256 | THis is the recipe I have for American Crunch 1 1/2c flour, 1/4c cocoa, 1 1/2c brown sugar, 1 c coconut, 3c cornflakes or weetbix, 250gm butter, 1 tsp vanilla. Icing: 1 1/2c icing sugar, 2T cocoa, 1T butter, hot water. Sift flour & cocoa into bowl. Stir in brown sugar, cornflakes or weetbix. Melt the butter & add to the dry mix with the vanilla essence. Press into slice tin and bake @ 180°C for 25mins. Cool before covering with icing. Icing: Melt butter, sift in icing sugar & cocoa. Add enough hot water or milk to mix to spreadable consistency. 269 | My favourite choc chip biscuit recipe 500g brown sugar, 500g caster sugar, 150g butter, 1 tsp vanilla essence, 1 cup chocolate chips, 1 egg, 1 and a half cups self raising flour (2 teaspoons of baking powder to a cup of regular flour makes self raising I think. Double check that). Cream sugars with softened butter, stir in vanilla essence. Beat in egg. Add sifted flour and mix until mixture forms into dough. Mix in chocolate chips. Form into small balls and place on a greased baking tray. Bake at 180 for 10-15 mins. If you want a more chocolatey taste, mix in about half a tsp cocoa to the mixture. Makes about 30. 288 | Parkin is a flat ginger "cake", made in a deepish slice tin. (Well... SIL made her's in one!)It is very moist and sticky. Un-iced. Very English, and from memory I think it has something to do with Guy Fawkes. I've only struck it once, and in the UK.
