My all-time best Rhubarb and Apple Crumble.

600g rhubarb
2 strips lemon rind
1 tablespoon honey or to taste
2 firm ripe apples
1/2 cup rolled oats
1/3 cup soft brown sugar
1/4 cup wholemeal plain flour and
50 g butter.
Trim rhubarb and cut into 3cm pieces, place in a medium saucepan with lemon rind and a tablespoon of water.
Cook, covered, over low heat for 10 minutes or until tender, cool a little then stir in the honey and remove lemon rind.
Preheat oven to 180c.
Peel, core and cut apples into 2cm cubes and combine with rhubarb.
Pour into a 1.25 litre dish and smooth the surface.
To make the topping, combine oats, flour and brown sugar in a bowl.
Rub in butter with your fingertips until the mixture is crumbly.
Spread over the fruit.
Bake for 15 minutes or until cooked and golden.

One can sweeten the rhubarb to taste or a bit more sweeter to allow for the apple when combined.
One could even add apple with rhubarb and precook both as like rhubarb noted in recipe.

Very good option is to use pears instead of apples.

Coffee and chocolate cheesecake :-)

INGREDIENTS:
100g butter
300g chocolate digestive biscuits
200g milk chocolate, broken into small pieces
200g soft cheese
200ml crème fraîche
100g caster sugar
2 tbsp coffee essence
140ml double cream
1-2 chopped deseeded red chillies
chocolate or chillies to decorate

PREPARATION:
1. Melt the butter in a pan. Whizz the biscuits into fine crumbs in a processor, then toss in the butter. Stir, then press over the base and sides of a 20cm/8in loose-bottomed tin.

2. Melt the chocolate while whizzing all the remaining ingredients in the processor. Pour in the chocolate and whizz again until blended.

3. Scrape into the biscuit base, then chill for about 4 hours until set. Decorate and serve in small slices.

Where does the 2nd part of sugar go? I put it in with the water & g.syrup, but not sure if that was right or not.
Definitely be a good one for winter (if only we'd had icecream, but neither of us could be stuffed getting any). Nice and quick to make, bit sweet for my liking (hey, adjusting recipes to suit is part of the fun). Next time I'll have to get my husband to see what it looks like going into the oven, that was so bizarre, but it came out how I'd imagined - self-saucing pud :)
