Does anyone have a great cheesecake reciepe? Had a great one using condensed milk and chocolate condensed milk but I can't find it. Any help would be appreciated, thanks!

Highlander Cheesecake 2 cups biscuit crumbs, 100g butter melted, 1/4 cup water, 1 tablespoon gelatine, 250g cream cheese, 1 can Highlander condensed milk, 1/4 cup lemon juice, fresh or canned fruit and a glaze (recipe in following post). Combine the the biscuit crumbs and butter, mix thoroughly and press over the base and sides of a 23cm flan tin. Chill until the crust is firm. Place water in a shallow bowl and sprinkle gelatine over and stand for 5 minutes or until gelatine swells. Heat gently over hot water until the gelatine dissolves, cool. Beat cream cheese until soft, gradually add condensed milk then the gelatine and lemon juice. Pour into the crumb crust. Chill until set.
To serve, decorate with fruit. Glaze if desired.

Glaze for Highlander Cheesecake if desired... 1/2 cup canned fruit syrup or sweetened fruit juice, 2 teaspoons arrowroot and 1 tablespoon brandy.
Heat the fruit syrup in a small saucepan until boiling. Combine the arrowroot and brandy and stir into the syrup. Cook, stirring constantly until the mixture thickens. Spoon the glaze over the fruit. Allow to cool and serve.

Plum cake recipe anyone PLEASE.... Have some red fleshed plums that need eating and was thinking of the plum cake that has a tasty cake bottom with the plums halved and cooked on top. Cant seem to find a recipe in any of my books and believe me I have a few. Want to make this afternoon. Thanks

Sticky Date Cake With Caramel Icing... 250gm dates chopped, 1tsp baking soda, 1 1/2c boiling water, 125gm butter, 3/4c brown sugar, 1tsp vanilla, 2 eggs, 2c self raising flour. Icing: 1 1/2c icing sugar, 1T milk, 2T golden syrup, 30gm butter softened. Place dates & baking soda in heatproof bowl. Pour over boiling water allow to stand uncovered for 20mins. Beat butter, sugar & vanilla till creamy. Add eggs 1 at a time. Stir in date mix and flour. Mix till well combined. Bake in a 22cm lined round tin for 40-45 mins @ 180°C. Cool. Icing: Beat all ingredients together with wooden spoon till spreadable. Spread over cold cake.

Ginger Beer Fruit Loaf... 200gm dried apricots, 200gm raisins, 250gm sultanas, 1/2 tsp bkg soda, 1 1/2c ginger beer, 1/2c golden syrup, 2 lge eggs beaten, 1/2 brown sugar firmly packed, 1 1/4c self raising flour, pinch salt, 2tsp cinnamon, 1 tsp mixed spice. Place dried fruit in bowl sprinkle with bkg soda. Heat ginger beer and golden syrup in saucepan & pour over fruit. Cover with glad wrap and leave to soak overnight. Next day stir beaten eggs and brown sugar into fruit. Sift in flour, salt and spices. Stir to combine. Spoon mix into a loaf tin and bake @ 160°C on fanbake for 1 hr. Lasts up to 5 days stored in airtight container.

Jaffa Fudge Cake (very delicious and improves with age)3/4c cold water, finely grated zest & juice of 2 oranges, 2 drops orange essence, 250gm butter, 2c caster sugar, 200gm dark choc, 1 1/2c plain flour, 1/4c dutch cocoa, 2 eggs lightly beaten. Jaffa Ganache: 1c chopped dark choc, 1c cream, 2-3 drops orange essence, zest of 1 orange. Combine water, zest, juice, essence, butter, sugar & choc in saucepan. Heat gently until choc has melted & sugar dissolved. Remove from heat & cool slightly. Whisk in sifted flour & cocoa. Stir in beaten eggs. Pour into a lined 22cm springform pan. Bake @ 175°C fanbake for 1 1/4hrs. Icing: melt together gently in microwave or over double boiler till smooth. Refrigerate till thickened. Spread on cooled cake.

