Ok 1st a a gr8 bigs congrats to whomever started this awesome thread!!!! Simply the best!! 2nd, to all of us that have given towards this thread and made it what it is now!! I usually take from this thread and promise that now its 300 msgs old.....i will try my hardest to contribute!! PS: made Dutch Apple Sponge and GingerNuts!!

I didn't have to do any this week! In-laws came to stay, and MIL bought a fruitcake with her. Younger step-daughter made Lollie Cake for Dad for Father's Day, and elder step-daughter came to stay for the weekend and was bored so baked lemon squares. So I was banished from my own kitchen!!

hopefully its yummy for you too!! just take left over mashed spuds, vegies and mince. Boil some bowtie pasta and once drained do as follows. Layer spud on bottom, then vegies, then mince and continue til all is gone. Finally layer the bowties on top of mix and sprinkle with grated cheese. Bake for 20mins or until cheese has melyed and golden brown. This isnt a cake or bickies but still is a baking recipe!!!!ENJOY!!

There was a weetbix slice on here recently.. Can't find it now among all these wonderful recipes.... it was baked for about 15 minutes, then a hot caramel filling was poured over - it used condensed milk - and then baked again. Was iced with chocolate icing. Does anyone have the recipe please?? Thanks..

Nearly no-fat banana bran muffins which I posted in the muffin thread, and Belgian Bars. BASE: 1C b.sugar, packed, 200g softened butter, 1 egg, 1 tsp cinnamon, 2 tsp mixed spice, 4 tsp baking powder, 2 C flour FILLING 1/2C raspberry jam, ICING:2C icing sugar, 25g softened butter, 3 Tbs lemon juice, red jelly crystals. METHOD: BASE: put sugar, butter, egg in a bowl and mix. Add all dry ingredients except flour. Mix. Add half flour, mix. Add reat flour, mix. Put in fridge until firm enough to roll out. Heat oven to 160C. Line and grease a sponge roll tin. Halve dough and roll out 1st half to fit tin. Place in tin & spread with jam. Roll out second 1/2 dough and place on top. Prick all over. Bake 20-30 mins. Cool. ICING: Mix all except jelly crystals. Spread over slice. Sprinkle with jelly crystals. Slice into bars.

Crazy Cake Heres a yummy chocolate cake that uses no butter eggs or milk...great when you've run out of stuff.1 1/2 c flour, 2 tbsp cocoa, 1 tsp cinnamon, 1 tsp ginger, 1 tsp each of baking soda and salt, 1 cup sugar, 1/2 cup oil, 2 tbsp vinegar, 1 tsp vanilla, 3/4 cup water. Measure first 6 ingredients into a large bowl.Add sugar & toss to mix in. Measure oil & add without stirring.Add the vinegar, vanilla & water.Stir well until smooth. Bake 190 C for 30-40 ,mins.Dust with icing sugar or ice with chocolate icing.

ABC Muffins Apples, Bananas & Chocolate
2-3 mashed bananas, 1/2 c brown sugar, 1/4 tsp salt, 1/4 c oil, 1 large egg, 1/2 c milk, 1/2 c chocolate chips, 1 apple, grated, 2 c self raising flour. Heat oven to 200C. In a large bowl, mix together the mashed banana, sugar, salt, oil, egg & milk until well mixed. Stir in the chocolate chips & the grated apple. Shake the flour through a seive onto everything else & fold together until just dampened. Spoon into 12 greased muffin tins. Bake 10-12 mins until golden brown. Optional Lemon Glaze:Mix 2Tbsp each lemon juice & sugar. Brush over hot muffins.

Wholemeal Peanut Brownies 125g butter, 1/2 cup brown sugar, 1 egg, 3/4 cup each wholemeal flour
and plain white flour, 1/2 tspns baking powder, 2 Tbspns cocoa, 1/2 cup each raisins and peanuts. Melt butter and brown sugar in a large pot. Cool. Beat in egg using a wooden spoon. Sift together flours, bp and cocoa. Add to the pot and mix well. Stir in the nuts and raisins until mixed in. Place balls of mixture onto the oven tray (covered with baking paper) and flatten with a fork. Size of balls depends on size of cookies that you want - I make small cookies. Bake 190 for 15 minutes.

Apple & Cream Cheese Muffins I made these again yesterday & I used PAM'S diced apple..Really easy.
Combine: 2 Cups SR flour, ½ Cup sugar, 1 tsp lemon rind-finely grated. Mix well. Mix together 2 eggs, 3/4-cup milk, 1 tsp cinnamon & 25 gr-melted butter. Combine wt & dry & mix thru 1 cup diced apple. Spoon into greased muffin tins & top with 1 tbsp cream cheese & sprinkle over cinnamon sugar (1.5 tsp cinnamon & ¼ C sugar). Bake 180*C for 20 mins. These are YUM!

Pear & Ginger Muffins 2 cups flour, 1/2 cup brown sugar, 1 tsp baking soda, 1/2 tsp salt, pinch ground nutmeg and cloves, 2 t ginger, 1 t cinnamon, 1 cup yoghurt, 1/2 cup oil, 3 tblsp golden syrup, 1 egg, 1 and 1/2 cups diced fresh pear, 1/2 cup raisins, 1/4 cup chopped almonds
Mix flour, sugar, bs, salt and spices in a large bowl. In another bowl, mix yoghurt, oil, egg and golden syrup. Pour into a well in the dry mix, gently fold in the pears, raisins and nuts. Spoon into muffin tins and bake 200C for 14 minutes. Makes 15.

