Chocolate rocky road ( jamie Oliver's)
200g dark chocolate
100g mixed unsalted nuts, such as almonds, hazelnuts, pistachios or pecans
1tbsp sunflower or pumpkin seeds
100g mixed dried fruit, such as raisins, dried mango, dried apricots or cranberries, chopped
Preheat oven to 200C. break up chocolate and melt it in a bowl over a pan of simmering water.
Once chocolate is smooth and melted, remove from heat and put to one side. Place mixed nuts and seeds on a baking tray
Place in hot oven for 5 minutes, until nuts are toasted and shiny.
Leave to cool for a few minutes, then roughly chop everything together on a board and mix with dried fruit in a bowl.
Put a large handful of fruit and nut mixture to one side, tip rest into the bowl of chocolate. Stir until everything is completely coated.

cont Line a baking tray with a piece of baking parchment and spoon the chocolate mixture on to it, smooth it out to the sides.
Sprinkle reserved fruit and nuts evenly over top, and leave for 30 minutes to set.
Once the rocky road has set, break into bite-size

Homemade Ferrero Rocher

You need:
400 grams milk chocolate melts
1 tblsp Kremelta
1 small pkt hazelnuts or almonds
1 jar nutella
Appx 10 wafers
Crushed nuts
Method:
Melt chocolate and Kremelta in glass jug.
Medium microwave (2-3 mins).
Rough crush wafers add to chocolate.
Place 1/2 teaspoon of chocolate mixture in each space of ice tray.
Place nut in each cover with nutella.
Fill with remainder of chocolate.
Sprinkle with crushed nuts on top.
Set in fridge 20 to 25 mins.

white-only marshmallows? Has anyone found bags of white-only marshmallows in NZ? I want them to make rice krispie treats and if you use a mixture of pink and white they go a funny colour...don't know if white only are available here?

for satahji you could make your own white marshmallows
1 ½ C sugar, ½ Cup water, 4 tsp gelatin, ½ Cup hot water, 1 tsp vanilla essence, food colouring (optional.) Mix sugar and water together. In a separate bowl (or cup) add gelatin to hot water. Stir until all the gelatin is dissolved. While still hot, add to the sugar mixture and beat until thick and white (approximately 10 minutes). Add vanilla essence and a few drops of food colouring if desired. Put into slice tray and allow to set. Cut into squares Roll in cornflour or coconut

or this one wiyh corn ayrup make marshmallows at home,

combine 3 tablespoons of gelatin with 1/2 cup of cold water and let it stand for an hour. In the meantime, heat 2 cups of sugar, 3/4 cup light corn syrup, 1/2 cup of water, and 1/4 teaspoon of salt. Bring it to a boil and cook until the firm-ball stage (244°F; 117°C). Remove from the heat and pour it slowly over the gelatin, beating it constantly in a stand mixer. Beat it for a good 15 minutes. When it’s thick but still warm, add 2 tablespoons of vanilla or other flavoring (mint, strawberry, orange, flower water, etc.), if desired. Spread the mixture in a pan that has been lightly dusted with cornstarch. Let it dry for 12 hours, then cut it into squares with scissors dusted with cornstarch, and store them in an airtight container.

1 cup water
2 cups sugar
2 very heaped Tb spoons gelatin
1 pkt jelly
a few drops matching essence
a knob of butter
boil together for 2/3 mins .
Pour into a wet mold .
Leave to set over night -not in refrigerator..
Next morning cut into squares and roll in ordinary sugar.
A lime jelly and lemon essence is very nice

Chocolate Oatmeal Drops (an oldie but still nice)

3 c quick cooking oatmeal
1/2 c coconut
6 tsp cocoa
1 tsp vanilla essence
2 c sugar
1/2 c milk
115g butter
1/4 tsp salt

Mix oatmeal, coconut, cocoa and vanilla in mixing bowl.
Bring to rolling boil, sugar, milk and butter.
Boil for 2 minutes.
Pour over mixture in bowl and stir well.
Drop by heaped teaspoonfuls on greased baking paper.
Cool.

Butter Toffee:

7 Tblspn sugar, 1 Tblspn butter, 2 Tblspn vinegar.

Put all ingredients into a pot and stir untill sugar and butter are all melted and simmer untill brown, 10/15 mins. Pour into a buttered dish.

An old recipe from my mothers recipe book.