Blueberry Shortcake Spread 3/4c whole hazelnuts on baking tray, bake5-10 minutes then place in clean tea-towell and rub to remove skins, then roughly chop. Process 2 1/4c self-raising flour, 1 1/2tsp cinnamon,3/4c demerara sugar, 150g unsalted butter chopped and 1/2 of hazelnuts in food processor until finely chopped. Add 2 eggs, process until smooth. Press half of mixture into lightly greased 20cm cake tin then spread 1/2c blueberry jam evenly over the mixture. Lightly knead the remaining hazelnuts into remaining cake dough then press over the jam layer. Sprinkle extra 1tbsp demerara sugar over the top and bake at 180c for 50 minutes. Leave in tin for 15 minutes before turning out onto wire rack to cool. Serve with fresh blueberries and cream.

Meat Dish Cake melt 500 grms butter and 2 tblspns golden syrup, add 4 eggs & 2 cups caster sugar (beaten to-gether), then 4 cups flour, 4 level tspns cocoa. 4 level teaspns baking powder. Add slowly 3 cups milk (room temperature) 4 tspns baking soda . Bake at 180c(350F) approx 40 mins in greased floured( or baking paper lined) 30x38cm Roasting dish. Cuts into 4 good sized cakes. Freeze three ice one to eat !!!

cappucinno Cake 150grms Butter,3/4 sugar(caster), 3 egg yolk,1 1/2 cups flour,2tsp Baking Powder,1/2 cup strong black coffee(cooled), 1 tspn cinnamon.
Topping: 3 egg whites,3/4 caster sugar,
Melt butter mix with sugar and egg yolks. Fold in sifted flour and baking powder alternatively with th coffee. Place mixture in 20cm round spring-form tin lined on base with with baking paper. Spread topping over. To make topping, beat egg whites until stiff, gradually beat in sugar beating until thick. Bake at 180c for 45-50 minutes. Cool in tin- dust with cinnamon

Queen Elizabeth Cake - Scrumptious 1 cup Dates,1teaspn vanilla essence,1 1/2 cups flour,1cup caster sugar,1 cup boiling water,125grms butter (soft),1/2 teaspoon salt,1 teaspn baking powder, 1 teaspoon baking soda, 1 egg.
Pour boiling water over dates and add baking SODA & leave to stand whil preparing the following: Cream butter and sugar, add beaten egg and vanilla, then sifted dry ingredients, add date mixture THIS IS A VERY MOIST MIXTURE Bake 35-45 mins in 160c oven in 20cm linedspring form tin,
ICING: 1/2cup brown sugar,1/2 cup crushed walnuts 1/2 coconut, 4 tablspns butter, 3 tablespoons top milk or cream Put ingredients into saucepan (except walnuts ) and boil for 3 minutes. Add crushed walnutS and put on cake while both are still warm. Place under for a few moments to brown WATCH!! Delicious.

apparently this cake was commissioned by the late Queen Mother Elizabeth many years ago. A great "Special Cake" for those special ocassions.

BEST EVER ORANGE CAKE 185 grms butter softened, 3/4 cup Caster sugar,3 big eggs - beaten,2 cups plain flour,1 tablespoon Baking powder 1 teaspoon Grated orange rind*4-6 tablespoons fresh orange juice. SYRUP1 1/2 cups icing sugar,2/3 cup fresh orange juice,1 tablespoon of orange or other fruit liquer(triple sec is
good)1 teaspoon grated orange rind* * you should always grate citrus directly into bowl in which it is being used : if you grate onto a plate or board most of the flavoursome oils are left behind.
METHOD: Grease an 18 cm round tin or similar(if using baking paper remove after cooking)Cream butter and sugar until very light and fluffy indeed and then gradually add egg (to prevent curdling just add a little of your flour). Sift the flour and baking over the mixture and fold in gently Add the grated orange rind and enough jjuice to give a dropping consistency. Transfer to tin and bake at 180c for about an hour (sometimes a little less time) Remove from oven and cool 10 minutes in tin. continued

continued SYRUP AND ICING:-
Sift the icing sugar and dissolve it in the juice and liquer, stir in the grated orange rind. Turn the cake out onto a wire rack (good hint use 2 racks put top down onto one place second rack on top and flip over!!)place a plate under the rack then using a knitting needle or skewer pierce holes right through cake THE CAKE MUST STILL BE QUITE HOT. spoon over the syrup. Retreive any that drips onto the plate and pour back onto the cake. When all is absorbed and the cake is quite COLD, WRAP IT IN CLING FILM AND THEN FOIL AND KEEP FOR THREE DAYS BEFORE CUTTING. thats if you can resist the temptation to eat it !! Soooooo good - Sliced thinly and served with fruit and whippd cream makes a rather special dessert.

