1 egg, 250 grams of flour(mix together and roll out into a swiss roll tin or equalivant)and cook for 20 mins at 180.....Topping...dissolve 1 tablespoon of geletine in 1/2 cup of boiling water and stir till dissolved, beat well with an electric beater slowely put in 2 cups of sugar just sprinkle ..pour onto base and there you have it needs to set for 2-3 houirs

orange slice ORANGE SLICE-

125 grams of melted butter,
3 tablespoons of orange juice,
4 crushed weetbix,
1 1/2 cups of flour,
1 1/2 teasppons of baking powder,
1/2 cup sugar,
1 cup of coconut,
add buter and sugar then add dry ingeredients then juice and coconut,......

Bake at 180 for 20-25 mins
Ive with orange icing and sprinkle coconut over the top

tan slice Tan Slice-

150 grams of butter,
2 1/2 cups of flour ,
2 teaspoons of baking powder,
cream butter and sugar add flour and bkg powder and press into a swiss roll tin saving a little mix to sprinkle on top,
cook for 15 mins on 180.......
Topping-
100 grams of butter,
2 teaspoons of golden syrup,
1/2 tin of condensed milk,
slowly melt filling then pour onto base and cook for a furthur 15 mins when it comes out sprinkle the remaining base over the top of the hot caramel

weetbix slice 1 WEETBIX FUDGE-

8 0nces of butter,
1 1/2 cups of flour,
1/12 cups of sugar,
1 cup of coconut,
4 crushed weetbix,
1 1/2 teaspond of baking powder,
2 tablespoons of cocoa,

combine all together and mix then put into a swissroll container and cook for 20 mins on 180
Ice with chocolate icing and sprinklw with coconut

albert square ALBERT SQUARE-

2 cups of flour,
3/4 cup of sugar,
2 teapoons of baking powder,
1 cup of sultanas,
125 grams of butter,
1 tablespoon of goldensyrup,
2 eggs,
milk to mix and 1/4 cup,....

combine butter and sugar add eggs then dry ingredients then put into a swissroll tin and cook for 30 mins on 180......

Orange slice Sounds great kob , gonna try it , and mrtoken there is no such word as cant , thats what i tell the kids anyway , all recipes are easy you should give them a go, not a chance of being the tester around here , have to fight hords of hungry kids off first !!!!!

rice bubble slice RICE BUBBLE SLICE-

4 cups of rice bubbles,
100 grams of butter,
1/2 cup of sugar,
1 tablespoon of honey,.....

Boil everything together slowely except rice bubbles for 4 mins then add the rice bubbles, press into a swissroll tin and cool, cut before it gets cold otherwise it is very brittle

louise cake LOUISE CAKE-

100 grams of butter,
4 tablespoons of sugar,
3 egg yolks,
2 cups of flour,
1 teaspoon of baking powder,
4 tablespoons of cornflour,....

work well together put into a swiss roll tin and pat down then put 1/2 - 1 cup of jam onto the base then add....
3 beaten egg whites,
1 cup of sugar,
3/4 cup coconut,
cook 160 25 mins

I get hasseled by my friends for baking; but they homemade stuff always goes far quicker then when I run out of time and have to buy stuff!
Daddies Biscuits
1 egg
1/4 C. sugar
1/4 tsp. salt
1/4 tsp. vanilla essence
1/2 C. flour
1 C. dried fruit (e.g. fruit cake mix, raisins)
1/2 tsp. cinnamon
Preheat oven to 150„aC (350F). Grease/line a baking tray.
Beat the egg at high speed until lemon coloured and foamy (3-5 minutes).
Add sugar, salt, vanilla and cinnamon. Beat until thick and creamy.
Fold in flour and fruit.
Drop teaspoonfuls of mixture onto baking tray. Bake for 15 minutes.
Makes approx. 20 biscuits.

Date and Oat Slice Base and Topping
220g butter, softened
1 C. brown sugar
1 C. wholemeal flour
1/2 C. white flour
1/2 tsp. baking soda
11/2 C. rolled oats
Filling
2 C. dates, pitted and chopped
1/2 C. orange juice
11/2 tsp. ground cinnamon

Preheat oven to 180„aC (350F). Grease a sponge roll tin.
Base and Topping
Cream butter and sugar until very pale.
Mix in the flours, baking soda, and rolled oats.
Firmly press half the mixture into the sponge roll tin. Reserve other half.
Filling
Put the dates, orange juice and cinnamon into a heavy-bottomed saucepan.
Stir over a low heat until the dates soften to a smooth pulp. You may need to add a little water to them.
Spread filling over base.
Crumble the reserved oat mixture over the dates and press down lightly. Try to cover the dates evenly.
Bake for 30 minutes. Allow to cool, then cut into bars with a sharp knife.
Makes 12 slices.

Vanilla Squares 125g butter
1 C. sugar
2 eggs
1/2 tsp. vanilla essence
11/2 C. self raising flour
1 C. fruit and or nuts
Preheat oven to 180„aC (350F). Grease a 20cm square sponge tin.
Melt the butter in a large saucepan. Remove from the heat.
Add sugar, eggs and vanilla. Beat with a wooden spoon until well combined.
Fold in the flour and fruit/nuts. Spread into the tin. Bake 20-25 minutes or until the centre springs back when lightly pressed.
Makes approximately 12 squares.

It is so good to see there are heaps of home bakers out there. I bake every so often for my kids, should do far more of it but I have a problem when my kids take home baking to school the other kids that have the brought stuff swap for the home bakes!!!!! Thanks for the great recipes I will be printing them out and using some of them. By the way home baking is by far more better for the kids than processed everything!!!!!!

i agree with you 100 % my kids swap their baking as weel but i still take time out every sunday to do the baking for them .
I mean i have hubby and two teenages we all know how much it would cost to feed them if you were buying....they get 1 pkt chips 1 muesli bar 2 pieces of fruit,4 pieces of bread made into sammys each and 4 pieces of cake mixed depending on whats been baked and a yoghurt so thats a good $10 worth at the shops for sure....i also find that the baking stays in the cupboard a bit longer where as the bought stuff they sneak they do sneak the baking as weel but it just seems to last me through the week is all im saying where as for $15 of bought stuff it wouldn't.
