303 | Highlander Cheesecake 2 cups biscuit crumbs, 100g butter melted, 1/4 cup water, 1 tablespoon gelatine, 250g cream cheese, 1 can Highlander condensed milk, 1/4 cup lemon juice, fresh or canned fruit and a glaze (recipe in following post). Combine the the biscuit crumbs and butter, mix thoroughly and press over the base and sides of a 23cm flan tin. Chill until the crust is firm. Place water in a shallow bowl and sprinkle gelatine over and stand for 5 minutes or until gelatine swells. Heat gently over hot water until the gelatine dissolves, cool. Beat cream cheese until soft, gradually add condensed milk then the gelatine and lemon juice. Pour into the crumb crust. Chill until set. valentino - 2008-01-10 13:21:00 |

314 | Sticky Date Cake With Caramel Icing... 250gm dates chopped, 1tsp baking soda, 1 1/2c boiling water, 125gm butter, 3/4c brown sugar, 1tsp vanilla, 2 eggs, 2c self raising flour. Icing: 1 1/2c icing sugar, 1T milk, 2T golden syrup, 30gm butter softened. Place dates & baking soda in heatproof bowl. Pour over boiling water allow to stand uncovered for 20mins. Beat butter, sugar & vanilla till creamy. Add eggs 1 at a time. Stir in date mix and flour. Mix till well combined. Bake in a 22cm lined round tin for 40-45 mins @ 180°C. Cool. 318 | Ginger Beer Fruit Loaf... 200gm dried apricots, 200gm raisins, 250gm sultanas, 1/2 tsp bkg soda, 1 1/2c ginger beer, 1/2c golden syrup, 2 lge eggs beaten, 1/2 brown sugar firmly packed, 1 1/4c self raising flour, pinch salt, 2tsp cinnamon, 1 tsp mixed spice. Place dried fruit in bowl sprinkle with bkg soda. Heat ginger beer and golden syrup in saucepan & pour over fruit. Cover with glad wrap and leave to soak overnight. Next day stir beaten eggs and brown sugar into fruit. Sift in flour, salt and spices. Stir to combine. Spoon mix into a loaf tin and bake @ 160°C on fanbake for 1 hr. 319 | Jaffa Fudge Cake (very delicious and improves with age)3/4c cold water, finely grated zest & juice of 2 oranges, 2 drops orange essence, 250gm butter, 2c caster sugar, 200gm dark choc, 1 1/2c plain flour, 1/4c dutch cocoa, 2 eggs lightly beaten. Jaffa Ganache: 1c chopped dark choc, 1c cream, 2-3 drops orange essence, zest of 1 orange. Combine water, zest, juice, essence, butter, sugar & choc in saucepan. Heat gently until choc has melted & sugar dissolved. Remove from heat & cool slightly. Whisk in sifted flour & cocoa. Stir in beaten eggs. Pour into a lined 22cm springform pan. 324 | Blueberry Shortcake Spread 3/4c whole hazelnuts on baking tray, bake5-10 minutes then place in clean tea-towell and rub to remove skins, then roughly chop. Process 2 1/4c self-raising flour, 1 1/2tsp cinnamon,3/4c demerara sugar, 150g unsalted butter chopped and 1/2 of hazelnuts in food processor until finely chopped. Add 2 eggs, process until smooth. Press half of mixture into lightly greased 20cm cake tin then spread 1/2c blueberry jam evenly over the mixture. Lightly knead the remaining hazelnuts into remaining cake dough then press over the jam layer. Sprinkle extra 1tbsp demerara sugar over the top and bake at 180c for 50 minutes. Pre heat oven to moderate (180c) Grease 12 hole muffin pan. Place butter and milk in small saucepan heat until butter melts.beat eggs in a small bowl with electric mixer until thick and creamy ( use room temperature eggs) Gradually add sugar, beating until dissolved between additions, stir in banana. Fold in sifted flour and cooled butter mixture in two batches ( not all at once) Divide mixture among muffin tins. Bake in moderate oven 10 minutes . Remove from oven press frozen blueberries into tops of cakes - not right down ( I put 5 in each) return to moderate oven bake a further 15 minutes. turn cakes on to wire racks to cool.
