Whiskey Fruit Cake Peugot2 there is recipe posted on another thread - "I've just done this week's baking" no. 2172.
there is no butter in that at all and I can vouch for it, just scrummy.

chocolate vegarian (non dairy) cake mmmmm For those people who cant have dairy products this cake is beautiful and always a big hit...
3 cups flour, 2 cups sugar,2 teaspoons baking soda,2 cups cold water,1/2 teaspoon salt,6 tablespoons cocoa,2 tablespoons malt vinegar,3/4 cup oil, 2 teaspoons vanilla essence...
Mix altogether in the same bowl and in a fairly large lined cake tin put in preheated oven at 150 degrees celcius for 40mins...
You dont need any icing on this cake..or you can put a bit of icing sugar..or we always put cream cheese icing on it lol...enjoy and please let me know how you like it....

My favourite Carrot Cake 1 C wholemeal flour
4 beaten eggs
¼ t salt
2 C raw sugar
2 t baking soda
½ -¾ C cooking oil
1 C flour
3 C finely grated carrot
2 t cinnamon

Preheat oven to 180 C. Sift and mix dry ingredients. Add oil and stir well.
Stir in beaten eggs then add carrots. Mix.
Grease 9 inch tin.
Bake for approx 1 hour @ 180 C.

ICING
100 g cream cheese
50g butter
2 C sifted icing sugar
few drops of vanilla essence or lemon juice
* 1 C finely chopped nuts (optional)

Mix together in food processor –sprinkle with the nuts if desired.

I made a doll cake over the weekend I made rkcroft's posted Velvet Chocolate cake this weekend. One of my daughter's guests is allergic to eggs, so I tried that one, and it was perfect! The taste & texture were really nice, so this one gets a big ol' gold star from me. I ended up baking it in a Pyrex bowl to get the domed skirt shape, though, & had to modify the baking slightly. I lined the bowl with baking paper, with curving cuts to lay against the side of the bowl without wrinkles. I then baked it at about 165-170C (a lower temp because of the glass pan), & it took 55 minutes in my oven for that. When I took it out of the oven, I turned it out onto a flat platter with a sheet of baking paper on it, & also left the paper stuck on the dome while it cooled, like you do for a mud cake. It wouldn't be tall enough to accommodate a standard Barbie-size doll, but it was perfect for the smaller doll my daughter wanted for it. I then gave it to a group of 5- & 6-year-olds to decorate, but that's another story!

kenrick here's a recipie 4 u Chocolate german cake
2 BOWLS DRY MIX
2cups self raising flour
2 cups sugar
3/4 - 1 cup cocoa
Wet mix
1 cup milk
1 cup luke warm water with
1 desertspoon vinegar
2 eggs
125gms melted butter
1tspoon baking soda mix the wet with the dry & bake about 3/4 -
1 hour 180 i always double this which makes a huge cake
TOPPING FOR ABOVE CAKE
250grms coconut
125gms butter
2 egg yolks
1 can carnation evapourated milk
1 cup sugar mix all in pot & cook until thick make sure to stir so it does not stick/burn spread on top of cake, i only use this now & then but is my fav with this cake but just a nice icing is fine

Lemon Yoghurt Cake 3 eggs, 1 cup caster sugar, 200 gram carton natural yoghurt, 1 cup self raising flour, 1 teaspoon grated lemon zest, 1 teaspoon grated orange rind.. SYRUP. three quarters cup sugar, 1 cup water, 1 teaspoon lemon juice.

Pour mixture into greased 18 cm x28cm tin bake in moderate oven 45 minutes or until cake is cooked when tested. Remove from oven, gradually pour over the cooled syrup and allow to stand 1 hour before serving. SYRUP. Combine sugar, water and lemon juice in saucepan, stir over gentle heat until sugar has dissolved. Bring to boil, reduce heat and simmer uncovered for 10 minutes. Allow to cool before pouring over cake.

