Made this last night really good... Probably not authentic, but was a hit with hubby who didn`t mind the Tofu, the kids would have preferred chicken in its place. I thought it was so good might have it again tonight....

Vegetarian Pad thai
8oz rice noodles
2 eggs *
1 small red onion finely chopped
2 cups bean sprouts ( I didn`t add these as I forgot them in my shopping, but did add 1/2 a very finely sliced red pepper)
2 spring onions finely sliced
1/3 cup fresh corinader
1/4 cup crushed peanuts
250g firm tofu.

Pad Thai Sauce
3/4 Tbsp tamarind paste & 1/4 cup hot water
( i had a jar of tamarind concentrate so probably used about 3-4 tbsp of this)
3.5 tbsp soy sauce
1/2 - 2 tsp chilli sauce (to your taste)
3 tbsp brown sugar.
1 finely chopped garlic clove
1 tsp finely chopped ginger

OTHER
3-4 tbsp oil for stir frying
2-3 tbsp stock
lime wedges for serving.

Cook the noodles, add noodles to a bowl and pour over boiling water and soak for a bout 6 min , drain & rinse in cold water.

Dissolve tamarind paste in hot water, then add all the ingredients for the pad thai sauce.

cube the tofu and add to a bowl and pour over pad thai sauce and marinade for about 30 min.
gently beat eggs to combine ,and make into 2 omelets, when cool roll up and slice thinly.

Remove the tofu with slotted spoon and stir fry until lightly browned. Remove from the pan, and add a little more oil and saute the onion garlic ( and pepper if using) add the sauce to the frying pan with the tofu and add the noodles, mix well to coat the noodles with the sauce* if too dry add the stock. Add the bean sprouts, and half the chopped egg. gently heat through.

Divide into serving dishes, and top with spring onions, coriander and peanuts.
You can apparently use soft tofu in place of the eggs.

Cauliflower and Lentil pasta bake

1 cauliflower chopped up into small bits (doesnt matter if you damage the florets as it all will be processed later)
1 large onion
3 vegetable stock cubes (I use oxo)
1 leek
2 carrots
1 tin of lentils
1 tin of diced tomatoes in juice
1 packet of penne pasta

-Chop all the vegetables up,
-Fry the onions, then add the leeks and cook until soft.
-Add rest of vegetables (but not the lentils) along with tinned tomatoes, stock cubes and enough water to just cover the lot.
-Simmer until vegetables are tender

-Cook pasta in a separate pot in very salty water

- Using a slotted spoon or similar, scoop out the vegetables from the liquid and put into a food processor or blender (or use a stick blender in the pot). Process until smooth mix back into the cooking liquid, season with salt and pepper to taste. Should be like a thick creamy vegetable soup consistency. Add lentils

Mix the lentil sauce mixture through the drained cooked pasta and place into a baking dish. Sprinkle with cheese and bake or grill in the overn until cheese is melted and delicious.

You can serve hot as is or let cool and slice it with a salad for a summer days lunch

Fettucine Walnut Alfredo - delicious
1/2lb fettucine, dried or fresh
3/4c walnuts (check they are fresh)
1 garlic clove
1/4c pine nuts
few sprigs parsley
2-3T e.v. olive oil
pinch sea salt
freshly ground black pepper
Cook pasta in salted water.
pulse half walnuts with garlic in food processor scraping down sides.
With the processor running add remaining walnuts, pine nuts and parsley
and then drizzle in the oil. Scape down sides of bowl, process until nuts finely ground. With machine on slowly add 1/4 - 1/3c very hot water until texture begins to turn white and fluffy. Stir in salt.
Drain pasta and toss with sauce until consistency you prefer, I like it to coat the pasta lightly. Add pasta cooking water if too thick. Grind black pepper on top and gently mix through.

The fettucine alfredo recipe above elliehen's post is taken from the book Totally Vegetarian. The utube version has a handful of cashews as well.
This is the version I make. I also add another clove of garlic.

I just had zucchini fritters from annabel langbein's new book.... they are gorgeous. I won't repeat the recipe here, it's too long.... but those with the book "Free Range in the City", please try! Have made them 4 times in the last couple of months. The only thing I change in it is the amount of SR flour... I use more, because I have huge eggs from my hens, and I find the batter too thin if I only use a Tblsp per egg.

I usually use less flour and many more eggs, so it comes out like a crepe.
Sometimes I use no flour at all but just some ground nuts and a bit of grated cheese.
Give it a try sometime.

Really nice salad, used sour cream & mint for the sauce as I had no yogurt.

Grilled aubergines with spicy chickpeas & walnut sauce
4 tbsp olive oil
1 onion , finely chopped
1 red chilli , deseeded and finely chopped
2cm piece ginger , finely chopped
½ tsp each ground cumin , coriander and cinnamon
400g can chickpeas , rinsed and drained
200g tomatoes , chopped
juice ½ lemon
2 aubergines , sliced lengthways

Walnut Sauce
200g tub Greek-style yogurt
1 garlic clove , crushed
25g walnuts , chopped
handful coriander leaves, roughly chopped
Heat 2 tbsp oil in a pan, add the onion and fry until soft and lightly browned, about 10 mins. Add the chilli, ginger and spices and mix well. Stir in the chickpeas, tomatoes and 5 tbsp water, bring to the boil, then simmer for 10 mins. Add a little salt and pepper and the lemon juice.
Arrange the aubergines over a grill pan. Brush lightly with oil, sprinkle with salt and pepper, then grill until golden. Flip them over, brush again with oil, season and grill again until tender and golden.
Mix the yogurt with the garlic, most of the walnuts and coriander and a little salt and pepper. Arrange the aubergine slices over a warm platter and spoon over the chickpea mix. Drizzle with the walnut sauce and scatter with the remaining walnuts and coriander.
