umm time to add more cakes me thinks.... Zucchini Cake (like carrot cake)
1 1/4c brown sugar, 1c oil, 3 eggs whisked, 3cups coarsely grated zucchini, 2 1/2c sr flour, 1c walnut halves, 1c dried dates chopped, 1/2 tsp baking soda, 1/2 tsp cinnamon, 1/4 tsp nutmeg. Cream cheese icing: 250gm cream cheese, 1/2c icing sugar, 2 tsp grated oranged rind, 1T orange juice. Beat sugar, oil & egg in large bowl till creamy. Add zucchini, flour, walnuts, dates, bkg soda, and spices. Stir with wooden spoon until well combined. Pour into lined 22cm cake pan. Bake 180°C for 1 1/4 hrs till cooked. Cool & ice with cream cheese icing. To make icing beat ingredients together till well combined. Don't use lite Cream Cheese.

Rhubarb Cake... 60gm butter, 1 1/2c brown sugar, 1 tsp vanilla, 1 tsp grated lemon zest, 2 eggs, 1 cup flour, 1 c sr flour, 1 tsp cinnamon, 300gm sour cream, 350gm rhubarb chopped, 1/4 c extra brown sugar, 1 tsp cinnamon extra. Beat butter, sugar, vanilla & zest with electric beaters. Add eggs one at a time beating well after each. Fold in sifted dry ingredients and sour cream in 2 batches. Fold in rhubarb. Spread mix into a lined 24cm springform pan. Sprinkle top evenly with extra brown sugar & cinnamon. Bake @ 160°C for 1 1/4 hrs or until cooked. Nice served warm with custard.

Parsnip cake

1 cup sugar
1 ¼ cup veg oil
1tsp vanilla essence
½ cup crushed pineapple
1 cup of grated parsnip
11/3 cup plain flour
½ tsp salt
1 tsp baking soda
½ cup currants
2 tbsp ground cinnamon

Preheat oven to 160 c. Grease a 20 cm springform cake tin
Whisk sugar, oil and v essence together to combine
Add eggs one at a time until creamy
Stir in pineapple
Place grated parsnip, flour, salt, baking soda, currants and cinnamon in to a bowl. Pour in wet mixture, stir to combine
Spoon into grease tin
Bake for 1 ½ hours
When cold ice with lemon cream cheese icing


lemon cream cheese icing
1 cup softened cream cheese
Finely grated rind of one lemon
50g butter, ½ cup caster sugar

Beat all together until creamy

Country Pear Cake (perfect Winter cake) 150gm butter, 1 1/4c caster sugar, 2 eggs, 1 1/2c flour, 2tsp baking powder, 1/4c pear or apple juice, 3 packham pears peeled & chopped, 1/2c walnut pieces, 1/3c sultanas, 2 tsp mixed spice, 2T honey. Beat butter and sugar till creamy. Add eggs one at a time beating well after each. Sift over the flour and bkg powder and fold in. Fold in pear juice then add the chopped pear, walnuts, sultanas & mixed spice. Pour mix into a lined 20cm cake pan. Bake @ 170°C for 1 1/4hrs until cooked. Brush cake with honey as soon as it is pulled from oven.

Fruit Salad Cake Fruit Salad Cake
175 grms Butter,3 eggs,1c sugar,2c flour,1/2 c crushed pineapple,1 mashed banana, 2 tablespoons passionfruit pulp,1 tablespoon lemon juice,1 tablespoon orange juice. 1 teaspoon baking SODA,1/2 cup milk. Cream butter and sugar, Add beaten eggs then sifted flour,pineapple, banana juices etc, lastly soda dissolved in milk. Bake in 9 " square tin for 50 minutes at 350 (180c). Ice with passionfruit icing.

Choccy Cake ( Very Moist) Boatboys.....
Yield: 1 Batch
Ingredients
2 cups Sugar,
1 3/4 cups Flour,
3/4 cup Cocoa,
2 only Eggs,
1 1/2 tsp Baking soda,
1 tsp Salt,
1 1/2 tsp Baking powder,
1/2 cup Oil,
1 cup Milk,
2 tsp Vanilla essence.
Procedure
1. Mix together.
2. Add 1 cup boiling water.
3. Will be really runny, don't panic.
4. Bake 180 35-45 mins.
5. Super moist and yum.

