copied from other thread as requested - christmas mince tarts
cream 125g butter, half a cup sugar... add 1 egg and beat well, add 1 and a half cups of flour (I use high grade) and one and ahalf teaspoons baking powder. I doubled the recipe today and it made a dozen ordinary sized tarts and 20 baby tarts... and I used 2 jars of tasti fruit mince and half a small tin of diced spiced apple.. I still have enough filling for nearly a dozen more baby tarts... 4 jars Tasti fruit mince 1 tin spiced apple (567g) makes 6 and a half dozen tarts... The pastry for that is above this.....

for winnie 231 Thank you for copying those threads for me.... it is something I will try to learn over the holidays... I have no manual you see.. but have family coming over from Australia - have a few things for my son to teach me... have to remember that he is on holiday so can't take up too much of his time.. he has a wife and children too... I can't get my head around this "bumping" as there must be more to it than just writing a thread and putting bump on it... that is not going to send the thread up near the top... there has to be something else that has been left out...

Just a Christmas Cake tip As usual I was running it fine to get a cake made and iced in time for my Mum. Did my usual trick of freezing then defrosting the cake to 'age' it, but hit upon a quick and easy way to stick the almond and then white icing to the top of the cake. Instead of making a sugar syrup or sieving apricot jam I just used a tablespoon or so of Roses Lime Marmalade straight from the jar and spread it over the cake with a brush! Being very pale it did not discolour the icing, and did a great job of sticking it on.

still eating christmas treats I made my christmas cake a few days before christmas,i skewer holed the top of cake to allow brandy to soak into cake and after a couple of hours i put the cake in the freezer .we have only just in the last week started eating the cake and i must say that the cake is lovely and moist and the brandy aroma in the cake is devine.Once the cake thawed out,I brushed the cake top with sugar and water mixed, then placed almonds ontop.Thank-you to thoses wonderfull people who suggested that i freeze my cake( the cake does mature in the freezer the cake is moist)Best cake i have made

Still got to make mine. All the ingredients in the pantry but didn't get round to it. Plus I overstocked on a lot of other stuff, so I'll be making puddings etc. till next Xmas, so this thread is still of some use to me.

Yes I know it's JANUARY, but I offered to have Christmas at our place this year (07)and this morning it occurred to me that I haven't seen my recipe for ICED CHRISTMAS PUDDING for a while - OMG I can't find it! must have been in a book I lost in shifting! I copy out all my favourites but not this. Can't believe it! So, with only 11 months to go (LOL) has anyone got a recipe for a FROZEN CHRISTMAS PUDDING please? It didn't have ice cream in it, had cream, and you melted chocolate, cherries, mixed fruit, can't remember what else but I know I had different mixtures in three different bowls and it was so yummy..

brandy for xmas cake If you pour your brandy over the freshly cooked xmas cake (straight out from the oven) you will never have a dry cake anymore.... about a quarter of a cup for 7 inch cake, maybe third of a cup for 8 inch cake etc... don't overdo it otherwise you will have a pudding, but the cakes I do that to are delicious and are very popular... maybe this year I will give you all the recipe...

xmas tarts... my way At the top of this page you will find the recipe for my xmas tarts.... scrumptious... and yes, some almond icing put under the pastry at the top would make it even better....

Give me a couple or so weeks and I will sort out some recipes for you... I have family here from aussie at the moment... need to put my thinking cap on...

Hi Silverfern.. I always freeze my Christmas Cakes when I've made them earlier in the year.. As they don't freeze hard, the flavours continue to mature and develop beautifully. With high humidity weather there is a risk of mould developing on a cake.. and years ago I had this occur.. Freezing ensures this doesn't happen, thank goodness!

thanks Julie for posting the information and for the compliment, I find if I can keep the last page on trademe copied over nothings getting lost, and I can take a breather for a day now and then too ! Hopefully we'll end up with one HUGE site full of great tried and tested NZ recipes :)

... I'm amazed It's unbelieveable the work you have done Fetish (and helpers!) To have everything catagorised makes it so simple to find things. Bl%%dy great that the recipes aren't going to drift off into the cybersphere and be lost forever. Huge thumbs up from me! I have signed up and will certainly spread the word. my christmas cake recipe - at last. for 8 inch tin..
450g flour, 225g sugar, 1teaspoon mixed spice.. sift together than add 1.350g mixed fruit.

half pint milk, 225g butter - boil together.. I put the milk on low and it can heat slowly while doing the flour, etc.

bring milk to the boil, take off stove and beat in 2 eggs very quickly with egg beater..

Mix together 1 teaspoon each of vamilla, almond, rum and lemon essences. Add 1 and a half teaspoons baking soda and mix well with essences. Add to milk mixture with beater.

Add milk, butter, eggs,soda and essences to flour and fruit mixture.

Cover with baking paper and cook 140 degrees up to 3 and a half hours or less....

I line the bottom of the tin with at least six pieces of newspaper cut the same size as the inside of the tin, then add a piece of baking paper, same size.. around the sides I put newspaper and baking paper...

Pour about a third cup of brandy, no more, over cake as soon as you take it out of the oven... wrap straightaway... continued...

my christmas cake... at last continued from above.

IMPORTANT.... I have, on the bench, a biscuit cooler... (mesh tray) and on it I put a thick towel, double, then put the hot cooked cake, still in the tin, on the towel, place a sheet of tin foil over the cake tin, with a finger h ole in the middle, then wrap the tin in the towel, then I add a second towel on top and wrap that over and around the tin and leave until the next day until it is cold... about 24 hours... this steams the cake and you will never have a dry fruit cake any more... it really works !!! I do put the biscuit cooler mesh tray on a piece of wood the same size as the tray... gets the air underneath.
