Gluten Free High Fibre mix for constipation Mix 1/2 cup whole linseed
1/2 cup rice bran
1 tsp cinnamon. Add enough water, apple juice, low fat milk or soy milk to cover. Refrigerate
Use 1-3 tbsp on your breakfast cereal, topped with yoghurt or milk. It tastes mild and slightly sweet

refreshing drink for hot days I make up a pot of green tea with two bags (about a litre of water, could add more bags), cool add add about 4 teaspoons of sugar to taste and about 120mls of fruit juice to give it a bit of flavour. Put in fridge and drink cold, with iceblocks if needed. Great after a big day digging the garden.

If you use Earl Grey tea make sure it doesn't have vanilla in it as it may contain gluten. Also check the labels on all herbal teas as some contain gluten

herbal tea The green tea I use, is just straight green tea. I got caught out once with a flavoured tea, I think it was lemon tea. Never again as I was sick as a dog.

beetroot gone are the days when I can use malt vinegar for my home grown beetroot. Anybody know if dyc white vinegar will be okay? Anything else I can use?

Curried chicken I use dyc white vinegar all the time. I've had no problem with it. It makes a damned good curry. Mix 1 dessertspoon of white vinegar, 1 dessertspoon of oil of your choice and 1 dessertspoon of gf curry powder. Heat mixture in the frying pan, then add one sliced and diced onion, 500g of cubed chicken and cook. Add water if necessary and thicken with maize cornflour if you need to. Eat with rice. Yummo. You can use the same curry for a vege stirfry as well

Twas a bad cooking day Made banana muffins, chocolate muffins that muffined, fruit rocks were perfect. But the piece de resistance (no) was the gf hats that came out of the oven. They were meant to be a coconut loaf that I thought I would make into muffins. But they spilled out and looked like bonnets in the end. Nice and crunchy. Anybody want my rock cake recipe? They are similar to the rock cakes that my mum made when I was little.

cathy I preserve with white vinegar and it tastes fine. I also use some of the water that the vinegar is boiled in too to improve the colour.

Carrot Cake 200 gm GF flour (I use Bakels as I find this gives good results and the cake stay lovely and moist - keep in the fridge)
2 tsp Baking Powder
1 tsp cinnamon
Good pinch fresh grated nutmeg
1/2 tsp salt
400 gm soft brown sugar
350 ml vegetable oil
4 large beaten eggs
400 gm grated carrots
1/2 cup chopped walnuts
Preheat oven to 180C
Sift flour soda cinnamon nutmeg salt
Mix sugar and oil in another bowl and mix in eggs
Make a well in flour and stir in liquid, carrots etc
Bake 1¼ hours. Ice with
12 gm olivani
3 drops vailla essence 1 tin pineapple (crushed and drained)
125 gm creamed cheese(Country Goodness)
Sprinkle top with chopped walnuts

Absolutely delicious.

Baked Chicken Breasts Skin chicken breasts
Slice through lengthways to make a pocket.
Flour using GF Flour
Dip in beaten egg and then lie on top of Gluten Free Breadcrumbs so that the egg is facing up on one side. Place a small piece of camembert cheese on top(Ferndale, Galaxy or Mainland)In a small dish melt 1 tbsp olivani and add to that 1 chopped clove garlic) Place a few drops on each fillet. Fold fillet over and secure all round with toothpicks. Spray with Olive Oil and bake 180 40 minutes Serve with Barkers Mango and Peach Chutney

Wait theres more my chocolate muffins turned out looking like baseball caps. They oozed out. Another question, frozen bananas,they are so hard to get out of their skins. Would it pay to freeze them skinless, or just persevere with trying to skin them. Somebody mentioned they make nice icecream and I was thinking of that as I was peeling, they do have a consistancy of icecream when you mash them.

hi cathy - I freeze them with the skins on and when needed for baking I just pop them in the microwave just enough to soften them so the skins can come off easily

this was in last weeks sunday times.. jo seagar..

almond, orange biscuits.
2 cups ground almonds, walnuts or , hazelnuts, 2 egg whites beaten until stiff,1 cup caster sugar, zest orange, 1tablespoon honey.
add dry ingredients to egg whites roll into balls roll in icing sugar
flatten, 160c for 15-20minutes.. makes about 20.. allow room for spreading. they freeze well.

