#31 Sultana and Cherry Cake The recipe say to cook for 2 hrs, I cooked one yesterday and only for an hour it was cooked at 160c and tester came out clean and we have started to eat it today and it is fine, so just thought I would query the 2 hours.

hi milemko2 here is one Very Moist Best Banana Cake Recipe

2 cups flour,
1 teaspoon baking powder,
1 teaspoon baking soda,
1/2 teaspoon salt,
1/2 cup butter/margarine,
1 1/2 cups sugar,
2 eggs,
1 cup mashed banana,
3/4 cup sour milk **(2 tblspns vinegar per cup to make sour milk),
1 teaspoon vanilla.
Sift flour, baking powder, baking soda, and salt and set aside.
Make your sour milk and set aside.
Cream butter, add sugar gradually and cream together until fluffy.
Add eggs and beat well.
Add bananas and beat again.
Add flour mixture alternately with milk (small amounts at a time), beating well after each addition. Add vanilla.
Bake at 180 degrees C for 25 mins (although can usually takes about 40 mins!).

Banana & Mars Bar Cake.... 150gm butter, 1/4c brown sugar, 2 eggs, 2 bananas mashed, 2c self raising flour, 3 x 60gm Mars or Moro Bars chopped, 1/2c milk. Beat butter & sugar till creamy. Beat in the eggs and mashed banana. Sift over the flour and fold through the chopped Mars bars along with the milk. Spoon into a baking paper lined loaf pan & bake @ 180°C for 50-55mins. Ice with caramel icing: 1 1/2c icing sugar, 1T milk, 2T golden syrup, 30gm soft butter. Beat icing ingredients together. Ice cool cake.

I'm sure I've seen a star tin ina speciality shop or maybe in a store that hires out party stuff? Thought I would share my "Spongecake For Dummies" recipe, that I love. Crack 4 eggs in to a bowl and beat until pale, gradually add 1c sugar. When very pale yellow fold through 1c flour. Bake @ 160C ish until springy. This makes a firm sponge for layered cakes.

Whole Orange Cake 1 whole orange 180g melted butter 3 eggs 1c sugar 1 1/2flour 1 1/2 backing powder
Place orange in food processor and process well. Add rest of ingredients and mix well.
Bake at 180C for 20 to 25 mins

does anyone have a fantastic recipe for blueberry cake, similar to that of blueberry muffins? my fiance has decided he'd like one for our engagement party - next weekend!!

blueberry cake ive made muffins using a cake recipe adding alittle more milk or melted butter to the recipe and not mixing it as much maybe you could try the same and add a little more raising agent. hope that helps

Custard Cake.... 250gm butter, 2c self raising flour, 2c caster sugar, 4 eggs, 3/4c custard powder, 1c milk, 2 tsp vanilla essence, finely grated rind of 1 lemon. Cream butter, sugar & vanilla essence till light and fluffy. Beat eggs in 1 at a time till just mixed. Sift over the flour and custard powder and then the milk. Mix until just combined. Pour into a lined 23cm square cake tin. Bake @ 160°C for 1 hour or until skewer inserted comes out clean.
