Caramel slice Wanted to make a caramel slice, but had no sweetened condensed milk in the pantry left.
Can it be substituted? Does anyone
know? Maybe milk, milkpowder and
sugar I thought?

Rice Bubble Cake (Honey Crunch) For Willow at #298. not sure if this was answered for you.Its been awhile

4oz butter, 3dsp honey, half cup sugar. boil these 3 ing for approx 5 mins. (i use the cold water test here-pour small amount into cup of cold water - needs to almost snap). Pour over 5cups rice bubbles. press into tin to set.
Can add small marshmallows or choc bits during the last part of mixing, very quickly though so they dont melt too much.

Choc, caramel, peanut slice - tastes like a snickers bar! Base: 1 1/4c sr flour, 1/3c firmly packed brown sugar, 120g melted butter. Filling: 1 can condensed milk, 1/3c firmly packed brown sugar, 60g butter. Choc Peanut Topping: 1 c unsalted roasted peanuts, 300g dark choc, 1/3c cream. Base: Combine flour & sugar in bowl. Mix in butter & push mix firmly into slice tin thats been lined. Bake @ 180°C for 20 mins. Remove. Caramel: Combine all ingreds in saucepan over low heat. Cook stirring until it thickens. Pour hot caramel over base and bake in oven 15 mins. Remove & cool for 1 hr. Topping: Sprinkle peanuts over caramel. Place choc & cream in saucepan over low heat stirring till choc has melted. Pour over peanuts, smooth the top and set in fridge for 1-2 hours.

Highlander Fudge Cake Fingers 2 1/2 cups Plain Biscuit Crumbs, 1 cup coconut, 1/4 cup chopped raisins, 2 tablespoons cocoa, 1/2 cup Highlander Condensed Milk, 100g butter, 1 tsp vanilla essence and choc icing (Recipe Follows this recipe). Combine crumbs, coconut & raisins. Mix the cocoa & condensed milk in a small saucepan. Add butter, heat to boiling point stirring constantly. Remove from heat and stir in vanilla. Pour the milk mixture into the dry ingredients and mix well. Press into a greased shallow 20cm square cake-tin. Ice with Choc icing then cut into bars when firm.

Chocolate icing... 1 1/2 cups icing sugar, 3 tablespoons cocoa, 3 tablespoons butter softened, 2 tablespoons boiling water approx and 1/4 tsp vanilla essence. Place the icing sugar, cocoa & butter in a small bowl, pour in the water and add vanilla. Mix to a spreading consistency adding a little extra water if required.

Pecan Honey & Caramel Slice.... 2c flour, 1/2c firmly packed brown sugar, 180gm cold butter chopped. Topping: 125gm butter, 1c firmly packed brown sugr, 1/3c honey, 1 1/2T cream, 250g pecans sliced, 1 1 1/2 tsp vanilla. Whiz the flour, sugar and 1/2tsp of salt in food processor for 15 secs. Add butter and whiz until mix resembles breadcrumbs. Tip into your prepared slice pan which you have lined with baking paper. Press mix out evenly. Bake @ 180°C for 20mins until golden. Towards the end of cooking time, make the topping: Melt butter in saucepan. Add sugar, honey, cream & 1/4tsp salt. Stir for 2 mins until sugar dissolves. Bring to boil & reduce heat and stir for 2 min. Stir in pecans and vanilla, then remove from heat. Remove base from oven and stand 1-2 mins. Spread topping over base. Bake a further 16-18mins until topping is bubbling. Allow to cool, slice and serve. Keeps 5 days & freezes very well.

Apricot and White Chocolate Fudge This is so yummy. My sister gave me this recipe and everyone likes it!!! 2 pkts of Wine Biscuits, 8 oz butter, 1 tin condensed milk, coconut, dried apricots (chopped), jersey caramel lollies (chopped), 1 family size block of dream chocolate. Melt butter and condensed milk together. Pour over crumbed biscuits, apricots, coconut, jersey caramels and 3 rows of the chocolate chopped up. Mix well and press into greased tin. Melt the remaining white chocolate and ice the top of the fudge with it. Refrigerate.

Lemon Coconut Slice.... 80gm butter, 3/4 c condensed milk, 250gm pkt of plain biscuits, 1c coconut, 1T lemon juice. Icing: 1 3/4c icing sugar, 2T lemon juice, 1 1/2T coconut for sprinkling on top. Place butter & condensed milk in saucepan over medium heat stirring occasionally. Remove from heat when butter melted and mix is smooth. Crush biscuits and add in coconut. Stir in lemon juice and condensed milk mixture. Press mix into a greased & lined slice pan. Refrigerate while preparing icing. Icing: Combine icing sugar & lemon juice in a sml saucepan over low heat. Stir until mix is warm to the touch & completely smooth. Spread over base and sprinkle with extra coconut. Refrigerate until cold and firm and slice into squares. Store in airtight container in the fridge or freezer.

PASSIONFRUIT SLICE
Base: Buttered slice tray 200g butter Two packets round-wine biscuits or similar ½ a can of condensed milk ¼ cup Tasti passionfruit pulp in sweetened syrup (available in supermarkets) ¼ cup desiccated coconut Melt butter over gentle heat. Crush biscuits. Add condensed milk and passionfruit pulp to melted butter then whisk to combine. Mix in biscuits and coconut then press into prepared tray and flatten with a rolling pin. Icing: 1 Tbsp butter, softened 2 Tbsp cream cheese, gelatine-free, at room temperature 4 Tbsp Tasti passionfruit pulp in sweetened syrup 2 cups icing sugar Cream together butter and cream cheese. Mix in the passionfruit then work in the icing sugar to a smooth consistency. Spread over the base, chill and cut when cold. Keep covered in fridge until required.