Hunza Pie...with a twist Bakels pastry base (as per instructions on pack) Then in a big bowl mix, 100g cooked brown rice, 100g cooked brown lentils, any veges and herbs (grated or chopped fine) I used courgettes, carrots and beans. Then mix in 2 eggs, 200g grated cheese, salt and pepper. Pour into base and cook 30-40mins. Hunza normally has silverbeet only, but I like to throw in anything in the fridge. All the cheese makes it darn good.

Melford, Im new to this GF thingmy... and dont have many successes yet, my baking is a nightmare (Im trialing my own flour mixes) but finding lunch and dinners quite fun. I did a meatloaf the other night with lean beef mince, breadcrumbs (from an old home baked loaf), grated veges, about 1/4 cup gf flour and an egg. It didnt hold together so well but the kids loved it! Today it was better and held together. Its all trial and error eh.

hi geminisis - Here is my recipe for you
500 gm mince (I use premium mince)
2 cups Gluten Free breadcrumbs
2 chopped onions
1 dsp Vencat Curry powder
1 egg
Salt and Pepper
1/2 cup water
1/2 cup milk (or So Good Soy Lite if dairy free)
Mix altogether (if too wet add more breadcrumbs)and shape into a loaf and bake 160C 30 minutes.
Remove from the oven and turn the tin upside down so the meat loaf comes out and place it in a bigger flattish dish. Mix up this sauce and place over the top of it.
2 tbsp fresh lemon juice
1/2 cup water
1/2 cup Greggs Tomato Sauce
1/4 cup brown sugar
1/4 cup Boss Worcester Sauce
1 tsp greggs instant coffee
2 tbsp white vinegar
25 gm butter (or olivani if dairy free as well)
Bake 160 C another 45 minutes basting frequently Enjoy!

recipes There are thousands of dairyfree gluten free recipes on the yahoo site vegan-and-gluten-free, There are a lot of baking recipes and many are soy free as well.

welshiegirl I know I am a bit late, just want to say that simple baking mix, made by Healtheries, is soy and dairy free. I buy it in the supermarket, It's the one I use. I don't eat soy flour or protein as it gives me stomach cramps, but I find I can eat soy lecithin in chocolates and in olivani spread. It might be the same for you. Glad you are feeling better. As for dairy free, you might find after 6 months or more of being gluten free and your stomach has healed, you can tolerate milk again.

Gluten Free Breadmaker Bread Make up the bread MIX first: 4 cups white rice flour, 1½ cups potato flour, 2/3rd cup tapioca flour(Recipe says it makes 4 loaves but the mixture makes a very small loaf so I 1½ times the recipe that follows and cook for the same time). One loaf: 2 cups gluten free mix, 2 tbsp sugar, 2 tsp xanthan gum, 1 tsp salt, 1 ½ tsp active dry yeast, 1 cup lukewarm milk or milk alternative, 2 tbsp oil, 2 eggs, or 4 tsp egg replacer and ¼ cup water and 1 tbsp linseeds, 1 tsp cider vinegar. Sift dry ingredients, add yeast Blend milk oil eggs or egg replacer and vinegar. Add to dry ingredients, mix to combine. Press into bread pan. Close lid, bake following breadmaker instructions for a white loaf(about 3 hours) Cut when cold and freeze in slices unless going to eat. Do not double recipe as it overflows pan only use one and a half times the mix for a 1kg loaf. :)

hi! I used to be a regular in this thread a couple of years ago- but it got too political! I am intolerant to numerous additives/preservatives so make all my own stuff and thought some people may not know of this book - which is great! It's called Friendly Food. It has recipes by allergies, ie nut free, dairy free, gluten free etc. Worth looking at in library if you want some new ideas. I bought if from Whitcoulls a few years ago, has recipes from breakfast through to baking and desserts
