262 | There are usually a couple of main reasons... why it is bumped.. Firstly and mainly is to keep it alive, mainly as it has a number of very good recipes readily avaiable for someone, or a request has been asked and save retyping all the time it is bumped up near to the initial request. Also nice to know what others may have and hopefully add their version, variety, quite often alternative or later versions, or recipes using the more accessible ingredients of today, plus a number of other thoughts, comments, results, feedback, etc etc. The other reason is if a topic thread has not been activated within a week - it will disappear, not to be seen ahgain. Hoever a number of recipes are save to a TradeMe Cook's Forumer website and if noted all saved there then one can assume that all the recipes in that particular thread are saved hence less concern if it does disappear. 276 | stuffed mushrooms I don't have measurements, but I can tell you what I put in them. And these always dissapear from the plate between the kitchen and the table. Clean as many mushrooms as you wish, pull stems from centre and place in food processor along with garlic,onions, cooked bacon, parsley (and whatever other herbs). Can add capsicum, olives, gherkins, dried apricots, or anything else you fancy. Whizz, trying to not over mix. A little chunky is nice. Fry gently untill soft. Grate or wizz in processor cheese. Add to warm onion mixture. Add breadcrumbs and either an egg or a little milk and mix together. Add salt & pepper. Place all mushrooms in a container so that hole in centre is facing up. Fill holes using a teaspoon with mix. Will keep for a couple of days till needed, in fridge. Put on an oven tray and cook till mushroom tender. 277 | litlle bread baskets I get a couple of loaves of bread, remove crusts and flatten with a rolling pin. Then brush lightly with a little melted butter and push into muffin trays and bake in oven until lightly browned. Whatch closely or they'll burn fast! Then once completly cooled, I freeze them so I always have some on hand. I fill with left over chilli con carn, with a little square of cheese and maybe chopped capsicum and toasted. Other filling ideas; Left over fish pie filling. 1/4 cup sour cream, 1-2 tsp mustard, 2 tsp chopped chives,all mixed together and then topped with salami/ham/roast beef etc and maybe a little relish or onion marmalade. 100g cream cheese,1/2 large mashed avocado, 2 Tbl sour cream, 2-3 tsp lemon juice, 1-2 Tbl finely chopped coriander, 1/2 tsp ground cumin, salt and pepper, beat together till smooth, top with finely sliced smoked salmon and extra coriander or parsley. 295 | Salmon and Cream Cheese roll ups... haven't read the whole thread so hope this hasn't been posted b4 lol - Mix tog 1 tin salmon with 250g cream cheese (or normal pot cream cheese and 2 X salmon). Mix well with a fork, mashing till no white lumps. Season with S & P. Take sandwich bread, remove crusts, spread on fish mix (no butter) and roll from corner to corner. Make sure you have a good 'dab' on that last corner so they 'stick' and don't unroll lol. You can also cut these in half to go further.
