365 | Rhubarb Cake... 60gm butter, 1 1/2c brown sugar, 1 tsp vanilla, 1 tsp grated lemon zest, 2 eggs, 1 cup flour, 1 c sr flour, 1 tsp cinnamon, 300gm sour cream, 350gm rhubarb chopped, 1/4 c extra brown sugar, 1 tsp cinnamon extra. Beat butter, sugar, vanilla & zest with electric beaters. Add eggs one at a time beating well after each. Fold in sifted dry ingredients and sour cream in 2 batches. Fold in rhubarb. Spread mix into a lined 24cm springform pan. Sprinkle top evenly with extra brown sugar & cinnamon. Bake @ 160°C for 1 1/4 hrs or until cooked. 374 | Coca cola cake - reallly yummy & different 3cups Flour, 3cups Sugar, 5Tbsp Cocoa, 1+1/2 cup Cola, 375g Butter, 2cups Marshmallows, 100g Chocolate, 3 Eggs - beaten, 3/4 cup Milk, 1+1/2 tsp Baking Soda, 2tsp Vanilla essence, 1 Tbsp vegetable Oil . Grease and flour cake pan and set aside. In a large bowl combine the flour and sugar. In a large saucepan combine Cola, Cocoa, marshmallows, chocolate and the butter bring to the boil, add the boiled mixture to the flour & sugar mixture & combine well. In another bowl mix the eggs, milk, baking soda, oil & vanilla, then add this to the first mixture, mix well. Pour mixture into pan and bake @ 180C for ~ 35 minutes until cake test done....will be quite moist. 375 | Ooh i love cakes - heres another: DATE & WHISKEY CAKE: 3/4c finely chopped dates, 1/4c whiskey, 185gm soft butter, 3/4c brown sugar, 1/3c golden syrup, 2 eggs, 1/3c ground almonds, 1c milk, 2c plain flour, 2 tsp baking powder. 389 | Hummingbird Cake... 250gm SR flour, 1/2tsp cinnamon, 1/2tsp ground coriander, 270gm brown sugar, 440gm can crushed pineapple drained, 50gm coconut, 2 ripe bananas mashed, 1/2c chopped walnuts, 2eggs lightly beaten, 1c canola oil. Cream Cheese Icing: 100gm cream cheese, 50gm butter, 1 tsp vanilla, 1 1/2c icing sugar, 1/2c chopped walnuts for garnish. Sift flour and spices into large bowl. Add rest of cake ingredients and stir to combine. Pour mix into a lined 23cm cake tin. Bake for about 50mins to 1 hour until cooked. Cool and ice.