YUMMY MUMMY CAKE tastes a bit like anzacs dough but with weetbix instead of oats......125g Butter, 1 Cup Sugar, 2 Tbsp golden syrup, 1 Cup flour, 1 tsp baking powder, 1 Cup coconut, 1 egg, 5 crushed weetbix, 1 Cup Dried tropical fruit (pineapple/papaya/apricot/ mango) ....Melt butter, sugar, syrup in a pot. Mix with all other ingredients. Press into a greased baking tray. Bake 180*C for 20 minutes. Cut while warm.
I use a 28x22cm tray and get 18 bars.

Crunchie Bar Cake 125g butter, 1/3 cup caster sugar, 2 lightly beaten eggs, 100g crumbled crunchie bar, 1 cup flour, 1/2 t baking powder, 1 T cocoa, 1/4 cup milk, 50g white choc, 100g cream cheese, 2 t honey
Preheat oven to 180C. Grease and line a 20cm square tin. Cream butter and sugar until light. Add eggs one by one and beat well each time. Fold in crunchie bar, then sifted flour, bp and cocoa alternately with milk. Stir gently to combine. Turn into tin and smooth surface. Bake 25 min. Stand in tin 10 mins then cool on cake rack. Melt chocolate over double boiler. Beat honey and cream cheese until smooth and creamy then beat in melted white chocolate. Ice cake. Optional - sprinkle icing with extra crumbled crunchie bar. Cake doesn't keep extra well - so eat it all at once!

Easy Chocolate Cake Hi, Here is a simple choccy cake.
In a bowl place,1 c black coffee,1 tsp vanilla,2eggs,1/2 c oil, 1 3/4 c sugar. Mix tog then add 2 1/4 c flour,1/4c cocoa and 1 tsp baking powder.Mix this then finally add 1 cup hot milk with 1 1/2 tsp baking soda dissolved in it. Put it in a large tin and bake 180 c till cooked. Runny mixture.

Really pleased this thread is still up and running HI EVERYONE....i know i know im almost a stranger here, well its my thread isnt it, anyway new job not much time etcetc and havent really been baking apart from the odd batch here and there so keep the thread going this new thing they are doing with the pages and skipping to the last is orsum the long threads are super doper easy to get to the last omissions.
Just being looking at the muffin thread want to try to make them i lie i want to eat them.........catch you all soon

Baking School holidays creates hungry empty tummies hanging around the kitchen all day! Today I made Peanut Brownies without the peanuts (used white choc chips instead as per someone else's idea here) and Bams1 Choc Raspberry Slice again - this time with lemon honey in the middle. Also made some Lemon Semolina Cookies - as I seem to have three or four containers full of semolina in my pantry.

Hi Kob Glad new job is going good for you - i am about to do a major bake as we are going camping for a week, will do loads of biscuits and heaps of muffins as they are easier to store than big cakes.Great that this thread is still going strong.

hey guys did you know that when making the rice bubble slice that everyone seems to be makig lately that you can add cocoa to your melted butter recipe and then continuee as normal and your slice will be a chocolate one the kids think its great they think youve made it with expensive cocoa pops you can also add finely chopped up apricots or marshmellow as well while the mix is on the stove so that it sets

Funny you should mention RiceBubble Slice I hadn't made one for years, love the honey one... but used to make the marshmellow one... Lost my recipe..Used one I found on here... now I have found a better one... after having a flop (well not a flop - a damn sticky mess) I might add... Dumb ah.. Give me something difficult to do and its OK... Give me something simple and I stuff it up everytime..lol

Hi Jadeflower you could vertually substitute the sugar in any cake for sucryl sugar or the liquid form but if you want ill hunt through my recipes i know ive got some somewhere from when i was low carbing and needed a hit

Yesterday I made "Nanna K's Chocolate Crunch: 1 heaped cup cornflakes, 1 heaped cup flour, 1 tsp baking powder, 3/4 cup sugar, 1 cup coconut. Put above into a bowl, add 125g melted butter (more if mix seems dry) and combine. Bake @ 180*C for about 15-20 minutes. Ice while hot.... Icing: 1 1/2 cups icing sugar, 1/4 tsp butter, 2 Tbsp water approx, 1/4 tsp vanilla, 1 tbsp cocoa. YUM! it's ruining my diet today!!!

HI Jadeflower sorry sorry i forgot....anyway i must have lent my recipes out but if you buy some equal powder (its expensive)you can then just bake as you usually would using the same quantities of equal as you would sugar.....another idea is do her some bottling you dont need to use any suagr for that the natural sugar in fruit is enough to sweeten and if you find that its not add a few drops of sucrayl liquid to the finished juice and fruit, this i find is a great thought full gift as well as it has taken a lot of time to prepare etc etc....i quite often give gifts for diets eg: when my friends are on the lowcarb diet i usually make then something that they eat with out feeling guilty about it and its really appreaciated....Good Luck(sorry about the wait)
