further instructions for xmas cake the 8 inch size is the basic size.. 7 inch size is three quarters of the 8 inch size... 10 inch size is one and a half times the 8 inch size... 12 inch size is 2 and a half times the 8 inch size but you could cut that back to 2 and a quarter times... if you can't work that out or want the cooking times just put it in these threads... I have a lot of good feed back on this recipe and the secret is in the steaming of the cake at the end.... such an easy cake to make....

xmas cake again !!! I make 8 mini xmas cakes from the 8 inch recipe... and decorate them with a mixture of nuts or sometimes will ice them and do a xmas something or other on top... with a frill.. For the tins I use Sealord fish fillet tins... 3 inches across... just a good size. Also line them well.. a must.

my recipes Could someone please put my recipes on the other trademe site.... the one with 999.org in it... it would help me in not having to type all of that out again... they start on bottom of page 6.. and run through to page 7... xmas cake recipe, instructions for that recipe, xmas tarts (top of page 6) and mini xmas cakes... if it is too big an ask, then just leave it... I don't know how to take those recipes and put them on that site without having to type them all out again... it would be very much appreciated though. Many thanks.

Great recipes This is a wonderful thread, some of these recipes I will just have to try before xmas, especially the chocolate pate, as I am a bit of a chocoholic. I really appreciate everyones ideas, some I wouldn't ever get to know about if it wasn't for the recipes threads

Good to see this thread is.. still going.I made my chocolate truffles(recipe on page two) and I did make my christmas cake(from a old pears recipe book)recipe ingredients asked for 1/4 cup brandy but i decided to add more(good brandy)this time to give a more brandy smell and flavour and instead of adding molasses(which i find is too strong)I used golden syrup.Cake turned out really moist.This year I will make the cake earlier and not leave it to the last week before christmas.I will try maple syrup instead of golden syrup and see what the flavour will taste like and see if the cake keeps its moistness.I like to mix things around on all things I make/bake.

for phyl lin An iced and decorated xmas cake makes a beautiful present... xmas decorations on top with plenty of snow..... and xmas frill around sides.... a 7 inch cake is a good size as is the 3 inch baby cakes.. depending on who it is for.

I make these for chrissie every year and everyone loves them!!
Rum (or brandy) truffles (no cooking)
8 oz icing sugar,4 oz melted butter,2 oz coconut, 2 oz cocoa powder, 4 teaspns rum,half cup chopped raisins.
Mix together and roll balls in coconut or choc hail. Yum

Healthy Christmas Mincemeat Mince - or process - 2 cups each of currants, sultanas and raisins (I prefer the sticky raisins for better flavour - they're sold in a box in supermarkets), and 2 large apples, cored - I use Granny Smith and use the skins too for extra fibre. I then add a packet of ground almonds, 1 tsp cinnamon and 1/2 tsp ground nutmeg. Mix well and use straight away or place into jars or containers and freeze till needed. Just delicious with a lovely fruit flavour - and lot's of 5 plus a day fruit! Healthy Christmas Mince Pie mincemeat.. Cheers.. Julie

Boiled whiskey fruit cake Chop 1&1/2Cups each of raisins,dates, prunes, sultanas, 1/2C each of red glace cherries,1/4d and mixed peel ...Heat 2T caster sugar over med heat turn pan occasionally until sugar is melted. Add 30g butter, 1/2C whiskey, stir over low heat until smooth. Add 250g butter chopped..1C firm packed brown sugar and fruit to pan. Sir over heat until butter melts, bring to boil. Remove from heat, stir in 1/2t baking soda. Transfer to large bowl, cover leave overnite at room temp. Then add 1/2C sliered almonds..2C plain flour..2t mixed spice.. 5 eggs..stir until combined. Bake in prepared tin @ 150* 3 hrs. Brush hot cake with 1/4C extra whiskey. Cover hot cake tightly with foil, cool in pan