hello there cookessentials thank you for your compliments about my recipes. Actually I am 72 years of age ( who said we are too old to learn modern technology!!) I have been cooking virtually since I was a young girl so have a vast store of recipes - both my own and from books. By the way I put a really super carrot cake in 2 threads recently and both have disappeared - unfortunately I did not "save" these so will re-type it again and put it on this thread where it will be safer by the looks of it. catch ya later

Lovely moist carrot cake -keeps well 75grms butter,1 1/2 cups brown sugar,,1 150grm pot sour cream.3 eggs, 1 cup plain white flour,1 1/2 tesapoons baking soda, 1 teaspoon mixed spice, 1 1/2 teaspoons cinnamon, 1/4 teaspoon salt, 3/4 cup wholemeal flour, 2 cups grated carrots, 1/4 cup raisins (walnuts too if you wish).
CREAM CHEESE ICING 1/2 cup cream cheese, 1 tablespoon butter, 1 teaspoon vanilla essence or lemon juice, 2 1/2 cups icing sugar.
Soften butter, beat in sugar, add sour cream cream and eggs and beat thoroughly. Sift flour, baking soda, mixed spice cinnamon and salt. Add wholemeal flour. Fold into sour cream mixture add grated carrots and raisins and nuts.Put Into greased and lined 20 cm square cake tin.Bake 180c for about 1 hour. When cold ice with cream cheese icing. CREAM CHEESE ICING
Beat cream cheese until soft. add softened butter and vanilla or lemon juice and beat well. Gradually bet in sifted icing sugar until smooth A really Super Cake - I have won many cooking competitions with this cake.

Stir caster sugar and water over low heat without boiling until sugar dissolves, bring to a boil,uncovered without stirring for about ten minutes or until caramel in colour.POur toffee into prepared pan topped with sliced banana. Combine egg,oil,brown sugar and vanilla in medium . sir in dry ingredients then mashed banana. pour mixture on top of bananas in pan. bake about 40 mins. stand cake in pan about five minutes before turning out on to wire rach covered in baking paper. Turn cake top side up ( use another rack on top of cake ( the bottom of the cake) and flip over -your cake will be with the caramel side on top)serve warm or at room temperature with thick cream . As good as they Look BANANA BLUEBERRY CAKES 125 grms butter,1/2 cup (125mls) milk,2 eggs,1cup (225 grms) CASTER sugar,1/c VERY RIPE mashed bananas 1/2 cups (225grms) self raising flour 1/2 cup (75 grms)frozen blue berries. Pre heat oven to moderate (180c) Grease 12 hole muffin pan. Place butter and milk in small saucepan heat until butter melts.beat eggs in a small bowl with electric mixer until thick and creamy ( use room temperature eggs) Gradually add sugar, beating until dissolved between additions, stir in banana. Fold in sifted flour and cooled butter mixture in two batches ( not all at once) Divide mixture among muffin tins. Bake in moderate oven 10 minutes . Remove from oven press frozen blueberries into tops of cakes - not right down ( I put 5 in each) return to moderate oven bake a further 15 minutes. turn cakes on to wire racks to cool. Dust with icing sugar just before serving. Delicious to look at - beautiful to eat !!! I make these every week for an old friend who adores them. Enjoy

Wonderful Fresh Plum Cake 150g butter
150g brownsugar
3 large eggs
75g plain flour
1½ tsp baking powder
100g ground almonds
50g shelled walnuts, chopped
16 plums, stoned and quartered
Set Oven at 180C. Line the base of a square 20cm cake tin.
Beat the butter and sugar until pale and fluffy. Halve plums, remove stones + cut each half in two.
Beat eggs lightly + add them bit by bit to the butter and sugar. Sift the flour + baking powder together and fold them gently into the mixture. Fold in ground almonds + walnuts.
Pour into cake tin. Place quartered plums on top. There is no point in doing this with any real precision as they will sink into the cake as they cook. Bake for 40-45 minutes, then test with a skewer. If it comes out clean, without any wet cake mixture sticking to it, then the cake is ready. Remove the cake from the oven and leave to cool in the tin for fifteen minutes before turning out.

Hi cookessentials Thanks for calling me a gem - reminds me I must make some in my very late mothers old gem irons - still have them - they weigh a ton but do the job so well.By the way have you tried my banana blueberry cakes. so yummy - make them instead of blueberry muffins nowadays.
