264 | Curried chicken I use dyc white vinegar all the time. I've had no problem with it. It makes a damned good curry. Mix 1 dessertspoon of white vinegar, 1 dessertspoon of oil of your choice and 1 dessertspoon of gf curry powder. Heat mixture in the frying pan, then add one sliced and diced onion, 500g of cubed chicken and cook. Add water if necessary and thicken with maize cornflour if you need to. Eat with rice. Yummo. 266 | Twas a bad cooking day Made banana muffins, chocolate muffins that muffined, fruit rocks were perfect. But the piece de resistance (no) was the gf hats that came out of the oven. They were meant to be a coconut loaf that I thought I would make into muffins. But they spilled out and looked like bonnets in the end. Nice and crunchy. Anybody want my rock cake recipe? Would it pay to freeze them skinless, or just persevere with trying to skin them. 278 | Hunza Pie...with a twist Bakels pastry base (as per instructions on pack) Then in a big bowl mix, 100g cooked brown rice, 100g cooked brown lentils, any veges and herbs (grated or chopped fine) I used courgettes, carrots and beans. Then mix in 2 eggs, 200g grated cheese, salt and pepper. Pour into base and cook 30-40mins. Hunza normally has silverbeet only, but I like to throw in anything in the fridge. 280 | Melford, Im new to this GF thingmy... and dont have many successes yet, my baking is a nightmare (Im trialing my own flour mixes) but finding lunch and dinners quite fun. I did a meatloaf the other night with lean beef mince, breadcrumbs (from an old home baked loaf), grated veges, about 1/4 cup gf flour and an egg. 293 | welshiegirl I know I am a bit late, just want to say that simple baking mix, made by Healtheries, is soy and dairy free. I buy it in the supermarket, It's the one I use. I don't eat soy flour or protein as it gives me stomach cramps, but I find I can eat soy lecithin in chocolates and in olivani spread. It might be the same for you. Glad you are feeling better. 295 | Gluten Free Breadmaker Bread Make up the bread MIX first: 4 cups white rice flour, 1½ cups potato flour, 2/3rd cup tapioca flour(Recipe says it makes 4 loaves but the mixture makes a very small loaf so I 1½ times the recipe that follows and cook for the same time). One loaf: 2 cups gluten free mix, 2 tbsp sugar, 2 tsp xanthan gum, 1 tsp salt, 1 ½ tsp active dry yeast, 1 cup lukewarm milk or milk alternative, 2 tbsp oil, 2 eggs, or 4 tsp egg replacer and ¼ cup water and 1 tbsp linseeds, 1 tsp cider vinegar. Sift dry ingredients, add yeast Blend milk oil eggs or egg replacer and vinegar. Add to dry ingredients, mix to combine. Press into bread pan. Close lid, bake following breadmaker instructions for a white loaf(about 3 hours) Cut when cold and freeze in slices unless going to eat. I am intolerant to numerous additives/preservatives so make all my own stuff and thought some people may not know of this book - which is great! It's called Friendly Food. It has recipes by allergies, ie nut free, dairy free, gluten free etc. Worth looking at in library if you want some new ideas.
