CHOCOLATE CRACKLES 250g KREMELTA, 4 cups Rice Bubbles (Rices), 1 cup Icing Sugar, sifted, 3 tablespoons Cocoa1 cup Desiccated Coconut Melt KREMELTA in a saucepan over a low heat or in a microwave oven. Mix Rice Bubbles, icing sugar, cocoa, coconut and melted KREMELTA until well combined. Spoon mixture evenly into 24 patty containers. Set in refrigerator. Omit the coco if using coco pops

Cornflake Date Cookies Beat 1C of butter..3/4C brown sugar till creamy & 1/4C granulated sugar..Beat in 2 eggs..2T milk..1t vanilla. In separate bowl combine 2C flour..1t Bsoda..1/2t salt..add to creamed mix .. Stir in 1C each chopped walnuts & ch dates..2 1/2 C cornflakes. Place spoonfuls on greased tray..Bake @ 170C 10 mins.Leave to cool on tray few mins before moving to wire rack

THis is the recipe I have for American Crunch 1 1/2c flour, 1/4c cocoa, 1 1/2c brown sugar, 1 c coconut, 3c cornflakes or weetbix, 250gm butter, 1 tsp vanilla. Icing: 1 1/2c icing sugar, 2T cocoa, 1T butter, hot water. Sift flour & cocoa into bowl. Stir in brown sugar, cornflakes or weetbix. Melt the butter & add to the dry mix with the vanilla essence. Press into slice tin and bake @ 180°C for 25mins. Cool before covering with icing. Icing: Melt butter, sift in icing sugar & cocoa. Add enough hot water or milk to mix to spreadable consistency. Add extra coconut to the top if you desire. You can also add a drop of peppermint essence to the icing if you want a choc peppermint crunch.

JELLY SLICE crush 1 pkt of wine biscults then melt 150g butter, mix into the biscults then press into a slice tin .
FILLING.. 1 tin of condensed milk, 2Tbs gelatine dissolved in 3/4c boiling water and the juice of two lemons. blend all together and spread over the biscult base, then put in the fridge...
dissolve 1 pkt red jelly as directed on pkt, cool, pour over the slice, leave in fridge overnight. then cut into squares. real yummy

Old English Gingerbread 500g (4 cups) self-raising flour
1 tsp salt
1 tbsp ground ginger
1 tbsp baking powder
1 1/2 cups soft brown sugar
175g butter
6 tbsp treacle
6 tbsp golden syrup
300ml milk
2 eggs
1 tbsp warm milk to mix
1 tsp bicarbonate of soda
1 tsp cinnamon
2 tbsp approx. demerara or raw sugar

Method

Sift together flour, salt, ginger and baking powder. In a saucepan, warm sugar, butter, treacle and golden syrup. In a separate pan, warm the 300ml of milk and beat in eggs. Combine with flour and syrup mixtures and mix thoroughly. Mix tablespoon of warm milk and bicarbonate soda together, then add to the mixture. Put into a 25cm square, well-greased or baking-paper lined cake tin. Mix the cinnamon with the demerara or raw sugar and sprinkle on the top. Bake for 1 1/2 hours (or until firm) at 180°C.

Gingerbread 125g butter
1/2 cup White Sugar
1 cup Treacle
1/2 cup milk
3 cups flour
1 1/4 teaspoons baking soda
1 tablespoon ground ginger
1/4 teaspoon ground cinnamon
1/4 teaspoon ground cloves
Chelsea Icing Sugar to dust

Method

Preheat the oven to 160°C. Line a 23 cm square cake tin or small roasting dish with non-stick baking paper. Heat butter, sugar & treacle together in a saucepan until butter is just melted. Remove from heat, stir in milk. Cool slightly.
Sift dry ingredients into a bowl. Make a well in the centre and tip in liquid ingredients. Mix quickly. Don’t over mix. Spread mixture in prepared cake tin and bake for 45 – 50 minutes until gingerbread has risen and a skewer inserted into the centre comes out clean.
Cool in the tin for 10 – 15 minutes before tipping out onto a cake rack.
Dust with icing sugar to serve.