Pan release Your cakes will pop out of your pans easily
I found this recipe on another website can't remember which but it's great to keep handy to brush on cake pans and trays when baking make cakes and bickies come out & off easily, staves time greasing & flouring 1/2 cup vegetable oil 1/2 cup vegetable shortening 1/2 cup flour Whisk together until resembles marshmallow cream store at room temp

Coca cola cake - reallly yummy & different 3cups Flour, 3cups Sugar, 5Tbsp Cocoa, 1+1/2 cup Cola, 375g Butter, 2cups Marshmallows, 100g Chocolate, 3 Eggs - beaten, 3/4 cup Milk, 1+1/2 tsp Baking Soda, 2tsp Vanilla essence, 1 Tbsp vegetable Oil . Grease and flour cake pan and set aside. In a large bowl combine the flour and sugar. In a large saucepan combine Cola, Cocoa, marshmallows, chocolate and the butter bring to the boil, add the boiled mixture to the flour & sugar mixture & combine well. In another bowl mix the eggs, milk, baking soda, oil & vanilla, then add this to the first mixture, mix well. Pour mixture into pan and bake @ 180C for ~ 35 minutes until cake test done....will be quite moist. Allow cake to cool 10 minutes then turn cake out onto serving plate and dust with icing sugar.

Ooh i love cakes - heres another: DATE & WHISKEY CAKE: 3/4c finely chopped dates, 1/4c whiskey, 185gm soft butter, 3/4c brown sugar, 1/3c golden syrup, 2 eggs, 1/3c ground almonds, 1c milk, 2c plain flour, 2 tsp baking powder. Place dates & whiskey in saucepan over med heat and simmer 1 min. Set aside. Place rest of ingredients in large bowl and beat with electric mixer till smooth & pale. Stir in the date mix. Spoon into a lined 22cm round tin and bake @ 160°C for 1 hour till cooked. Dust with icing sugar when cold.

Can someone point me in the right direction... ...to some posts that are "add all dry ingredients then wet ingredients and mix". I am a new baker with children with diary allergies and just learning. Drooling over getting a cake mixer at the moment though which should help.

Hummingbird Cake... 250gm SR flour, 1/2tsp cinnamon, 1/2tsp ground coriander, 270gm brown sugar, 440gm can crushed pineapple drained, 50gm coconut, 2 ripe bananas mashed, 1/2c chopped walnuts, 2eggs lightly beaten, 1c canola oil. Cream Cheese Icing: 100gm cream cheese, 50gm butter, 1 tsp vanilla, 1 1/2c icing sugar, 1/2c chopped walnuts for garnish. Sift flour and spices into large bowl. Add rest of cake ingredients and stir to combine. Pour mix into a lined 23cm cake tin. Bake for about 50mins to 1 hour until cooked. Cool and ice. To make icing beat ingredients together except for walnuts until smooth. Spread on cake and top with walnuts if desired.

Hummingbird Cake w/Butterscotch Icing. Similar but in cup measurements to make it easier: 2 c SR flour, 1/2 tsp baking soda, 1/2 tsp cinnamon, 1 c brown sugar, 1/2c coconut, 1/2c chopped pecans,2 eggs lightly beaten, 2 large mashed bananas, 3/4c canola oil, 450gm can crushed pineapple well drained. Sift dry ingredients into large bowl. Combine eggs, banana & oil in jug. Add egg mix and pineapple to dry ingredients and stir to combine. Spoon batter into a 22cm round cake tin. Bake for 50mins till cooked. Cool. Butterscotch Cream Cheese Icing: 185gm cream cheese, 1tsp vanilla, 1c icing sugar, 1/2c dark brown sugar like muscavado. Beat together till smooth. Spread on cold cake.

White Chocolate and Banana Teabread 250 g SR flour; 1 tsp baking powder; 135 g unsalted butter, cut into small pieces; 135 g caster sugar; grated rind of 1 lemon; 3 eggs; 3 small very ripe bananas, mashed; 150 g white chocolate chopped into small pieces, plus 50g extra white chocolate for decoration
Preheat oven to 180 C. Use baking paper to line a big loaf tin.
Sift flour and baking powder into a bowl, and rub in the butter. Add the sugar, lemon rind, eggs, banana and chocolate pieces, & beat until ingredients evenly combined.
Spoon into loaf tin & bake 50-60 minutes until well risen & skewer inserted comes out clean. Leave in tin 10 minutes before putting on a rack to cool.
Break the remaining chocolate into small pieces & melt. (I use microwave.) Drizzle over the teabread.
