This was about to drop off P4, not sure if here Hi bev00 chrissy cake recipe for you
500g butter, 2c sugar, 2T golden syrup, 10 eggs, 2 1/2kg mixed fruit & nuts, 4 3/4c flour. Cream butter and sugar, add syrup and beat in eggs one at a time. Sift in flour and stir in fruit. Bake @ 100c for 4 hrs if you divided into 2 cakes or 7-8 hrs if you make one big one. My friend make 2, I make one. I add lots of cherries and nuts to mine and put more on top AND ice it with almond and royal icing. So good!!!

Wooden Christmas Cake Box Quite simply the BEST thing I have invested in! I make a few wedding, 21st, Xmas cakes from time to time and simply loath lining the tin.
With a wooden cake box you simply line it with baking paper and VOILA!! thats it... no burning.... the wood doesn't conduct the heat like baking tins. My husband said it would make good kindling.. I dare not tell him what I paid for it, but its worth every cent.

candy cane icecream Well with Christmas creeping up slowly I thought I would share my family's special candy cane ice cream recipe. It looks and tastes great and kids love it. Get a bag of peppermint the red and white candy canes - not any other flavour as apparently they don't work that well. Get a tub of vanilla ice cream, leave it out for a bit so it kind of melts. Put candy canes into a plastic bag and then punch the crap out of them with something - thats the fun part! haha. Then pour the smashed up candy canes into the vanilla ice cream stir in. Put the ice cream back in the freezer. Then Wooolah you have candy cane icecream! Can also add melted white chocolate with candy canes to make a white choc peppermint ice cream. I got this from the parenting board and thought it sounded fab!

can anyone remember the name or recipe for .... they were like truffles but made with a packet of toffee pops and something else and rolled in coconut ...... i made then last year but have lost the recipe .... TIA

Apricot christmas slice: this frezzes really well. 2pkts crushed fine malt biscuits, mix in chopped apricots and glace' cherries. make a well in the centre and add 1 can of condensed milk with 200g of melted butter (mix in the butter well with the c m) then mix well into the dry ingred's and pat into a gladwrapped lined sponge roll tin. is very nice also if the end is lightly dipped in choc. enjoy

christmas bark: melt white choc drops and add into it chopped up candy cane's or jube lollies. pour into a gladwrap lined sponge roll tin, or tsp size amounts onto a gladwrap lined tray. leave to set before breaking up into your own desired size pieces!! frezzes well.

christmas cookie dough: hi everyone!
have found it really helpful to be placing cookie dough and gingerbread men dough in the frezzer. it keeps for upto 4 months and all you do is pull it out the night before you need to use it. because of our often busy ministry lifestyle I have been really on the ball this year, with cookie dough, fruit mince, and christmas puds all done. puds and dough in frezzer and fruit mince in the fridge. started on the slices yesterday and choc's tomorrow. keep ice cream containers as they work well in the frezzer - good stacking!

Toffee pop balls crush pkt toffee pops. In a bowl mix 250g cream cheese & 1/4 c icing sugar. add 3 T baileys (if not making for children). beat with wooden spoon until creamy. Add crushed biscuits. roll into balls and in coconut and chill

morning rubyjane11! can you get to a library? Jo Seager has some wonderful nibbles ides's, not expensive, in her books and a number of them you can make ahead of time. antipasta selections and cheese boards always go down well and you can put dried fruit, sliced pear etc with the cheese for variety. spreads and breads, pate etc, lots of bowls of spreads and the 'dunkers' spread around goes down really well. All the best!

gandmwatts do ur truffles have to be refridgerated or not?I want to put them in boxes as xmas pressies but dont want them to become ruined if anyone forgets to out them in the fridge.and also how much roughly is chantelle brandy?

hi 383!! I frezze the truffles. If you do that then you can choc dip them!! If you try and choc dip fresh truffles they melt!!!! But if you dip them frozzen they come our lovely. So make and frezze and then choc dip when you are wanting to box up and give away - enjoy!! and have a great day

Gumdrops or Turkish paste This is from the 1953 Joy of Cooking, it makes a softish Turkish delight. Soak 2 rounded T gelatine in 1/2c cold water. In a saucepan, pour 3/4c boiling water (I used raspberry-cranberry juice) over 2c sugar and 1/8t salt, stir over low heat until dissolved. Then add the soaked gelatine & bring to boil, boil slowly for 15 minutes. (It doesn't mention whether or not to stir, I stirred occasionally.) Remove from heat and add: 1T lemon juice, 1t vanilla, 1T rosewater, a few drops colouring if desired. Pour into a pan that has been dipped in cold water & permit to harden for 12 hours.