What great recipes Yesterday I made gingerbread, cinnamon crinkles, ginger crunch, choc chip cookies, a banana cake and honey jumbles. I found the honey jumbles horrible to cook though, the dough was ridiculous to work with. Won't be trying that recipe again :s

My favourite choc chip biscuit recipe 500g brown sugar, 500g caster sugar, 150g butter, 1 tsp vanilla essence, 1 cup chocolate chips, 1 egg, 1 and a half cups self raising flour (2 teaspoons of baking powder to a cup of regular flour makes self raising I think. Double check that). Cream sugars with softened butter, stir in vanilla essence. Beat in egg. Add sifted flour and mix until mixture forms into dough. Mix in chocolate chips. Form into small balls and place on a greased baking tray. Bake at 180 for 10-15 mins. If you want a more chocolatey taste, mix in about half a tsp cocoa to the mixture. Makes about 30. These spread so give them plenty of room :)

Parkin 1 1 lb. Fine oatmeal, 1/2 tsp. bicarbonate soda, 1 lb. Dark treacle, 2 tbsp. demarara sugar, 1/4 lb. butter, 1 tbsp. milk, 1/2 oz. Ginger. Rub butter into oatmeal, add ginger and sugar.
Melt treacle. Dissolve soda in milk. Mix everything together.
Line baking tin with well greased paper and pour in mixture.
Bake in a low to moderate oven for 1/2 - 3/4 hour.

Parkin 2 Rub 2ozs [1/2 stick] margarine and 2ozs [1/2 stick] lard into half a pound [2 US cups] of flour, add half a pound oatmeal and a quarter of a pound 1/4 cup] sugar. Mix well then stir in 4 tablespoonfuls treacle melted, a good half teaspoonful bicarbonate soda, mix to light batter with milk, put into a greased tin and bake in slow oven
about 1 hour. [Use 300 degrees, check at 45 mins with toothpick to see if done.]

Parkin 3 SPONGE PARKIN : 10ozs/2-1/4 cups flour, 4ozs/1/2 cup sugar, 2ozs/4 tablesp. lard, 1oz/2 tablesp. butter, 6ozs treacle, 1 gill/5 fl. ozs. milk, 2 teaspoons baking powder, half teaspoon bicarb soda/baking soda, a little Ginger. Bake 1 hour in slow oven. (275-300 degrees, check at 45 mins.)

DATE JUMBLE 125g butter, 125 g sugar, 3/4 C milk, 250g date, chopped, 185g flour, 60g cocoa. Warm butter and sugar in milk in a saucepan until butter melts. Stir in dates then sifted dry ingredients, Mix well and bake in a slice tin 165C for 30 mins. (Now I am typing this out, I realise I cooked mine @ 175 for abt 12- 15 mins though). When cold ice with chocolate icing. This is a softer almost cakey slice. Very quick and easy too.

OMGoodness oscar, you are right. Seems a lot of sugar indeed. If it's any help, this is the recipe I use. Choc Chip Cookies: 1 egg,
75 grams butter,½ cup brown sugar,
½ cup white sugar, ½ cup chocolate chips or ¾ cup large chocolate buttons, 1 cup sr flour,½ teaspoon baking soda. Make two traysful.

Parkin is a flat ginger "cake", made in a deepish slice tin. (Well... SIL made her's in one!)It is very moist and sticky. Un-iced. Very English, and from memory I think it has something to do with Guy Fawkes. I've only struck it once, and in the UK. Have never seen a recipe in any of my cookbooks for it...yet!

Mumble Jumble and Rice Bubble Cake recipes needed Can someone supply me with these two recipes? Rice Bubble cake using honey (newer edmonds book doesn't have it) and a recipe for Mumble Jumble - made it heaps for my kids years ago but have lost recipe - has rolled oats etc and a spicy date and sultana centre.
