406 | Marshmallow Shortcake - the good ole Edmonds recipe is great - and it freezes well - anything with gelatine freezes well. I make it in slice tins - or even a roasting dish is fine if you want to double or triple the recipe. Make as per the recipe right through to sprinkling the top with coconut, and once firmly set, cut into the sizes you want, and freeze in containers. They just need a couple of hours at room temperature (or overnight) to thaw - you can place them on your pretty plates and cover them with plastic wrap - and then just remove the plastic wrap when ready to serve them. juliewn - 2007-11-03 22:54:00 |
407 | Apple Shortcake - made as small patty-tin sized pies, this is also easily frozen. I use the pastry recipe from the Gooseberry Shortcake recipe - also in the Edmonds book - it's on page 97 in older Edmonds books. Making it in a food processor is easiest.. and very quick - or use purchased short pastry. Have some cooked, cold apple pulp -or some canned apple is fine. Cut out circles of the pastry to fit the bottom and sides of the patty tins.. fill with a slightly mounded tablespoon of apple pulp and cover with a circle of pastry - or strips of pastry to form a lattice. Bake till the pastry is cooked and only just beginning to change colour. Cool on a rack, and freeze in containers. Take out of the freezer the night before and place on plates and cover with plastic wrap to thaw. Not long before serving, dust with icing sugar. juliewn - 2007-11-03 22:55:00 |
408 | Lamingtons - these also freeze very well. I use the bought trifle sponges. Make a packet jelly using 2/3 of the quantity of water. Once the crystals have dissolved, leave to cool a little while you cut the sponge into the size squares you want. Pour some jelly into a pudding bowl, so that it's about 1/4 inch deep. Place one side of the sponge at a time into the jelly, until all sides have jelly covering them. Then coat with coconut - I find it easiest to have the coconut on a paper towel, as you can place the lamington onto the coconut and lift the paper towel edges to help coat the lamington with coconut. Freeze in containers - and take from the freezer several hours before needed, or the night before. Place on your pretty plates and cover with plastic wrap so they're ready to serve. 409 | Chocolate Lamington's: This is the very best fudgey chocolate lamington icing I've ever made: Sift: 4 cups icing sugar, and 1 or 2 rounded tablespoon's cocoa (to your taste - we like 1 rounded tablespoon cocoa). Add 15gms butter, and 1/2 cup milk. Stir together, then either zap till fudgey - stirring every 30 seconds, or place in a bowl and then place that bowl over a pot of simmering water. 410 | You could also make muffin size Christmas Puddings.. and have some hot custard ready to serve with them. Make your favourite Christmas Pudding recipe - and fill muffin pans 3/4 full of the mixture. Bake them with a large dish of hot water below them in the oven so the air in there stays moist. Once cooled, freeze till the day before needed, then thaw overnight. Place them back into the muffin pans and cover firmly with tin foil. Heat in a low oven - or place the muffin tray above simmering water in an electric frypan and cover with foil - right over the tray and frypan - and heat slowly. Enjoy.. 413 | Frosted fruit mince muffins... 250gm mixed dried fruit, grated rind & juice of 1 orange, 1T brandy, 150gm marzipan, 3 eggs, 175gm butter, 175gm caster sugar, 2c sr flour, 1tsp mixed spice, 100ml milk. Frosting: 1 c caster sugar, 3 egg whites. Combine fruit with rind, juice & brandy. Set aside 30mins. Divide marzipan into 12 pieces, roll into balls set aside. Place eggs, sugar, flour, spice & milk in large bowl & beat till combined. Stir in fruit and its soaking liquid. Half fill muffin tins with mix. Top with a piece of marzipan and cover with remaining batter. Bake @ 180°c for 25mins till cooked. Frosting: Place sugar in pan with 1/3c water and stir over low heat till dissolved. Increase heat & boil 5mins. Cool slightly. Beat egg whits till soft peaks, slowly add sugar syrup in a steady stream. 420 | ps.. My favourite shortbread recipe is in Post 113 .. have just posted this in another thread, and adding it here also.. Sometimes I make a range of different shortbread's from the recipe.. Lemon Shortbread: I add some grated lemon rind and a little lemon juice in place of the vanilla. Almond Shortbread - replace the vanilla with some almond essence. Place an almond half in the centre on top of each shortbread too if you want. Chocolate: Add a little cocoa in place of a little of the flour. Add chocolate chips too if you want.. 423 | Individual Christmas Cakes You can make little individual Christmas Cakes in advance of Christmas - using the can's from smoked fish, salmon, or other canned foods - remove the label and wash and dry well, then use as you would a cake tin. My Christmas Cake recipe is post 108 in this thread - you could make 1/2 or 1/4 of the recipe, and cook it in tins or muffin tins, with the tins lined and newspaper above and below them in the oven as in the recipe. Use the same oven temperature, and reduce the cooking time. Keep a check on them after 20 minutes or so - when a skewer inserted into the middle comes out clean, they'll be cooked. 424 | Christmas Muffins these are nicest when made on Christmas morning and served shortly after they come from the oven. You could prepare the ingredients and the tins the day before, so you just need to heat the oven, mix dry and wet ingredients and pop them in the oven. The ones I've made are bran muffins to which a good amount of cinnamon and mixed spice (and some nutmeg if you want also) and some cherries, mixed peel and dried fruit are added. You could use the bran muffin recipe from the side of the Healtheries bran packet - add 1 cup of your preferred dried fruit - I'd use currants, raisins - (the sticky kind sold in packets, not bags), and sultana's; plus chopped glace cherries - and mixed peel too if you want. Add 1 tsp cinnamon and 1 tsp mixed spice. I also add a mashed banana to give a lovely moist result. Top with a cherry. Mix and bake as per the recipe..