Turkish paste cont'd Cut into squares or oblongs with a knife dipped in hot water (wet fingers help immensely here) and roll the pieces in icing sugar or regular sugar or (what I did) a mix of corn starch (I used potato starch) and icing sugar. I found it helpful to keep my fingers wet and remove several pieces into the dish of sugar, then dry off my fingers to roll them in the sugar & put them in a box. The original recipe had no rosewater in it, but they do suggest using additional orange or lemon juice for added flavour. This recipe was really easy & very nice.

Toffee coated with chocolate & nuts This recipe was on the page nearby the gumdrop one, & I've made it many times in the past with great success. I may as well share it here. Chop finely & set aside 1-1/2c nut meats (I like almonds). Combine, stir, & heat to boiling: 1c sugar, 1/2t salt, 1/4c water, 100g butter. Boil without stirring to light crack (oops, my candy thermometer is in Farenheit, 285 is light crack), add 1/2c of the nut meats. Pour the candy onto a greased baking sheet (no paper for this one!) & permit to cool. Melt 375g dark chocolate. Spread half of it on one side of the toffee & press in another 1/2c nuts. Allow this to harden completely before turning over & repeating on the other side. (My hint: melt only 1/2 the chocolate at a time, since the first side takes an hour or more to harden up.) When cold break the candy into pieces.

hi penwill1, try looking for copha or vegetable shortening - they are the same products as Kremelta as Kremelta is just a brand name.

Ok, best post my favourite Xmas Cake.... Super Rich Chocolate Drambuie Fruit Cake: 375gm sultanas, 375gm raisins, 250gm currants, 250gm orange essence prunes, 250gm dates, 125gm mixed peel, 150gm mixed coloured glace cherries, 1 1/3c drambuie, 1/3c honey, 1T grated lemon rind, 250gm butter, 1 1/2c dark muscavado sugar, 6 eggs, 90gm dark chocolate grated, 125gm pecans chopped, 2c flour, 1c sr flour, 1/4c cocoa, extra pecans & cherries to decorate. Combine chopped up fruit, 1 c of Drambuie, honey & lemon rind & stand overnight or several days. Beat butter & sugar. Add eggs 1 at a time beating until just combined. Add butter to fruit mix and stir in choc, nuts, then sifted dry ingredients. Mix well. Decorate top with extra pecans & cherries if desired. Bake in a deep 20cm square tin lined with brown & baking paper. Bake @ 150° for 3 hours until cooked. Brush hot cake with reserved Drambuie

Great thread everyone well done! I've got 5 xmas cakes maturing in the cupboard, every time I walk past the smell is heavenly. I soak my fruit in Creme de Cassis, an adlut version of ribina, Prenzels make the yummiest flavour ever. I usually make - I call them my red cross parcels for our families and friends of (all homemade) shortbread, Jo Seagers choc truffles, nut tarts, fudge and a yummy christmas pickle. I think this year I will have a go at panforte too as the recipe on this thread sounds devine. Chrissie this year is a BBQ on our newly built deck, anyone got ideas for barbie food?

graebalz: good morning!! hey your cakes sound awesome!! no booze for me now tho, but in the past i used port, brandy and rum, especially when i made creole cake - delia smith - VERY rich but VERY nice! am making more ginerbread men and christmas cookies this morning - our 8yr old has a school fair next week so will get them made and decorate next friday night. hey have a blessed day! am a real christmas addict so have been food preping since sept! the bar-b sounds great on the deck!!! traditional here - hubby loves his turkey. have a brill day!