Lemon Sour Cream Cake 3 lemons, 125 grams butter, 1 cup caster sugar, 3 eggs. 150 grams sour cream, 1 cup flour sifted, 1 teaspoon baking soda.. one quarter cup white sugar. ..Preheat oven to 180. Grease and lightly flour 20 cm ring tin.,, Finely grate the rind of the lemons and squeeze the juice out. Set both aside.Cream butter and caster sugar. Add the eggs, lemon rind and sour cream. Fold in the flour and baking soda. Place mixture in prepared tin and bake 30 - 40 minutes until firm. . In the meantime, prepare the syrup by boiling the lemon juice and white sugar. Pour syrup over the hot cake. When cake has cooled, turn out. To make it extra special, fill the centre of the ring with strawberries and dust with icing sugar.

Lemon Yoghurt Cake rind of 2 lemons.. 1 cup canola oil.. 2 eggs.. 1 and three quarter cups caster sugar..half teaspoon salt..1 cup plain or flavoured yoghurt, 3 tablespoons lemon juice, 2 cups self raising flour. Heat oven to 180. Butter and flour 23cm ring pan.. Finely grate the lemons into a mixing bowl, add the oil, eggs and sugar and beat with rotary beater until thick and well blended.Add salt, yoghurt and lemon juice and beat again briefly. Fold in the carefully measured (not packed down) flour until just evenly mixed in. Pour into prepared pan and bake 30 mins or until sides start to shrink, the centre springs back when pressed and a skewer comes out clean. Leave to cool 10 minutes then turn carefully onto rack. VARIATION. For a lower fat cake, replace one quarter cup of the oil with yoghurt.

Variations of this recipe have been around for a long time. The first recipe is from an Australian magazine in the 1960`s, the second recipe is from a Foodtown magazine and the last one is from an Alison Holst book. I hope that one of these will help you.

Orange Sour Cream Cake 250 grams butter, 3 egg yolks, 1 cup caster sugar, 250 grams sour cream, grated rind of 1 orange, one and three quarter cups plain flour, 1 teaspoon baking powder, 1 teaspoon baking soda, 3 egg whites.. Cream butter and sugar. Add egg yolks, sour cream and orange rind, beat until light and fluffy. Sift together, flour baking powder and baking soda. Stir into first mixture, Fold in egg whites which have been beaten until stiff but not dry. Turn into greased and lightly floured ring tin and bake at 160 degrees for 1 hour. Remove from oven and allow to stand for 10 minutes before turning out.,Orange syrup. juice of 2 oranges, three quarters of a cup sugar,juice of 1 lemon, pinch salt. Combine ingredients, boil 3 or 4 minutes and slowly pour over the . ( I add some orange juice to the cake mixture )

Yummy Sultana Cake 1 lb Sultanas, cover with water and boil for 7 minutes, strain and cool. 3/4 lb butter (12 ozs), 3/4 lb sugar, 5 eggs, lemon essence, vanilla essence, brandy essence, 1 lb flour, 1 Tbsp golden syrup, 1/2 tsp baking powder. METHOD Cream butter and sugar, add eggs one at a time, add rest of ingredients. Bake at 300F for 1 1/2 hours.

ok here is one for those who loooove to bake.... BLACK BOTTOM CAKE
225g Cream cheese, 1 egg, third C sugar, 175g chocolate chips, pinch salt
Beat together first 3 ing. then mix in choc chips and salt. Place to one side
sift following ingredients into seperate bowl 1 and half C flour, 1 t Baking soda, half C cocoa, half tsp salt. Now add 1 C sugar, half C melted butter, 1 C water, 1 tsp vanilla essence and 1 T Vinegar

Pour flour mixture into greased and floured 20cm cake tin. Spread the creamcheese mixture on top.

Bake at 190 for 45 mins. Allow to cool before removing from tin.

Black bottom cake continued.... Icing for this cake...
Melt together 1 x 125g energy chocolate bar and 2/3 C cream. Pour over.

This cake is rich and super yum.

To brianmac... I for one will help to keep an eye on things although I will have 2 special guests from the 24th to 4th. First time for them in NZ so I will be showing them a few places. 1-2-3-4 cake An old-style pound cake, still a goodie. 200g softened butter, 2c sugar, 4 eggs, 1/2t vanilla, 1/2t almond or lemon essence. 3c flour, 2t baking powder. 200ml milk (maybe a bit more). Cream butter & sugar, run mixer as you add eggs 1 at a time, add essences. Mix together flour & baking powder, then add gradually to butter mix, alternating with milk. Bake in papered 23cm loaf pan at 150C for 1hr 30min.
